8 large eggs
3/4 cup shredded Swiss cheese, divided
2 tablespoons grated Parmesan cheese
2 tablespoons 2% milk
1 garlic clove, minced
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1 cup fresh baby spinach
1/3 cup finely chopped dried apricots
2 green onions, chopped
6 ounces thick-sliced deli smoked turkey, chopped
1/4 cup chopped marinated quartered artichoke hearts

Steps:

  • Preheat oven to 350°. In a large bowl, whisk eggs, 1/4 cup Swiss cheese, Parmesan cheese, milk, garlic, parsley, salt and pepper., In a 10-in. ovenproof skillet, heat oil over medium heat. Add spinach, apricots and green onions; cook and stir until spinach is wilted, 1 minute. Reduce heat; stir in turkey and egg mixture. Sprinkle with remaining Swiss cheese and artichoke hearts., Bake until eggs are completely set, 15-20 minutes. Let stand 5 minutes. Cut into wedges. Garnish with additional green onions if desired.

1 tablespoon olive oil
1/2 onion, chopped
1/2 red or green bell pepper, chopped
1 cup boiled potatoes, chopped
1/2 cup leftover cooked chopped turkey
6 eggs, lightly beaten
1/4 cup cream
Salt and pepper
2 tablespoons chopped parsley, basil or cilantro
1/2 cup grated cheddar, Monterey jack or mozzarella

Steps:

  • Preheat the broiler.
  • Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
  • In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2 to 3 minutes until the frittata puffs

1/2 teaspoon dried parsley flakes
1/2 teaspoon kosher salt

SWISS CHARD:

1 tablespoon dried thyme
½ cup mayonnaise
¼ cup coarse-grain brown mustard
8 slices country style French Bread
6 tablespoons butter, softened
1 pound thinly sliced roast turkey
8 slices tomato
8 slices Swiss cheese

Steps:

  • In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
  • Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. 2 tablespoons butter
2 large yellow onions, thinly sliced
1/4 teaspoon kosher salt
1 pinch pepper
2 tablespoons balsamic vinegar
1 teaspoon sugar
1 drop water, as needed
5 medium baby yukon gold potatoes, unpeeled
2 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon ground pepper
10 eggs
6 ounces swiss cheese, shredded
2 teaspoons fresh rosemary, chopped (optional)

Steps:

  • In a medium skillet melt butter over medium heat. Add onions, salt and pepper. Cook, stirring often and adding water by the drop, to avoid scoorching, until onions are very soft and deep golden brown, 15-20 minutes. Add in the vinegar and sugar and reduce until the onions are glazed. Keep warm.
  • Parboil the potatoes in salted water 3/4 of the way done, about 15 minutes, and then drain and cool until able to handle. Cut them into 1/4 inch cubes.
  • In a 9-10 inch ovenproof skillet, heat the oil over medium heat. Add the potatoes, 1/2 teaspoon salt and 1/8 teaspoon pepper. Cook, uncovered, turning occasionally, until they are browned, 12-15 minutes. Spread potatoes out evenly in skillet.
  • Position the broiler rack about 6 inches from the source of heat and preheat the broiler.
  • In a medium bowl, whisk the eggs, rosemary (if using), the remaining 1/2 teaspoon salt and 1/8 teaspoon pepper, caramelized onions and half the cheese until well-combined. Pour over the potatoes and reduce the heat to medium-low. Using a rubber spatula, lift up the cooked part of the frittata and tilt the skillet to allow the uncooked eggs to run underneath. Continue cooking, occasionally lifting the frittata and tilting the skillet as described until the top is almost set, approximately 5 minutes. Sprinkle with remaining cheese. Broil until the frittata is puffed and the top is set,.
