Turkey & Noodle Tomato Soup image

Turn V8 juice, veggies and ramen noodles into a wonderful soup that takes just a few minutes to make. I like to serve it with biscuits. -Jennifer Bridges, Los Angeles, California

1 pound ground turkey
1 envelope reduced-sodium onion soup mix
1 package (3 ounces) beef ramen noodles
1-1/2 teaspoons sugar
3/4 teaspoon pepper
1/4 teaspoon salt
1 bottle (46 ounces) reduced-sodium V8 juice
1 package (16 ounces) frozen mixed vegetables

Steps:

  • In a Dutch oven, cook turkey over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in soup mix, 1-1/2 teaspoons seasoning from the noodles, sugar, pepper and salt. Add V8 juice and vegetables; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes., Break noodles into small pieces; add to soup (discard remaining seasoning or save for another use). Cook 3-5 minutes longer or until noodles are tender, stirring occasionally. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat soup through in a saucepan, stirring occasionally; add a little reduced-sodium broth or water if necessary.

3 cups tomato puree, preferably fresh summer tomatoes, but canned are fine too
1 tablespoon olive oil
2 tablespoons lemon juice
2 tablespoons white vinegar
1 -2 teaspoon curry powder
1 pinch salt
1 cup yogurt, beaten until creamy
1/4 cup minced parsley, for garnish

Steps:

  • Puree tomatoes in a blender until liquifiedl strain out seeds if necessary.
  • Add oil, lemon juice, vinegar, curry powder, and salt.
  • Blend, then pour in yogurt and mix well.
  • Chill for at least 2 hours.
  • When ready to serve, ladle into small bowls and garnish with minced parsley.

In Spain, gazpacho is often served as a smooth and silky pureed soup. This recipe is chunky/smooth, but you can puree the vegetables in a food processor a little longer until very smooth.

2 tomatoes, ripe, coarsely chopped
1 green bell pepper, seeded and coarsely chopped
1/4 seedless cucumber, cut into chunks
1 small red onion, coarsely chopped
2 slices bread, rustic, torn into pieces (about 1 cup)
1 tablespoon olive oil
2 garlic cloves, minced
2 cups tomato juice
1 (14 1/2 ounce) can vegetable broth
1/4 cup fresh lemon juice
1/4 teaspoon fresh ground black pepper

Steps:

  • Finely chop 1/4 cup each of the tomato, bell pepper, cucumber and red onion. Combine in a small bowl; cover and set aside in the fridge.
  • Put the remaining tomato, bell pepper, cucumber and red onion in a food processor. Add the bread, oil, and garlic; pulse until a very coarse puree.
  • Transfer the mixture to a large bowl; stir in the remaining ingredients. Cover and refrigerate until well chilled, at least 2 hours or up to 2 days. Ladle the gazpacho into 4 chilled bowls and top with the reserved chopped vegetables.

6 cups chicken or turkey broth
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1/3 cup quick-cooking barley
1 tablespoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon pepper
2 cups cubed cooked turkey
1-1/2 cups sliced carrots
1-1/2 cups sliced celery
1 medium onion, chopped
1 cup chopped green pepper
1 package (10 ounces) frozen chopped okra

Steps:

  • In a large saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat; cover and simmer for 50 minutes. Add turkey and vegetables. Cover and simmer 50 minutes longer or until vegetables are tender.
