1 cup self rising flour ((see Recipe Notes below))
1/2 teaspoon granulated white sugar
pinch of salt
2/3 cup 2% Greek Yogurt
3 tablespoons prepared pesto
3/4 cup chopped pepperoni
3/4 cup shredded Italian cheese blend (or mixed Mozzarella/Parmesan), (divided)
pizza or smooth marinara sauce, (warmed)

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silpat mat (or spray with nonstick spray).
  • In a medium bowl, whisk together the flour, sugar and salt. Mix in the yogurt and continue to stir and mix until the ingredients are well-combined and forming a dough. Turn out the dough onto a well-floured surface. Knead a bit until the dough comes together well, sprinkling in more flour if needed. Roll the dough into a rectangle (about 9x14-inches).
  • Spoon the pesto onto the rolled out dough, using the bottom of a spoon to spread it out evenly. Sprinkle with the chopped pepperoni. Top with 1/2 cup cheese.
  • Carefully roll up the dough into a log. It will be a little soft and precarious. Use a sharp knife to cut about 1/2-inch slices. Hold the sliced roll together with your fingers while you transfer it to the prepared baking sheet. Repeat with the remaining slices.
  • Bake 20 minutes, or until cooked through and lightly browned. Serve warm with sauce.

1 can refrigerated crescents (, or pizza dough)
1/2 cup pizza sauce or marinara (, more as needed)
1 cup shredded mozzarella cheese (, more as needed)

Steps:

  • Preheat oven to 350°F. Line a large baking sheet with foil and spray lightly with cooking spray. Lightly flour a large wooden cutting board. Roll out dough onto the floured surface, pressing seems together as you go.
  • Spread pizza sauce evenly over the dough, to the edges. Top with shredded mozzarella and your choice of pizza toppings.
  • Roll pizza width-wise (the longest side) and seal the edges. Slice into 1-inch pieces with a sharp serrated knife. Place pinwheels on the prepared cookie sheet, about 2 inches apart.
  • Bake for about 10-12 minutes, or until the tops are golden brown and the middles are cooked through.
  • Allow to cool for a couple of minutes, then serve with marinara or ranch for dipping.

1 pizza dough ((see notes))
½ cup pizza sauce
3 ½ ounces thinly sliced ham
½ cup pineapple tidbits
10 ounces shredded mozzarella
2 tablespoons minced chives ((optional))

Steps:

  • Preheat your oven to 425 degrees.
  • Form the pizza dough into a rectangluar shape. The backside of an 18"x13" baking sheet works great for this.
  • Spread the pizza sauce over the dough, leaving ½ inch without the sauce at one of the short ends. Add the ham, pineapple, and mozzarella over the sauce.
  • Roll the pizza, starting at the short end with the sauce right to the edge. Use the edge without the sauce to seal the roll, pinching the dough together a little, if necessary.
  • Cut the pizza roll into 8 equal pieces. Place the pieces on a non-stick or parchment paper-lined pan. Bake for 20 minutes, until the pizza dough is cooked. Sprinkle the top with some minced chives, if using.

2 cups self-rising flour, plus more for dusting
1 cup full-fat Greek yogurt
Pizza sauce and shredded mozzarella, for topping

Steps:

  • Put a pizza stone or inverted baking sheet on the center rack of the oven and preheat to 450 degrees F.
  • Put the flour and yogurt in a large bowl and mix with a fork until a shaggy dough forms. (The dough may appear dry and crumbly at first, but it will come together as you mix it.) Turn the mixture out onto a lightly floured work surface and knead until the dough is smooth and slightly elastic, about 8 minutes, dusting with more flour if necessary. If the dough feels too dry, add water, a tablespoon at a time and continue kneading until it is soft and pliable.
  • Divide the dough in half, roll into two balls, and then use a rolling pin to roll the balls out into two 10-inch pizza crusts. Dust the back of another inverted baking sheet or pizza peel with more flour, semolina or coarse cornmeal and place a circle of dough on top.
  • Top the dough round with sauce and shredded cheese as desired, leaving a half-inch bare border around the edge. Slide the pizza onto the preheated stone or baking sheet in the oven. (Alternatively, roll out the dough on a baking sheet, top as desired and put the sheet in the oven to bake.) Cook until the crust is golden and the cheese is bubbling, 8 to 10 minutes. Using a large spatula, transfer the pizza to a cutting board and let sit 5 minutes. Repeat with the remaining dough round.

500g pack bread mix
flour , for dusting
50g mature cheddar , grated
4 tbsp tomato purée
handful basil , roughly torn
1 whole roasted pepper , from a jar, cut into strips
70g pack pepperoni , chopped
125g ball mozzarella , torn into chunks

Steps:

  • Oil a 25cm springform tin. Make up the bread mix following pack instructions.
  • Turn the dough onto a lightly floured surface and roll out to an oblong 35 x 22cm using a rolling pin. Spread the tomato purée over the dough (leaving a border of dough plain all the way round), then scatter with the basil, pepper, pepperoni and mozzarella.
  • Carefully and firmly roll up from the longest side to make a Swiss roll, then slice evenly into 8 thick pinwheels. Arrange 7 around the edge of the tin and put the eighth in the centre. Cover the tin with cling film and leave in a warm place until well risen. Depending on the heat in the room, this can take up to 1 hr.
  • Heat oven to 240C/220C fan/gas 7. Remove the cling film, scatter with the cheddar and bake for 12-15 mins until golden.
