UNSTUFFED CABBAGE ROLL
This is a quick and easy main dish. My kids don't even like cabbage, but they love this. I usually try to serve it with green beans, new potatoes, corn, and a pan of corn bread. They eat over half the pan every time. Also, the longer it stands the better it tastes.

- Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add cabbage, tomatoes, tomato sauce, water, garlic, salt, and pepper and bring to a boil. Cover Dutch oven, reduce heat, and simmer until cabbage is tender, about 30 minutes.

UNSTUFFED CABBAGE ROLL CASSEROLE
From a free Penzey's recipe card... Edited 3/24/08 to add that I have now made this recipe for the first time. We really liked it, but found it a bit bland, so I doubled the amounts of vinegar and brown sugar and also added some ketchup to jazz it up a bit. Definitely a keeper, though!

Steps:
- In a large skillet, brown the ground meat and drain off any grease. Add the chopped onion and cook for about 3 minutes, until the onions are softened.
- Add the cabbage and water and cook for about 5 minutes, or until the cabbage starts to wilt.
- Add the tomatoes, brown sugar, vinegar, salt, caraway seed and garlic. Bring to a boil, reduce heat and cover.
- Simmer until the cabbage is cooked to the desired tenderness, about 30 minutes. Serve with white rice.

DECONSTRUCTED CABBAGE ROLL CASSEROLE
I love cabbage rolls but don't have the patience to put them together, so I prefer to combine all the ingredients casserole-style and bake. Same taste, easier prep! That's how we roll!

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Add onion, bell pepper, and garlic to the sausage. Cook until onion is translucent, 8 to 10 minutes. Stir in cabbage and cook until slightly softened, about 5 minutes.
- Transfer sausage mixture to the prepared casserole dish. Add tomato sauce, cooked rice, Worcestershire sauce, brown sugar, lemon juice, Cajun seasoning, pepper, and salt; stir to combine.

- Heat oven to 375°F.
- Cut wonton wrappers in half, then cut each piece crosswise into 1/4-inch-wide strips. Spread onto rimmed baking sheet sprayed with cooking spray; spray lightly with additional cooking spray.
- Bake 3 to 4 min. or until crisp and lightly browned. Cool.
- Meanwhile, cook turkey in large skillet sprayed with cooking spray on medium heat until done, stirring frequently. Add coleslaw blend; mix well. Cook 2 to 3 min. or just until wilted, stirring frequently. Stir in dressing and soy sauce.
- Top turkey mixture with onions and wonton strips before serving.
