TUSCAN BEAN SOUP

1/2 cup kidney beans soaked overnight or 1 (14-ounce) can store-bought beans, drained and rinsed
1/2 cup cannellini beans soaked overnight or 1 (14-ounce) can store-bought beans, drained and rinsed
3 tablespoons olive oil, plus more for drizzling on bread
1/2 pound diced pancetta
2 cups diced yellow onions
1 cup diced celery
1 cup diced carrots
4 cloves garlic, sliced
Salt and freshly ground black pepper
1 (14-ounce) can diced tomatoes
1 (14-ounce) can chick peas, drained and rinsed
2 quarts chicken stock, plus extra water if needed
2 sprigs rosemary
3 sprigs thyme
1 sprig oregano
1 bay leaf
1 teaspoon red chili flakes
2 heads Lacinata kale, stems removed and cut into bite size pieces
1 loaf Italian peasant bread, cut into thick slices
Parmigiano-Reggiano, grated, for serving

Steps:

  • Place the kidney beans in a medium pot, add water to cover by 2-inches and bring to a boil. (If using canned kidney beans, skip this step.) Turn the heat down, let simmer for 45 minutes to 1 hour, or until just-tender. Use the same process for the cannellini beans.
  • In a large soup pot, heat the olive oil over medium heat. Add the pancetta, rendering the fat and cooking until slightly crispy about 3 minutes. Saute the onion, celery, carrot and garlic for 3 to 4 minutes. Season with salt and freshly ground black pepper, to taste. Add the diced tomatoes, the cooked and drained kidney beans, cannellini beans, chick peas, and the chicken stock. Using kitchen twine, tie the herbs and the bay leaf into a bundle and add to the pot. Season with the red chili flakes, salt and pepper. Cook for 15 to 20 minutes, then add the kale. Continue cooking until the beans are completely tender.
  • Preheat the oven to 350 degrees F. Drizzle olive oil over the slices of peasant bread, season with a little salt and pepper and toast in the oven. Serve the soup in large bowls with grated Parmesan and a slice of toast.

2 bunches carrots, cut into 1-inch chunks (about 4 cups)
4 cups low-sodium vegetable broth
1 15 ounce carton diced tomatoes in juice
2 12 ounce bunches Tuscan kale, thinly sliced and veins removed
1 large potato, chopped into 2 1-inch chunks
¼ cup chopped fresh basil plus 6 whole basil leaves
2 tablespoons chopped chives plus handful of whole chives
1 15 ounce carton white beans, rinsed and drained (or fresh cooked)
1 tablespoon balsamic vinegar

Steps:

  • Bring carrots, broth, tomatoes and 2 cups water to a simmer in a a large stockpot with steamer insert over medium heat.
  • Place kale, whole basil leaves and whole chives in steamer insert.
  • Place steamer inside stockpot, cover and steam 5 to 7 minutes while broth is simmering.
  • Remove and discard basil and chives.
  • Add kale, beans, and vinegar to soup, and return to a simmer until carrots and potatoes are cooked. Soft firm but not mushy. This should only take another minute or two
  • Season with salt and pepper.
  • Stir in chopped basil and chives just before serving.

4 cups chicken broth, divided
1 Tbsp. olive oil or avocado oil
3 strips bacon, chopped
1 medium onion, chopped, about 1 cup

2 ribs celery, chopped, about 1/2 cup
4 cloves garlic, minced
1 Tbsp. fresh minced rosemary
1 medium russet potato, peeled and 1/2-inch diced, about 1 1/2 cups
2 cups chopped lacinato kale or curly kale, lightly packed
1/4 cup chopped parsley
Kosher salt and fresh black pepper
Freshly grated Parmesan cheese, for serving, optional

Steps:

  • Drain and rinse one can of cannellini beans. Add to a blender or food processor with 1 cup of chicken broth. Blend until smooth. Drain and rinse the other two cans of beans and set them aside.
  • Heat oil in a large dutch-oven or soup pot over medium heat. Add bacon and cook until bacon renders fat and crisps up.
  • Add onion, carrots, and celery. Cook until softened, about 6-7 minutes, stirring occasionally.
  • Stir in garlic and rosemary. Cook until fragrant, about 30 seconds, while stirring constantly.
  • Add blended beans, drained beans, potatoes, and the remaining chicken broth. Season with salt and pepper to taste. Simmer over medium or medium-low heat, for 20-25 minutes, uncovered, or until vegetables are tender and broth slightly reduced.
  • Stir in kale and simmer for a few minutes or until wilted. Taste the soup and add more salt if needed. Stir in chopped parsley. Serve soup with grated Parmesan cheese. It's also really good with crusty bread for dipping.

2-4 cloves garlic, finely chopped (I like lots of garlic)
2 cans (14-ounce) cannellini beans, drained and rinsed
4 cups homemade chicken broth, or low sodium canned broth
4-5 cups roughly chopped Lacinato kale (~ I just use the whole bunch)
Kosher salt to taste
1 small chili pepper, like serrano, thinly sliced (I sometimes use 2)
Optional: cooked sausage, sliced crosswise

Steps:

  • Heat the olive oil and garlic in a large pot over medium heat until aromatic, about a minute or two. Careful not to burn the garlic. Add the beans and stir to coat with the oil and garlic.
  • Add the chicken broth and kale and season with some salt. Cover the pot and simmer until kale is wilted and to your liking, about 15 minutes.
  • Add the sliced serrano (or jalapeno) pepper and cook until heated through. Season to taste with more salt if needed.
  • Stir in sliced sausage if using, or just add to the individual bowl.

  • In a small bowl mash half of the beans with a masher or the back of a spoon, and set aside.
  • Heat the oil in a large soup pot over medium-high heat. Add the onion, carrots, celery, zucchini, garlic, thyme, sage, 1/2 teaspoon of salt and 1/4 teaspoon of pepper, and cook stirring occasionally until the vegetables are tender, about 5 minutes.
  • Add the broth and tomatoes with the juice and bring to a boil. Add the mashed and whole beans and the spinach leaves and cook until the spinach is wilted, about 3 minutes more.

6 cloves garlic
1 onion (any color)
1 jalapeno pepper (remove seeds and membranes for less heat)
4-5 large carrots
2 15 oz. cans cannellini beans
2-3 packed cups kale
4 cups vegetable stock
16 oz. crushed tomatoes
2 tsp. Italian seasoning
2 tsp. sugar
2 Tbsp. olive oil
3/4 tsp. kosher salt (split)
1/2 tsp. pepper (split)
1/4 cup Parmesan cheese (optional)

Steps:

  • Mince 6 cloves of garlic, 1 onion (any color), and 1 jalapeno pepper (remove seeds and membranes for less heat).
  • Roughly chop 2-3 packed cups of kale.
  • Chop 4-5 large carrots into slices (yields 3-4 cups chopped chopped carrots). Feel free to peel the carrots if you like. If you do not peel the carrots be sure to wash and dry them thoroughly before chopping.
  • Drain and rinse 2 15 oz. cans of cannellini beans (or canned beans of choice).
  • Heat a cast iron Dutch oven or heavy bottom soup pan to medium-high on stove top. Add 2 Tbsp. olive oil.
  • Once the oil is heated, add the minced garlic, onions, and jalapeno. Sauté for 2-3 minutes, stirring often.
  • Add the chopped carrots to the pot along with 1/4 tsp. each kosher salt and pepper. Sauté for 8 minutes or so, stirring often. The carrots should be slightly softened at this point.
  • Add 4 cups vegetable broth, 16 oz. crushed tomatoes, 2 tsp. Italian seasoning, 2 tsp. sugar (or sweetener of choice), 1/2 tsp. kosher salt and 1/4 tsp. pepper to the pot. Stir until combined.
  • Bring to a boil and then reduce to a low boil. Cover and cook for 25-30 minutes on medium heat. The carrots should be soft and easily pierced with a knife by this point.
  • Add the drained beans and the chopped kale to the soup. Stir and cook for another 2-3 minutes, uncovered, or until the kale has wilted a bit.
  • Adjust salt, pepper, and sugar levels.
  • Serve with freshly grated Parmesan if desired.

Steps:

  • Meanwhile, heat remaining 2 tablespoons oil in a small skillet over medium-low heat. Cook sliced garlic, stirring often, until crisp and golden, 1 to 2 minutes. Transfer garlic to a plate using a slotted spoon. Reserve garlic oil.
  • Divide soup among 6 bowls. Garnish with garlic chips, and drizzle with garlic oil.
