¼ cup salted butter
½ (8 ounce) package fresh mushrooms, thinly sliced
½ cup minced onion
3 cloves garlic, minced
1 pound ground turkey
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons Worcestershire sauce
1 (10.75 ounce) can condensed cream of mushroom soup with roasted garlic
⅓ cup milk
⅓ cup water
½ cup sour cream

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and keep warm.
  • Meanwhile, heat butter in a large saucepan or deep skillet over medium heat. Saute mushrooms, onion, and garlic until soft, 5 to 7 minutes. Stir in ground turkey and cook until browned and no longer pink, 5 to 7 minutes more. Stir in flour, salt, and pepper; cook for 5 minutes. Mix in Worcestershire sauce.
  • Stir in soup, milk, and water. Bring to a simmer and cook, uncovered, for 10 minutes. Add sour cream and stir until heated through. Serve over egg noodles.

1/2 cup whole milk
1 1/4 pounds ground turkey or veal
1 egg
lightly beaten
3 tablespoons grated onion
2 tablespoons finely chopped parsley
plus more for garnish
1 rounded tablespoon Dijon mustard
1 clove garlic
grated
1/4 teaspoon freshly grated or ground nutmeg
1/4 teaspoon ground allspice or ground cloves
Salt and pepper
2 tablespoons olive oil
3 tablespoons butter
1/2 pound thinly sliced cremini or button mushrooms (2 1/2 cups)
2 shallots
chopped or very thinly sliced
2 tablespoons tomato paste
2 cups turkey or veal stock
1/2 pound extra-wide egg noodles
1/3 cup sour cream
2 to 3 tablespoons chopped fresh dill

Steps:

  • In a small bowl, mix the breadcrumbs and milk
  • In a large bowl, mix the turkey or veal, egg, onion, 2 tablespoons parsley, Dijon, garlic, nutmeg and allspice; season with salt and pepper
  • Squeeze the excess milk from the breadcrumbs
  • Discard the milk; add the breadcrumbs to the large bowl
  • Mix to combine
  • Roll into walnut-size balls
  • Bring a large pot of water to a boil for the noodles
  • In a large, deep skillet, heat the olive oil, two turns of the pan, over medium-high
  • Add the meatballs; cook until browned, about 3 minutes
  • Transfer to a plate
  • Add the butter to the skillet
  • When it foams, add the mushrooms and cook, stirring occasionally, until browned, about 5 minutes
  • Add the shallots and stir until softened and slightly browned, 1-2 minutes
  • Season
  • Add the tomato paste and stir for 1 minute
  • Add 2 cups stock and bring to a simmer
  • Slide the meatballs back into the skillet and simmer until cooked through, 3-4 minutes
  • Salt the pasta water
  • Add the noodles and cook until al dente
  • Drain the pasta and transfer to a large bowl
  • Stir the sour cream into the skillet
  • Mix a few spoonfuls of the sauce into the noodles
  • Top noodles with meatballs and remaining sauce
  • Garnish with parsley and dill

2 Tbsp. olive oil
8 oz. white mushrooms, sliced
1/2 large white onion, diced
1 tsp. Italian seasoning
2 (10.5oz.) cans cream of mushroom soup
1 1/2 cups beef broth
3 cloves garlic, minced
2 Tbsp. Worcestershire
1 Tbsp. Dijon mustard
1/2 cup sour cream
12 oz. egg noodles, cooked
salt and pepper
pinch sweet paprika (optional)

Steps:

  • Sauté the mushrooms and onion over medium high heat in a large sauté pan with ~1-2 Tbsp. olive oil for about 4 minutes. Season with a pinch of salt and pepper.
  • Add in the garlic, reduce heat if needed. Continue cooking, stirring occasionally, until the mushrooms are meltingly tender, ~2-3 minutes more. Pour in slow cooker or crock pot.
  • In the same pan, brown the ground turkey. Season meat with salt and pepper and cook until fully cooked. Drain any liquid if needed. Pour meat into the crock pot.
  • To the slow cooker add the beef broth, cream of mushroom soup, Dijon mustard, and Worcestershire, Italian seasoning and a pinch of sweet paprika and stir.
  • Cook on high for 2 hours or low 3-4 hours. Stir in sour cream before serving. Serve with egg noodles and garnish with parsley. YUM!

  • To make the sauce, heat 1 tbsp of the butter in a large frying pan, tip in the onion and cook over a low heat for about 10 minutes until soft. Add the garlic and mushrooms, increase the heat and fry until all the liquid has evaporated.
  • Place potatoes into a large pot and cover with salted water by 1 inch; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain and cool until potatoes can be handled; cut potatoes in half. Place potatoes into serving bowl with butter, season with salt and black pepper, and toss with chives until potatoes are coated.
  • Add the paprika, tomato purée and flour to the mushrooms, cook for 1 min then add the white wine, if using, and leave to bubble away for a further 1-2 minutes. Be careful as the white wine may set alight. Pour in the chicken stock and set over a high heat to reduce by half. Stir in the soured cream and parsley, then season. Keep the sauce warm while you cook the Turkey.
  • Heat the remaining butter in a frying pan over a medium-high heat. Season the turkey and cook for 3 minutes on each side for medium-rare, depending on the thickness of the meat. Remove from the pan and leave to rest, loosely covered with foil.
  • Cook the green beans in boiling water for 2-3 minutes until just tender, then drain well and steam-dry for a min.
  • Meanwhile, gently fry the garlic in the oil until pale golden - no further. Toss with the beans, season and serve.
  • Serve the turkey filets with the sauce poured over and the beans and Potatoes on the side.

  • In a small saucepan, reduce the leftover gravy by boiling it down to intensify the flavor.
  • In a large skillet, melt the butter over medium high heat until shimmering then saute the mushrooms for 4 minutes then add the onions and cook until soft then add the garlic and cook until fragrant, about 1 minute.
  • Add the gravy and spices to the mushroom mixture, then add the shredded turkey. Stir in the chicken stock a little at a time to thin the sauce. Simmer for 5 minutes.
  • Turn off the heat and stir in the sour cream until well mixed. If needed, adjust the seasonings by adding more salt, pepper, or thyme to taste.
  • Bring a medium-sized pot of salted water to a boil, then add the wide egg noodles and cook according to package directions. Drain the noodles, then toss them with a little olive oil or butter so they don't stick together.
  • Spoon 2/3 cup of sauce over a pile of egg noodles. Serve warm.

1 teaspoon olive oil (divided)
1/2 cup chopped onion
1 pound 93% ground turkey
1/3 cup whole wheat seasoned breadcrumbs
1 large egg (beaten)
1/4 cup chopped parsley (divided)
3 tbsp fat free milk
3/4 tsp kosher salt
black pepper (to taste)
3/4 cups water
1/2 cup light sour cream
2 tbsp all purpose flour
2 teaspoons tomato paste
2 teaspoons beef Bouillon (I like Better Than Bouillon)
1/2 teaspoon Worcestershire sauce
1/2 teaspoon paprika
8 ounces sliced Cremini mushrooms
1 sprig fresh thyme

Steps:

  • Heat a large nonstick skillet or set the Instant Pot to saute and spray with oil; saute the onions over medium heat until golden, stirring 2 to 3 minutes. Remove and divide in two.
  • In a large bowl, combine half of the sautéed onions with the ground turkey, bread crumbs, egg, 2 tbsp of the parsley, milk, 3/4 tsp salt and black pepper. Gently shape into 20 meatballs.
  • In a blender combine the water, sour cream, flour, tomato paste, boullion, Worcestershire sauce and paprika, blend until smooth.
  • Heat the skillet or Instant Pot back on saute, add the oil and brown half of the meatballs without disturbing (in two batches) about 2 minutes until no longer sticks, turn and brown an additional 2 minutes, set aside on a dish and repeat with remaining meatballs.
  • Place all the meatballs and remaining onion into the Instant pot, Slow Cooker or a large saucepan and pour the sauce over the meatballs along with the thyme and mushrooms.
  • For the Instant Pot:Cook on high pressure 10 minutes. Let the pressure release on it's own. When done, discard thyme, add the chopped parsley and serve over your favorite noodles. *see note above about avoiding burn notice.
  • For the stove top:Add 2 tbsp water, bring to a boil then cook covered on low 20 to 25 minutes. When done, discard thyme, add the chopped parsley and serve over your favorite noodles.

This original recipe came from an A.1. steak sauce recipe my dad used to make for a simple beef stroganoff. I tweaked it a bit to make it a little more healthy with ground turkey. I know A.1. is hardly a traditional stroganoff ingredient, but it really works out and tastes great! NOTE: If you want your stoganoff sauce to be thinner, add chicken stock or water.

1 lb ground turkey breast
1 tablespoon butter
2 tablespoons canola oil, divided
1 large white onion, thinly sliced
1 cup mushroom, thinly sliced, baby bellas recommended
1 tablespoon paprika
1 tablespoon garlic powder
1 teaspoon dried thyme
salt and pepper
1/2 cup A.1. Original Sauce (original or Bold 'n Spicy, I use original)
1/2 cup reduced-fat sour cream
egg noodles, cooked according to package directions

Steps:

  • Preheat a large skillet over medium-high heat. Add 1 tbsp canola oil and butter.
  • Add sliced onions and mushrooms, cook until onions are soft and mushrooms are slightly brown, add salt and pepper, remove from pan and keep warm.
  • Add remaining canola oil and add ground turkey. Season with salt, pepper, paprika, garlic powder and thyme. Cook until turkey is no longer pink. Add A.1. sauce and simmer for 5 minutes.
  • Return onions and mushrooms to the pan and add sour cream. Stir to combine and taste for seasonings, adjust to taste. Serve over egg noodles.
