Collard Greens with Ham Hocks image

There are a lot of dimensions to these collard greens: smoky pork, a little bit of acidic vinegar, and sweet cane syrup. That's real, true Southern greens.

1 tablespoon vegetable oil
2 ham hocks, cured and smoked
2 bunches collard greens
1 yellow onion, diced
5 cloves garlic, minced
4 cups chicken stock, plus more as necessary, precise amount will depend on dimensions of your pot
2 tablespoons cane vinegar, can be found at most Asian markets
2 tablespoons cane syrup

Steps:

  • In a heavy-bottomed pot, heat the vegetable oil. Add the ham hocks and sear on all sides. Meanwhile, prepare the collards by ripping the leaf away from the spine. Pile the greens on top of each other and cut into long strips; then cut the strips to make squares. Set aside.
  • When the ham hocks are lightly browned, add the onions and garlic to the pot; stir and sweat them until the onions are translucent and tender, 2 minutes. Add half of the greens and a cup of stock so the greens begin to wilt. Season with a pinch of salt (which will also help the wilting process) and stir to combine. Then, add the remaining greens and another cup of stock and cover to steam, about 2 minutes. Add 1-2 cups more stock, to just cover the greens and ham hocks. Season with more salt and pepper, reduce heat to a simmer, and cover. Cook, 1-1½ hours.
  • After 1-1½ hours, use tongs to remove the ham hocks to cool (they'll be falling off the bone). Add another ½ cup of stock, the cane vinegar, and the cane syrup to the greens. Stir, taste, and adjust seasoning if necessary. When the ham hocks have cooled, pull the meat off the bones, chop finely, and add back into the greens. Serve in a bowl with bits of ham hock and plenty of the "potlikker."

2-3/4 pounds turnips, peeled and cut into 1/2-inch cubes
1 bunch fresh turnip greens (about 12 ounces), chopped
8 ounces cubed fully cooked country ham or 2 smoked ham hocks (about 1-1/2 pounds)
1 medium onion, chopped
3 tablespoons sugar
1-1/2 teaspoons coarsely ground pepper
1-1/4 teaspoons salt
2 cartons (32 ounces each) chicken broth

Steps:

  • In a greased 6- or 7-qt. slow cooker, combine all ingredients. Cook, covered, on low 5-6 hours or until vegetables are tender, stirring once. If using ham hocks, remove meat from bones when cool enough to handle; cut ham into small pieces and return to slow cooker. Serve with a slotted spoon.

Turnip greens, mustard greens, German mustard, the list goes on, they are all so good. I cook them the way my mother and her mother (and probably before them)cooked them.

turnip greens
3 - 4 country ham hocks
pinch of nutmeg
salt, to taste

Steps:

  • 1. Soak greens for a few minutes in salted water. Wash greens thoroughly, breaking off stem thru the middle of the leaf. I run them thru several washings, until the water runs clear. Add greens to a large stockpot filled with water. Parboil (boil without seasonings) for about 5 minutes. Drain off water and cover with fresh water. Add ham hocks. They will be salty, so wait until they cook for a while to see if more salt is needed. (If you don't have access to country ham hocks, use smoked ham hocks, salt pork or other seasoning meat of your choice, but country ham hocks are great). Add pinch of nutmeg to enhance flavor. Bring pot to boiling again and turn heat down to a low boil. I cook them on the low boil for 2 - 3 hours, until tender. You can remove the ham from the hock and add to greens to serve.

8 ounces country ham, cubed (see Cook's Note)
1/3 cup apple cider vinegar
1 pound stemmed turnip greens (see Cook's Note)
Freshly cracked black pepper
4 cups low-sodium chicken stock (one 32-ounce carton)

Steps:

  • Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
  • Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
  • Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.

4-1/2 pounds fresh turnip greens, trimmed
1-1/2 cups water
1 large onion, chopped

  • In a Dutch oven, cook salt pork until lightly browned. Drain, reserving 2 tablespoons of drippings. , Stir the remaining ingredients into the reserved drippings. Bring to a boil. Reduce heat; cover and simmer for 45 minutes or until greens are tender.
