Two-Bean Pasta Salad image

This Two-Bean Salad, that summer-picnic mainstay, becomes an elegant entree when tossed with whole-grain pasta.

10 ounces green beans, trimmed and cut into 1-inch pieces (about 2 1/2 cups)
8 ounces whole-wheat, kamut, or spelt pasta shells
1/4 cup white balsamic or apple cider vinegar
1 teaspoon minced garlic
Kosher salt
1/4 teaspoon sugar, (optional)
1/3 cup extra-virgin olive oil
1/4 teaspoon ground black pepper, plus more to taste
2 stalks celery, cut crosswise into 1/8-inch-thick slices (about 1 cup)
1 cup cooked black-eyed peas, kidney beans, or chickpeas (canned are okay)
1/2 cup shredded basil, plus more for garnish

Steps:

  • Bring a large pot of salted water to a boil. Add green beans and cook until tender, about 3 minutes. Remove from boiling water with a slotted spoon and run under cold water to stop the cooking; set aside.
  • Add pasta to the same boiling water and cook until al dente. Drain and rinse under cold water.
  • In a large bowl, whisk together vinegar, garlic, 1/2 teaspoon salt, and sugar, if using. Whisk in the oil in a steady stream, and season with 1/4 teaspoon black pepper.
  • Add celery, peas or beans, and green beans to the vinaigrette, then add pasta and toss well to combine. Let pasta salad marinate for at least 1 hour.
  • Just before serving, stir in shredded basil. Season to taste with salt and pepper.

2 cups small seashell pasta
⅓ cup Italian-style salad dressing
salt to taste
1 (15 ounce) can pinto beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
3 tomatoes, chopped
1 ½ tablespoons ground cumin
½ tablespoon chili powder
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon dried red pepper flakes
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse pasta in cold water. Place in a large mixing bowl and add dressing and salt; mix well.
  • Combine pinto beans and black beans in a colander; rinse with cold water and add to pasta. Add corn, tomatoes, cumin, chili powder, onion powder, garlic powder, dried red pepper flakes and salt and pepper to taste; toss lightly.
  • Chill salad in refrigerator until ready to serve.

12 ounces tri-color spiral pasta
1 (12 ounce) jar roasted red peppers, drained and chopped (see below to roast your own)
1 (15 ounce) can cannellini beans, drained (great northern)
1 (15 ounce) can garbanzo beans, drained
1 (3 7/8 ounce) can sliced black olives
1/2 cup chopped green onion
feta cheese, for topping (optional)
3/4 cup olive oil
1/3 cup red wine vinegar
1/4 cup chopped parsley
2 -4 cloves chopped garlic
1 teaspoon black pepper

Steps:

  • Cook pasta according to directions; drain.
  • Rinse with cold water.
  • Prepare vinaigrette while pasta is cooking.
  • Stir all vinaigrette ingredients together in large bowl.
  • To Roast Pepper Take 1 large red bell pepper, roast under broiler or on barbecue rotating frequently until skin is black.
  • Place warm pepper in sealed zip lock bag for 5 minutes.
  • Peel skin off pepper while it is still hot.
  • Seed and chop pepper.
  • Stir pasta, pepper, canned ingredients and onion into vinaigrette. Add salt and pepper to taste.
  • Chill and serve.
  • Top with feta cheese if desired.
  • Enjoy!

1/4 cup chopped fresh flat-leaf parsley
1 stalk celery, finely diced
1 scallion, green and white parts, thinly sliced on the diagonal
1/4 small red onion, minced

Steps:

  • Whisk together the oil, vinegar, 1/4 teaspoon salt and 1/8 teaspoon pepper in a medium bowl. Add the beans, parsley, celery, scallions and red onions and stir until well combined. Add additional salt and pepper to taste. Serve at room temperature.

1 pound fresh green beans, trimmed and cut into 1-inch pieces
1/4 cup olive oil

1 cup cubed fully cooked ham
4 green onions, thinly sliced
2 tablespoons minced fresh parsley
1 to 2 tablespoons snipped fresh dill or 1 teaspoon dill weed

  • Cook pasta according to package directions. Meanwhile, place beans in a large saucepan and cover with water. 2 tablespoons sugar
1 can (15 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 jar (4 ounces) chopped pimentos, drained
2 celery stalks, chopped
1 red bell pepper (ribs and seeds removed), finely chopped
Coarse salt and ground pepper

Steps:

  • In a medium bowl, whisk together oil, vinegar, and sugar. Add black-eyed peas, beans, pimentos, celery, and bell pepper. Season with salt and pepper, and toss to combine. Cover and refrigerate for at least 1 hour (or up to 3 days). Serve with a slotted spoon.

1 red onion
200g green beans or runner beans (or use a mixture), trimmed or sliced
400g can cannellini beans, drained and rinsed
3 tbsp olive oil
1 tbsp lemon juice
large handful of chopped soft herbs (parsley, dill, tarragon, basil and coriander work well, or use a mixture)

Steps:

  • Use metal tongs to hold the onion over hot coals or char in a hot griddle pan until just blackened all over. Leave to cool completely, then peel away the outer blackened layer and finely chop the rest of the onion. You can also simply finely chop the onion without charring it first, if you prefer.
  • Cook the beans in a pan of boiling salted water for 4-5 mins until just cooked, with a slight snap. Drain and tip into a bowl with the onion, cannellini beans, olive oil and lemon juice. Season well, toss everything together and set aside until needed. This can be prepared several hours ahead and chilled. Stir in the herbs just before serving.
