- Preheat the oven to 350°F.
- In a large mixing bowl, toss the sliced apples with the sugar, 1 1/2 tablespoon flour, salt cinnamon, and nutmeg, and set aside for the sugar to soften the apples and macerate, creating a light syrup. In a smaller mixing bowl, toss the oats, 1 1/2 cups flour, brown sugar, and baking powder together, then use your fingers to mix in the melted butter, gently making small clumps where you can.
- Layer the sugared apples and their juice in a 9 X 13 baking dish and sprinkle evenly with the oatmeal mixture, but don't pack it tightly. Bake uncovered for 50-60 minutes until the apples are soft and tender and the sauce has thickened and is bubbly. If the crisp seems to be browning too much, cover with foil for the remaining cooking time.
- Let the apple crisp cool for 20-30 minutes before serving for the caramel sauce to thicken. Divide in bowls and top with vanilla ice cream or whip cream, and serve.

TWICE THE CRISP APPLE CRISP
I was looking for a double crust apple crisp recipe and couldn't find one that I liked. This is what I came up with. I hope you enjoy it as much as we did. It has a lot of crunch and the filling is sweet & spicy. My husband likes it warm with ice cream. I had it as a side for cottage cheese as well and it was yummy!

- 1. Preheat oven to 325. While it is heating put stick of margarine into 9 inch square pan & put in oven to melt.
- 2. Crust-put walnuts in food processor & grind until consistency desired. I grind mine pretty fine for better mixing. In large bowl lightly mix flour, brown sugar, cinnamon & ground walnuts together. Remove pan of melted margarine from oven & pour into dry ingredients. Mix well until crumbly. Pour half of mixture into the 9 inch pan, press down firmly & return to oven while preparing apples.
- 3. Pour lemon juice into large bowl. Core and peel apples, slice into 1/8"-1/4" slices, put into bowl & toss in lemon juice after each apple. Add sugar, salt, remaining spices & mix well. Let sit for 10 minutes to bring out juices.
- 4. Remove crust from oven, Cover warm crust with filling. Cover with remaining crust mixture. Return to oven for 1 hour or until apples are fork tender.

- Toss sliced apples with lemon juice to prevent browning.

- Preheat the oven to 350F degrees. Grease a 2-quart baking dish.
- In a medium bowl stir together the flour, brown sugar, oats, cinnamon & salt.
- Add in the butter and cut it in using a pastry cutter or rub the butter into the dry ingredients using your fingers. At the end it should be crumbly in texture, but no large chunks of butter should remain. Place in the fridge as you make the filling.
