4 links Italian sausage, meat removed from casings
4 bone-in, skin-on turkey thighs
2 quarts turkey stock
4 medium carrots, diced
3 white onions, diced
1 celery stalk, diced
1 head garlic, minced
1 bunch fresh sage
1 bunch fresh thyme
Salt and freshly ground black pepper
20 medium Yukon gold potatoes
2 cups grated Gruyere
1 stick (8 tablespoons) unsalted butter
1 baguette, thinly sliced

Steps:

  • Brown the Italian sausage in a large pot over medium-high heat, then remove and reserve. Sear the turkey in the pot until golden brown on both sides, then add the stock, carrots, onions, celery, garlic, sage and thyme. Bring to a boil, then lower to a simmer and cook, uncovered, until the turkey is cooked through and the vegetables are tender, 1 hour 15 minutes to 1 hour 30 minutes. Take the turkey out of the pot and allow to cool slightly.
  • Remove the meat from the bones, then chop into bite-sized pieces. Continue to cook the remaining liquid until further reduced. Season with salt and pepper to taste. Place the turkey, sausage, vegetables and reduced stock in 9-by-13-inch casserole dish.
  • Preheat the oven to 375 degrees F.
  • Fill a large pot with water and boil the potatoes until tender. Crush them with a potato masher, then add the cheese and butter. Place on top of the turkey and vegetable mixture and bake until the casserole is warm throughout and the potatoes have become slightly golden on top, about 30 minutes.
  • Serve with the baguette.

1 yellow onion, chopped
1 clove garlic, minced
2 pounds dark and white meat ground turkey, 85% lean
1 1/2 teaspoons kosher salt

1/2 cup frozen corn, thawed
1/2 cup frozen baby lima beans, thawed
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon Worcestershire sauce

4 cups mashed potatoes
1 cup shredded Monterrey Jack cheese
2 large eggs, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the vegetable oil in a large cast-iron skillet over medium-high heat until very hot. Add the onions and cook until just starting to soften, about 4 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the ground turkey and then sprinkle in the salt, paprika and garlic powder. Cook, breaking up clumps of the turkey with a wooden spoon, until brown, about 6 minutes. Add the gravy, corn, lima beans, parsley, Worcestershire sauce and hot sauce. Reduce the heat to a simmer; simmer for about 3 minutes.
  • While the filling simmers, stir together the potatoes, cheese and eggs in a large bowl, making sure it is thoroughly mixed. Layer the potatoes on top of the filling in the skillet. Bake the shepherd's pie until bubbling and golden brown, 30 to 45 minutes.

2 tablespoons butter, room temperature
¼ cup warm milk
1 tablespoon olive oil
1 onion, chopped
1 pound ground turkey
1 large carrot, shredded

¼ teaspoon dried thyme

Steps:

  • Boil potatoes until tender, 15 to 20 minutes. While potatoes are cooking, gather other ingredients.
  • Mash potatoes with butter and milk. Season with salt and pepper to taste. Set aside.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a skillet over medium heat; stir in onion. Saute onion until it has softened and turned translucent, about 5 minutes. Stir in ground turkey, carrot, mushrooms, parsley, thyme, garlic, and chicken bouillon. Cook and stir until meat is broken up and cooked through. Add salt and pepper to taste. Stir in flour and cook for 1 minute more.

4 potatoes, cut into chunks
½ head cauliflower, separated into florets
2 cups chicken broth
salt and ground black pepper to taste
1 tablespoon olive oil
½ onion, chopped
3 carrots, shredded

2 tablespoons low-sodium Worcestershire sauce

Steps:

  • Place the potatoes and cauliflower into a pot, then pour in the chicken broth. Add water to nearly cover the vegetables; bring to a boil. Reduce heat to low, and simmer until the potatoes and cauliflower are tender, about 20 minutes. Drain the potatoes and cauliflower, but keep about 1/2 cup of the cooking liquid. Separate the cooked potatoes into a large bowl. Transfer the cauliflower into a blender or food processor along with about 1/4 cup of the cooking liquid, and pulse until the cauliflower is thoroughly pureed.   • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x12-inch baking dish with cooking spray.
  • Heat the olive oil in a large skillet over medium heat, and cook the onion and carrots until the onion is translucent, about 5 minutes; stir in the ground turkey, and cook until the meat is no longer pink, breaking it up into small chunks as it cooks. Stir in peas and Worcestershire sauce, then cook until the meat has begun to brown, about 10 more minutes. If the filling mixture starts to look dried out, stir in a few spoonfuls of the cauliflower cooking liquid to keep it moist. Place the filling into the prepared baking dish, then smooth it out into an even layer. Top the filling with the mashed potato and cauliflower mixture, and spread with a fork, leaving little peaks and swirls in the topping.
  • Bake the pie in the preheated oven until the filling is bubbling, about 25 minutes. Turn on the oven's broiler, and broil the pie about 6 inches from the heat source until the mashed topping has browned, about 10 more minutes.

3/4 cup diced onion
2 teaspoons minced garlic

2 cups prepared instant mashed potatoes
1/4 teaspoon paprika

  • In large skillet over medium heat, add the olive oil, ground turkey, diced onions and garlic.

  • Preheat the oven to 375 degrees F and lightly spray two 16-ounce oven-safe ramekins with nonstick cooking spray. Set aside.
  • Heat up the olive oil in a large skillet over medium-high heat. Add the carrots, onion and garlic and cook until softened and fragrant, 5 to 7 minutes.
  • Add in the turkey and peas and stir to combine. Sprinkle the flour over the mixture and stir to incorporate, then stir in the tomato paste. Gently add the chicken stock and Worcestershire sauce. 1 1/2-2 lbs russet potatoes, peeled and cut into chunks
1/2 cup low-fat milk
3 tablespoons butter
1/4 cup light sour cream
salt and pepper
1/4 cup parmesan cheese (to top Pie)
1 tablespoon extra virgin olive oil
2 tablespoons butter (preferrably unsalted)
1 medium onion, chopped
3 -4 carrots, chopped in quarters
3 -4 garlic cloves, minced
1 cup frozen corn
1/2 tablespoon salt
1 teaspoon italian seasoning
1/4 cup ketchup
1 teaspoon pepper
1 (20 ounce) package ground turkey
1/2 tablespoon Worcestershire sauce
1 dash beef broth (about 1/8 Cup)
1/4 cup red wine
3 -4 tablespoons flour (more or less depending how thick you want the sauce)

Steps:

  • Preheat oven to 375 degrees.
  • To make the Mashed Potatoes:.
  • Place potatoes in large pot and cover with water. Bring water to a boil and boil potatoes for about 10-12 minutes. Meanwhile, combine milk, butter, and sour cream in small saucepan and warm on low heat. Potatoes are done when they are fork tender. Drain and return potatoes to pot to dry. Add milk mixture slowly and in batches to determine how creamy you want them. Mash potatoes with milk mixture and add salt and pepper to taste.
  • To make the Turkey Filling:.
  • Heat olive oil and 2 tablespoons of butter in large skillet over medium high heat. Add onion, carrots, garlic, corn, half the salt and italian seasoning. Cook until onions are opaque, about 10 minutes.
  • Add ketchup and cook for another 3-4 minutes.
  • Combine pepper, ground turkey, worcestershire sauce, beef broth, red wine and flour with the vegetable mixture. Cook until the turkey is browned and the sauce begins to thicken, about 5-10 minutes.
  • Place beef filling in 1 quart casserole dish. Top with mashed potatoes but leave about a 1 inch rim so the meat mixture can breath, Top mashed potatoes with parmesan cheese and dot with remaining tablespoons of butter.
  • Place in a 375 degree oven and bake about 35-40 minutes, until the turkey mixture is bubbly and the mashed potatoes are golden brown.

This is the ultimate Thanksgiving/Christmas dinner leftover recipe. The recipe keeps in mind that the ingredients being used are from separate dishes that are *already* seasoned. If you are making either of the potatoes from scratch for the recipe, go ahead and season them as if you were making that dish to serve as a side. The same with the gravy, if it is not homemade roasted turkey gravy, add some more seasoning to it. Of course you do not have to have leftovers to make this, but it is a good way to use up the turkey, mashed potatoes, sweet potatoes and gravy without the dish tasting like leftovers. I have also made it with chicken with excellent results. This is a real family pleaser and our 4 year old actually asks for this for dinner a lot. The original recipe was adapted from Chef Jimmy Bradley of the Red Cat in New York City. It can also be prepared in individual 1 1/2-cup ramekins; check them for doneness after 20 minutes. WINE: A bighearted Chardonnay will echo the texture of the smooth gravy and the soft mashed potato topping. Look for a reasonably priced, fruity wine, such as Australia's 1999 Rosemount or the 1999 Lindemans Bin 65.

2 tablespoons unsalted butter

1 medium onion, finely chopped
1 medium celery rib, finely chopped

4 cups turkey meat (raw or cooked) or 4 cups chicken, diced (raw or cooked)
1 -1 1/2 cup turkey gravy (amount depends on how dry your ingredients are...) or 1 -1 1/2 cup chicken gravy (amount depends on how dry your ingredients are...)
2 tablespoons orange juice
1 tablespoon flat leaf parsley, chopped
2 teaspoons sage, finely chopped
salt
fresh ground pepper
2 cups mashed potatoes
1 cup mashed sweet potatoes
2 tablespoons chives, minced
1 large egg, beaten

Steps:

  • Melt 2 tablespoons of butter in a large skillet and add onion, celery, carrot and garlic. Cook over low heat until softened, about 12 minutes. Stir in turkey or chicken and cook until heated through. Add the gravy and orange juice to the mixture and cook until bubbling. Remove from the heat, stir in the parsley and sage and season with salt and pepper. Transfer the filling to a round, oval or 9-by-12-inch baking dish and let cool.
  • Preheat the oven to 400°. In a bowl, mix both potatoes together and add chives. Season with salt and pepper and beat in the egg. Spread the potatoes over the filling and brush the top with the melted butter.
  • Bake in the upper third of the oven for about 30 minutes, or until the topping is lightly browned and the filling is bubbling. Let the pie stand for about 10 minutes before serving.

4 oz shredded cheddar cheese, divided
2 tablespoons unsalted butter, divided
1 ½ lb ground turkey
1 yellow onion, diced
2 celery stalks, diced
1 large carrot, dicedd
½ teaspoon kosher salt
2 cloves garlic, minced
2 large parsnips, peeledd and diced
½ cup green beans, trimmed and chopped on the bias
2 packets McCormick® Turkey Gravy Mix
1 tablespoon all purpose flour
½ teaspoon freshly ground black pepper
1 teaspoon dried thyme
½ teaspoon dried sage
¾ cup milk
1 cup chicken stock

Steps:

  • Make the mashed potato topping: Add the potatoes to a large stockpot and fill with cold water until the potatoes are covered by about 1 inch. Add 1 tablespoon salt. Bring to a boil over medium heat and cook until the potatoes are fork-tender, 10-12 minutes.
  • Drain the potatoes, then return to the pot. Add the butter, milk, and remaining ½ teaspoon salt, and mash until the potatoes are smooth and creamy. Fold in 2 ounces of cheddar cheese. Set aside.
  • Preheat the oven to 350°F (180°C).
  • Make the filling: Melt 1 tablespoon butter in a large skillet over medium heat. Add the ground turkey and cook for 6-8 minutes, until browned. Remove the turkey from the pan and set aside.
  • Melt the remaining tablespoon of butter in the same skillet. Add the onion, celery, carrot, and ½ teaspoon salt, and cook for 5-6 minutes, until the onion is translucent and the vegetables are beginning to brown. Add the garlic and cook for 1 minute more, until fragrant.
  • Add the parsnips, green beans, and cooked ground turkey and stir to combine.
  • Add the McCormick® Turkey Gravy Mix, flour, pepper, thyme, sage, milk, and chicken stock, and fold into the filling until well incorporated. Bring to a simmer and cook for 3-4 minutes, until the sauce begins to thicken. Remove the pan from the heat and transfer the filling to a 2-quart casserole dish.
  • Spread the potatoes evenly over the filling, smoothing the top. Top with the remaining 2 ounces shredded cheese.
  • Bake the shepherd's pie for 30 minutes, or until bubbling and browned on the top. Let rest for 10 minutes before serving.

1/8 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 teaspoon minced garlic
4 ounces mushrooms, stemmed, wiped clean, and sliced
1/2 teaspoon chopped fresh thyme leave
1 bay leaf
1 tablespoon all-purpose flour
2 teaspoons tomato paste
2 -2 1/2 cups chopped roasted turkey (white and or or dark meat) or 2 -2 1/2 cups shredded roasted turkey (white and or or dark meat)
1 1/4 cups chicken stock or 1 1/4 cups canned chicken broth
1/2 cup green peas
4 cups leftover mashed potatoes
3/4 cup grated sharp cheddar cheese or 3/4 cup cheddar cheese
chopped fresh parsley leaves, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F. Lightly grease a 9-inch square or 2.2 quart baking dish with the butter and set aside.
  • In a large saute pan or skillet, heat the oil over medium-high heat. Add the onions, carrots, Essence, salt, and pepper and cook, stirring, until the onions are soft, about 3 minutes. Add the garlic and cook, stirring, for 20 seconds. Add the mushrooms, thyme, and bay leaf and cook, stirring, until the mushrooms are soft, 3 to 4 minutes. Add the flour and cook, stirring, until thick, about 1 minute. Stir in the tomato paste and cook, stirring, for 1 minute. Add the meat and stir well to combine. Gradually add the stock and then the peas, and bring to a boil. Reduce the heat to medium-low and simmer until the mixture is thickened, 6 to 8 minutes.
  • Remove from the heat and discard the bay leaf. Carefully transfer to the prepared dish and spoon the potatoes over the meat mixture, spreading to the edges. Sprinkle with the cheese and bake until the cheese is bubbly and the potatoes are crisp around the edges, 22 to 25 minutes.
  • Let sit for 10 minutes before serving. Garnish with chopped parsley and serve.
