Steps:
- Mix grated potatoes, turnips, and onion together in a bowl, draining off any excess liquid. Mix egg, parsley, basil, dill, salt, and pepper into potato mixture. Stir flour into potato mixture, adding enough flour to make a thick batter.
- Heat enough oil to fill the bottom of a heavy skillet to 1/4-inch depth over medium-high heat.
- Working in batches of 3 or 4 pancakes, spoon batter, 1/4 cup per pancake, into hot oil and flatten to make 1/2-inch thick pancakes. Fry pancakes in the hot oil until golden brown, 2 to 3 minutes per side. Transfer pancakes to a paper towel-lined plate.

PARSNIP AND CARROT LATKES (VEGETABLE PANCAKES)
A new twist to a traditional Jewish dish - Serve instead of potato latkes at Chanukah, or in addition. These vegetable pancakes are beautifully colorful and very tasty. They go wonderfully with sour cream. The gluten-free rice flour mix I use is 3 cups white rice flour, 3 cups brown rice flour, 2 cups potato starch (not flour), 1 cup tapioca starch - Use just one cup of this mixture. If you can eat gluten, use just 1/2 cup of matzo meal instead.

Steps:
- Place the turnips and ginger in a large saucepan and cover with cold water. Add the sesame oil and bring to a boil over medium-high heat. Reduce the heat and simmer until the turnips are tender, about 20 minutes. Drain. Return the turnips to the pan and set over low heat until dry, 7 to 8 minutes, stirring often to prevent sticking.
- Remove the turnips from the heat. Add the butter and mash with a hand masher until the turnips are slightly lumpy. Stir in the salt, pepper to taste and the flour. Set aside to cool.
- Shape the turnip mixture into 8 3-inch-wide patties. Dust with cornmeal. Cover with a towel and refrigerate for 1 hour. Let stand at room temperature for 30 minutes. Meanwhile, steam the cod fillet until done, about 10 minutes. Cut into 1-inch pieces.
- Spray a large nonstick skillet with olive oil. Heat over medium heat until hot. Add as many of the pancakes as will fit without overcrowding. Cook until browned on both sides, about 3 minutes per side. Transfer to a heated serving platter and keep warm until all of the pancakes are cooked. Top each cake with a piece of cod. Coil the strips of smoked salmon and set 1 atop each piece of cod. Sprinkle minced scallions over all. Serve immediately.

TURNIP PANCAKES
I'm trying to come up with ways to cook turnips that don't involve roasting, stewing or mashing them, so I came up with this recently. It started as a potato pancake recipe from the Joy of Cooking, then changed when I tried it out. They came out rather sweet considering there's no sugar added... I'll definitely be eating these again. Good hot or cold.

- Rinse the dried sausage, dice it up, and set aside. If using bacon, simply cook the bacon until it’s crisp and still a bit chewy, and then dice. If using the dried shrimp, rinse in warm water, and give them a rough chop. Wash and chop the scallions. Set aside 1 tablespoon of the scallion for the dipping sauce.

- Soak the dried scallops and dried shrimp in water overnight. Drain the water. Use your hands to shred the scallops. Roughly chop the dried shrimp.
- Heat 1 1/2 tablespoons of oil in a skillet (or sauté pan) over medium-high heat. Add the scallops, shrimp, Chinese sausage, and shallots and cook for about 2 minutes, stirring frequently. Add the oyster sauce, salt, and white pepper. Stir to combine. Turn off the heat and transfer everything to a bowl.
- Trim the tops off the daikon and peel them. Grate the daikon into a 9x13 pan or a bowl. You are doing this to ensure that you save all the daikon juices that release as you are grating the turnips. Alternatively, grate the daikon using a food processor.
- Heat 1 1/2 tablespoons oil in a large wok (or sauté pan) over medium-high heat. Add the shallots and garlic to the wok and sauté for about a minute, until fragrant. Transfer the grated daikon and daikon juices into the wok. Add 1 1/2 cups of water, the rock sugar, salt, chicken powder, white pepper, and garlic powder to the wok. Cover the wok with a lid and cook the daikon for about 5 minutes.
