OVEN BAKED MEATBALLS AND POTATOES
Recipe for Oven Baked Meatballs and Potatoes Sliced Yukon Gold potatoes lined with Turkish meatballs, topped off with peppers, tomatoes, garlic, parsley, drizzled with tomato sauce, and baked in the oven for perfection. A crowd pleaser that is also esthetically pleasing to the eye. This recipe is adapted (with changes) from Refika'nin Mutfagi's Patates Kofte Dizme recipe.

Steps:
- Pre-heat the oven to 450 F degrees.
- Prep your Turkish meatballs as directed in the recipe. Roll them into balls. For a 10-inch plate that is 2-inches wide, you will need 21 meatballs.
- Slice each potato into 1/2 -inch thick slices. Season each slice with 1 1/2 teaspoons of kosher salt.
- Place a slice of potato in the palm of your hand and put a meatball on top. Shape the meatball in a way that will be similar to the size of the potato. Place it on a large plate and continue with the rest of the potato slices and meatballs.
- Arrange the potato slices and meatballs like I did in the video above, starting from the outer corners and ending in the middle. For a 10-inch plate, you should have 17 meatballs+potatoes and 3-4 in the middle.
- Garnish with cherry tomatoes, peppers, garlic, and parsley. Spread cubed butter on top.
- Mix tomato sauce, water, and rest of the salt in a cup. Pour the mixture over the meatballs and potatoes.
- Cover it first with parchment paper and then with aluminum foil. Bake in the preheated oven for 55 minutes. Then remove the parchment paper and aluminum foil and bake for another 20 minutes.
- Sprinkle it with more parsley and serve.

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and drizzle the olive oil and canola oil in an even layer over the paper.
- Pour the breadcrumbs into a large mixing bowl, pour the milk over top and stir to fully moisten the breadcrumbs. Add the remaining ingredients to the mixing bowl and mix with your hands just until combined.
- Scoop 1/4-cupfuls of meatball mixture and place them evenly spaced on the prepared baking sheet; you should have 12 meatballs. Gently roll them into balls. Bake until bottoms are golden brown, about 15 minutes. Reduce the oven temperature to 325 degrees F and continue to bake for 15 to 20 minutes more until the meatballs are cooked through.

- In a large bowl, combine the eggs, bread crumbs and soup mix. Crumble beef over mixture and mix well. Shape into 1-in. balls. In a large skillet, brown meatballs in small batches over medium heat; drain. Sprinkle with flour; gently roll to coat. , Place half of the potatoes in a greased 2-1/2-qt. baking dish. Top with meatballs and remaining potatoes. In a small bowl, combine soup and milk until blended; pour over potatoes. Sprinkle with paprika if desired. , Cover and bake at 350° for 60-65 minutes or until the potatoes are tender.

- Heat oven to 220C/200C fan/gas 7. In a large bowl, combine the onion, carrot, half the garlic and half the rosemary with the turkey and some seasoning. Shape into 16 meatballs and put in a small baking tray. Toss the potatoes with the remaining garlic, rosemary and the oil, place in a baking tray, then cook both for 20 mins, with the potatoes on top shelf.
- After 20 mins, drain juices off the meatballs, pour cherry tomatoes over, sprinkle with the Parmesan and season. Toss the potatoes, and swap to bottom shelf with the potatoes on top. Cook for another 20 mins until the potatoes are crisp and the meatball sauce is bubbling.
- When the potatoes and meatballs are almost done, cook the broccoli for 3-4 mins, until tender. Sprinkle the basil on top of the meatballs and serve with the crispy potatoes and broccoli.

- Using your hands, mix the meatball ingredients until completely combined. Shape into 8-10 equally sized meatballs (any more and the meatballs will be too small and will get dry). I use a tablespoon, the palm of my hand and a little water for this. Flatten the meatballs slightly.
- Mix the potato, carrot and pepper in a suitable oven dish, making sure the potato slices don’t stick together. Put the meatballs on top. Mix tomato, water, olive oil and some salt and pepper. For a stronger tomato flavour, you may add a teaspoon or two of tomato paste and a pinch of sugar. If you have a stick blender, use it to mix the sauce to a homogenous mass – if not, mixing by hand and keeping the chunks is also fine. Pour the tomato sauce over the vegetables and meatballs, making sure everywhere is covered in the sauce.
- Roast in the middle of the oven until the potatoes are soft, around 40-45 minutes to an hour or more, depending on the thickness of your potato slices and the type of potato used. If your potatoes are still very hard after 40 minutes you may remove the meatballs while the potatoes finish cooking, returning them to the oven to reheat for five minutes when the potatoes are ready. Serve hot.
