TURKEY SAUSAGE PATTIES

Turkey Sausage Patties image

Homemade turkey sausage patties are easy to make. You can double the recipe and freeze some sausages for next time. This homemade turkey sausage recipe is a recipe every brunch lover needs.

Provided by The Worktop

Categories     Breakfast     Brunch     Meats

Time 40m

Number Of Ingredients 7

2.2 pounds ground turkey ((I use turkey thigh for the juiciest sausages))
2 tablespoons maple syrup
1 1/2 teaspoons sea salt
1 teaspoon coarse ground black pepper
1/2 teaspoon garlic granules
1 teaspoon dried thyme
1 teaspoon dried sage

Steps:

  • In a large bowl, mix everything together. The best way is to use your hands and really mix it all together (I wear food prep gloves for this step) You can also use your stand mixer with the paddle attachment.
  • There are a few different ways you can do this. I like to use a large cookie scoop / ice cream scoop. I lightly pack the meat into the scoop, release the scoop, then flatten it with my palm. Alternatively, you can just divide the meat into 12 rough balls, and shape each ball into a sausage patty. Lastly, you can also roll out the meat between parchment paper, then cut the sausages with a round cookie cutter / lip of a cup.
  • Make 12 equal sized turkey sausages. I make them about 1/2-inch thick if I am going to cook them straight away, but you can make according to your preference.
  • If you are going to freeze half the batch, make the ones you are going to freeze no thicker than 1/2-inch, if you plan on cooking from frozen. Otherwise, you will need to defrost the sausage patties before cooking.
  • Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through. The most reliable way to to check if a turkey sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage patty should be 165°F / 74°C.
  • If you are cooking from frozen, follow the same instructions, but you will need to slightly increase the cooking time. If the sausages are browned but not cooked through, turn the heat down and finish cooking.

TURKEY SAUSAGE BREAKFAST BURRITOS

Turkey Sausage Breakfast Burritos image

These Turkey Sausage Breakfast Burritos are filling, flavorful, and so easy to make ahead and eat all week!

Provided by Emily Bites

Categories     Breakfast

Time 25m

Number Of Ingredients 13

½ lb (8 oz) uncooked 99% lean ground turkey breast
½ teaspoon salt (divided)
¼ + ⅛ teaspoons black pepper (divided)
⅓ teaspoon ground sage
⅓ teaspoon ground thyme
⅛ teaspoon dried marjoram
⅛ teaspoon crushed red pepper flakes
⅛ teaspoon paprika
4 large eggs
3 oz 50% reduced fat sharp cheddar cheese (divided (I used Cabot))
¼ cup salsa ((I used medium heat, feel free to use hot if you want these spicy!))
1 tablespoon chopped fresh cilantro ((If you don't like cilantro you can omit or substitute green onion))
4 low carb 8-inch tortillas ((I used Tumaro's Low-In-Carb Multi-Grain Wraps))

Steps:

  • Place the ground turkey in a mixing bowl and add ¼ teaspoon of the salt, ¼ teaspoon of the black pepper, the sage, the thyme, the marjoram, the crushed red pepper, and the paprika. Mash/stir together with a fork or your hands until well combined (in this step you added sausage seasonings to the ground turkey).
  • Mist a large skillet with cooking spray and bring over medium heat. Cook the seasoned ground turkey, breaking it up into small chunks, until cooked through. Transfer the cooked turkey into a clean mixing bowl. Wipe out the skillet with a paper towel.
  • Combine the eggs and remaining ¼ teaspoon of salt and 1/8 teaspoon of black pepper and add a splash of water (I usually quickly woosh it under tap water once or twice).Use a whisk to beat the eggs. Mist the skillet with cooking spray and bring over medium heat. Add the beaten eggs and cook, pushing them around with a spatula to scramble, for a few minutes until cooked through. Use the spatula to break the scrambled eggs up into small chunks. Transfer the eggs to the mixing bowl holding the turkey sausage. Add the shredded cheddar, salsa, and cilantro and stir to combine.
  • Lay the tortillas on a clean, dry surface and divide the sausage and egg mixture amongst them (about 2/3 cup of filling on each tortilla). Fold in the edges of a tortilla and roll it up to make a wrap. Repeat with the remaining tortillas.
  • Mist a griddle pan or large skillet with cooking spray and bring to medium heat. Place the rolled burritos onto the hot skillet seam-side-down and cook for 2-3 minutes until the bottoms are golden. Flip the burritos and cook for another 2 minutes until the other side is golden as well.

TURKEY SAUSAGE

Turkey Sausage image

There are lots of turkey sausage recipes here on 'Zaar, I couldn't find any like this. This is the sausage recipe that I used to make when my daughter was little and had severe food allergies. The mixture needs to be refrigerated over night to blend the flavors. I still use it to this day.

JUICY TURKEY BREAKFAST SAUSAGE

Juicy Turkey Breakfast Sausage image

Juicy turkey sausage? Impossible! But it's true - I've worked out a way to add moisture and keep turkey sausage nice and juicy. Try it and see. Just don't use the extra lean ground turkey - it's much too lean. Note: times do not include letting the sausage set overnight.

Provided by dianegrapegrower

Categories     Breakfast

Time 30m

Yield 20 patties

Number Of Ingredients 13

1 1/4 lbs ground turkey
3 slices whole wheat bread, crusts removed
1/2 onion, cut in large chunks
1 teaspoon sage
1 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon celery seed
1/2-1 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/4-1/2 cup chicken broth
optional 1 tsp. salt
olive oil

Steps:

  • Crumble ground turkey into a large mixing bowl.
  • Tear bread into large pieces and place in food processor. Add onions and all seasonings. Pulse until everything is in uniform crumbs. Add chicken broth and pulse until combined. The amount of broth will depend on the dryness of your bread - it should have the consistency of oatmeal. (And yes, it looks pretty disgusting).
  • Add bread mixture to the turkey in the bowl and combine thoroughly (I use my hands for this). Cover and refrigerate overnight to let flavors blend.
  • Heat olive oil in skillet. Shape sausage into 16 patties and fry until cooked through.

TURKEY SAUSAGE PATTIES WITH APPLE

Turkey Sausage Patties with Apple image

Provided by The Real Food Dietitians

Time 20m

Number Of Ingredients 9

1 lb. 90-93% lean ground turkey (may substitute ground chicken)
½ cup finely minced apples (any variety will work)
½ tsp. garlic powder
½ tsp. Italian seasoning or dried sage
½ tsp. paprika
1/4 tsp. crushed fennel (optional; crush lightly using a mortar and pestle)
½ tsp. salt
¼ tsp. black pepper
1-2 Tbsp. cooking fat of choice (such as olive oil or avocado oil)

Steps:

  • Combine turkey (or chicken), diced apple, spices, salt, and pepper in a mixing bowl. Mix thoroughly with a large spoon or your hands.
  • Using wet hands, form meat mixture into 12 small patties (Thin is good because they will shrink and fatten up in the pan a bit).
  • Heat a large skillet over medium-high heat. When the skillet is hot, add oil/fat (about ½ Tbsp. per batch of patties, depending on the size of your pan and whether or not it's non-stick).
  • Add the patties to the pan, being careful not to overcrowd them or it's difficult to flip them and they won't brown as well. Cook for about 4-5 minutes per side until browned and no longer pink in the center.
  • Remove patties to a plate lined with a paper towel and repeat with remaining oil and turkey mixture.
  • Store in a covered container in the refrigerator for up to 4 days - may be frozen for longer storage.
