- Spread cream cheese over tortillas. Layer with spinach and turkey. Roll up tightly; if not serving immediately, cover and refrigerate. To serve, cut rolls crosswise into 1-in. slices.

- Place the turkey in a bowl and drizzle in the soy sauce, sesame oil, rice vinegar and the hot chili oil. Stir to combine and give it a taste. If you'd like a stronger flavor, add a little more of any of the ingredients.
- Next, place the cellophane noodles in a large bowl. Cover them with boiling water and let them sit according to the package directions.
- When they are tender but still have a nice bite, drain and set the noodles aside.
- Soften the rice paper wrappers by placing them one by one into a bowl of warm water and taking them out when they're soft but still hold together.
- To assemble each spring roll, lay a wrapper on a plate. Lay a small line of noodles in the center. Add a small amount of lettuce, turkey, alfalfa sprouts, a few carrot and cucumber strips, and top with a sprinkling of cilantro.
- Fold in the sides of the wrappers and roll it into a tight roll. Repeat to make the rest of the rolls.
- For the dipping sauce: Combine the cranberry sauce, soy sauce and a few dashed chile oil.
- Dip the rolls into the sauce and dig in! Best if eaten within 1 hour of preparing.

- Place turkey on tortillas to within 1/4 inch of edge.
- Spread cream cheese over turkey; sprinkle with pecans.
- Spread each with 2 TBS cranberry sauce.
- Roll up jelly roll style; wrap tightly in plastic wrap. Refrigerate until firm, about 1 hour.
- When ready to serve, cut each roll into 6 pieces.
- In a small bowl combine celery, onions and remaining cranberry sauce. Serve with spirals.

Steps:
- Place turkey steaks on a board and flatten with a rolling pin.
- Spread each steak with tomato puree, then top with a few leaves of basil, a little crushed garlic and salt and pepper.
- Roll up firmly around the filling and secure with a cocktail pick.
- Brush with milk and sprinkle with flour to coat lightly.
- Place the spirals on a foil lined grill pan. Cook under a moderate heat grill for 15-20 minutes, turning them until thoroughly cooked.
- Serve hot, sliced.

CREAM CHEESE AND TURKEY SPIRALS
Steps:
- Place a tortilla on your cutting board. Spread a thin layer of cream cheese all over the tortilla. Sprinkle garlic powder or herb blend over cream cheese. Arrange turkey slices in one layer on top of the cream cheese. Roll tortilla tightly.
- At this point you can cut it into rounds or store it in the fridge until your party.
- If you want to store it, wrap plastic wrap around it tightly. Make sure you cover the ends so the tortilla doesn't dry out and get hard. When you are ready to use it, just unwrap and slice. They can sit in the fridge for about three days before they get soggy. Placing them (wrapped up) in an air-tight storage bag helps keep them fresh.
