TURKISH CACIK RECIPE
This Turkish cacik recipe uses plain yogurt, cucumber and mint and is so easy to make at home.

Steps:
- Mix yogurt with cucumber, garlic, salt, mint and dill. (Lemon juice optional). Refrigerate for at least one hour to allow flavours to blend.
- If you'd like a thinner, soup-like dip add water until you reach desired consistency.
- Drizzle with olive oil and sprinkle with sumac (optional) to serve.

CACıK RECIPE - REFRESHING YOGHURT & CUCUMBER DIP
Cacık is one of Turkey's most-loved yoghurt recipes. Delicious as a thick, creamy dip or watered down as a refresher during & after meals.

Steps:
- Add your yoghurt to a large bowl.
- Add a tiny splash of water to your yoghurt and stir vigorously until it is mixed.
- Keep adding the water a little at a time and stirring until your yoghurt is the thickness you want.
- Now add half the olive oil and stir again until it is mixed and the yoghurt is smooth.
- Add your lemon juice and mix thoroughly.
- Now stir in your garlic and mint.
- Add your cucumber to the yoghurt dip and stir.
- Do a taste test and add a pinch of salt. You can also add more mint or lemon at this stage to suit your taste.
- Before serving, if you like, you can add a bit more dried mint to the surface of your cacık along with a drizzle more olive oil

TURKISH YOGURT WITH CUCUMBERS AND HERBS (CACıK)
Steps:
- First, whisk the yogurt and olive oil together to make a smooth mixture. Gradually whisk in the water until you get the consistency you want. Some prefer their 'cacık' watery while some like it thick. It's completely up to you.
- Next add the cucumbers, garlic, and spices and mix thoroughly until smooth. Adjust the spices to your taste.
- It is best to refrigerate your 'cacık' for a few hours before serving. Serve your ice-cold 'cacık' in small, decorative bowls. Drizzle a little bit of olive oil in the center of each one. Garnish each with a small sprig of fresh mint or dill weed.

EASY LOW FAT CACIK (GARLIC YOGURT DIP)
This is my Turkish mother in law's recipe. It can be made in advance and kept in the fridge prior to serving.

Steps:
- Firstly prepare the cucumber. Using a teaspoon dig out the seeds and soft flesh from the centre of the cucumber and then use a knife to cut off the skin.
- Next using a mortar and pestle crush the garlic with a pinch of sea salt.
- Put the yogurt into a bowl and using a grater, grate the cucumber into the yogurt, stir well. Add the crushed garlic and salt paste and mix in well.
- Serve with a sprinkle of parsley on top.

- Place yoghurt in a large bowl.
- Add all other ingredients, except salt and water, and mix thoroughly.
- Add water until required consistency is achieved.
- Stir in some salt, taste and add more if required.
- Chill in refrigerator for about two hours before serving.
CACIK, TURKISH YOGURT DIP WITH CUCUMBERS AND DILL
There's a wonderful Turkish restaurant I started to frequent, and I tried a dish called cacik. I loved it so much I tried to create a version at home. It's versatile enough to halve or double, and is a great vegetable dip for parties or just to make a little for an afternoon snack with some pitas or crackers. I like this with cucumber slices and warm pitas! The restaurant's recipe used half labne and half plain yogurt, but I used just Greek yogurt and it came out fine. Fresh mint and dill would be optimal though I only had dried on hand. The measurements are guesses since except for the salt, I just eyeballed everything else.

Steps:
- Finely dice the cucumber into many little pieces. A food chopper is good for this.
- Mix everything together in a mixing bowl, then serve. Dip usually lasts about 3-4 days in the fridge, though it doesn't survive long around me if there's fresh cucumbers and yummy pitas!
