Steps:
- Preheat oven to 350°. In a large bowl, whisk eggs, 1/4 cup Swiss cheese, Parmesan cheese, milk, garlic, parsley, salt and pepper., In a 10-in. ovenproof skillet, heat oil over medium heat. Add spinach, apricots and green onions; cook and stir until spinach is wilted, 1 minute. Reduce heat; stir in turkey and egg mixture. Sprinkle with remaining Swiss cheese and artichoke hearts., Bake until eggs are completely set, 15-20 minutes. Let stand 5 minutes. Cut into wedges. Garnish with additional green onions if desired.

- Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
- In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2 to 3 minutes until the frittata puffs

- Preheat the oven to 325 degrees F (165 degrees C).
- Crumble sausage into a 12-inch nonstick, oven-proof skillet over medium heat. Cook until browned, about 4 minutes.
- Meanwhile, whisk eggs in a large bowl. Add cream and hot pepper sauce; mix well.
- Add butter to the skillet with browned sausage and melt around the inside rim of the skillet. Add mushrooms, red bell pepper, onion, salt, and pepper. Cook until onion is soft and translucent, about 4 minutes. Turn off heat and stir in spinach. Cook for 1 minute in hot skillet, then sprinkle with Cheddar cheese. Pour egg mixture on top, making sure all the ingredients are submerged.

- Chop the turkey sausage into smaller chunks. In a heated cooking pan at medium heat, cook turkey sausage for 5 minutes or until cooked. Once done, set turkey sausage to the side.
- To the same cooking pan, add 1 tbsp of oil. Add spinach, mushrooms, and minced garlic. Cook until spinach is wilted. Drain and set to the side.
- In a large bowl, add eggs, black pepper, garlic powder, and heavy whipping cream. Whisk until smooth.
- Heat cast iron skillet to low heat. Add butter making sure the sides and bottom of skillet are covered. Add all cooked ingredients back into the skillet. Spread evenly.
