Steps:
- Melt butter in 10-inch skillet until sizzling; stir in garlic, salt, pepper and thyme. Add turkey tenderloins and onion. Cook over medium-high heat, turning occasionally, 10-12 minutes or until turkey is browned.
- Reduce heat to low. Cover; cook 25-30 minutes or until turkey is fork tender. Stir relish into pan juices. Slice turkey; serve with relish mixture and orange slices, if desired.

SPICY TURKEY TENDERS WITH BLUE CHEESE PENNE PASTA

- For the dry rub: In a small bowl, mix together the dry spices and season turkey tenders. Cover with plastic wrap and place into refrigerator for 1 hour.
- For the bechamel: In a large saute pot over medium heat, add butter and oil. Warm until the butter melts then whisk in flour, until mixture is smooth. Slowly add skim milk with whisk, breaking down solids. When all the milk is added, slightly simmer for 10 minutes and then whisk in 3/4 cup blue cheese and nutmeg. Hold warm.
- Preheat grill or cast iron skillet to high.
- Add turkey tender pieces and cook until the internal temperature reaches 165 degrees F, or juice runs clear. Remove from grill, toss in warmed hot sauce, and hold warm.
- In a large pot heat 2 gallons of water to boil, and add 2 tablespoons kosher salt. Add pasta, and cook 8 to 10 minutes or until al dente.
- Toss drained pasta with blue cheese bechamel sauce, next remove turkey tenders from hot sauce, and toss in pasta and bechamel. Garnish with Roma tomatoes and remaining blue cheese.
TURKEY AND BEEF MEATLOAF WITH CRANBERRY GLAZE

- Position an oven rack in the center of the oven and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
- Put the cranberries, ketchup, honey, sriracha, 1/2 cup water and 1/2 teaspoon of the mustard in a small saucepan and stir to combine. Heat over medium-high heat until the mixture starts to bubble, then reduce to a simmer and cook, stirring occasionally, until the mixture thickens and the cranberries soften, about 10 minutes. Use a potato masher to crush the cranberries until mostly smooth. Add the rosemary and 1/4 teaspoon salt and set aside to cool slightly.
- Grate the carrot and onion on the small shredding side of a box grater into a large bowl. (This will save any onion liquid, which will help keep the meatloaf moist.) Add the beef, turkey, egg, barley, Worcestershire, remaining 2 teaspoons of the mustard, 1 teaspoon salt and several grinds of pepper. Use your hands to mix everything together until well combined.
- Transfer the mixture to the prepared baking sheet and shape into a 9-by-4-inch loaf using your hands. Brush the meatloaf on all sides with half of the cranberry glaze. Bake until the glaze starts to adhere and dry slightly, about 15 minutes. Brush the meatloaf on all sides with the remaining glaze and bake until a thermometer inserted into the center of the meatloaf registers 155 degrees F, 30 to 35 minutes. Garnish with rosemary sprigs before serving.

- Preheat the oven to 400 degrees F. Set a rack on a baking sheet and mist with cooking spray. Whisk the eggs, mustard, 1 teaspoon curry powder, the cumin and 1 teaspoon salt in a shallow bowl. Mix the panko with 1/2 teaspoon curry powder in another bowl.
- Dip the chicken strips in the egg mixture, letting the excess drip off, then coat with the panko. Place the chicken on the rack and mist all over with cooking spray. Bake until golden brown and cooked through, about 20 minutes.
- Meanwhile, bring about 1 inch of water to a boil in a large pot with a steamer rack or basket in place. Add the broccoli, cover and steam until crisp-tender, 8 to 10 minutes. Mix the ketchup, lime juice and the remaining 1/2 teaspoon curry powder in a small bowl. Serve the chicken strips with the curried ketchup and broccoli.

CROCK POT CRANBERRY TURKEY TENDERLOIN
The store had a deal on those pre-packaged flavored turkey tenderloins, so I picked up a package to experiment with. This was put together with ingredients I had on hand. The tenderloins I got were the Jennie-O Roast Turkey flavor ones, but I think it would work well with plain tenderloins or a turkey breast as well. Also probably good with pork roasts and chicken parts. I didn't salt the turkey because it was pre-flavored, but plain turkey could probably use some salt. I'm guessing on the amount of cranberry sauce, as I used about 3/4 of a can of whole berry sauce. It's a yummy fall dish, though, and would be nice for Thanksgiving, too!

- Put the turkey tenderloins in the crock pot.
- Combine cranberry sauce, apple cider, orange juice, thyme, pepper and salt (if using), and pour over the turkey.
- Cook on low for 7-9 hours, depending on your crock pot.

- Preheat oven to 375°. In a large bowl, combine stuffing cubes and milk. Let stand 10 minutes; break up stuffing cubes with a fork. Stir in egg, celery, onion, carrot, cranberries, salt and pepper.
