Apricots, Swiss cheese, green onions and veggies combine beautifully in this turkey frittata. You can use different spices to suit your personal taste. —Aysha Schurman, Ammon, Idaho

8 large eggs
3/4 cup shredded Swiss cheese, divided
2 tablespoons grated Parmesan cheese
2 tablespoons 2% milk
1 garlic clove, minced
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1 cup fresh baby spinach
1/3 cup finely chopped dried apricots
2 green onions, chopped
6 ounces thick-sliced deli smoked turkey, chopped
1/4 cup chopped marinated quartered artichoke hearts

Steps:

  • Preheat oven to 350°. In a large bowl, whisk eggs, 1/4 cup Swiss cheese, Parmesan cheese, milk, garlic, parsley, salt and pepper., In a 10-in. ovenproof skillet, heat oil over medium heat. Add spinach, apricots and green onions; cook and stir until spinach is wilted, 1 minute. Reduce heat; stir in turkey and egg mixture. Sprinkle with remaining Swiss cheese and artichoke hearts., Bake until eggs are completely set, 15-20 minutes. Let stand 5 minutes. Cut into wedges. Garnish with additional green onions if desired.

Number Of Ingredients 10

1 tablespoon olive oil
1/2 onion, chopped
1/2 red or green bell pepper, chopped
1 cup boiled potatoes, chopped
1/2 cup leftover cooked chopped turkey
6 eggs, lightly beaten
1/4 cup cream
Salt and pepper
2 tablespoons chopped parsley, basil or cilantro
1/2 cup grated cheddar, Monterey jack or mozzarella

Steps:

  • Preheat the broiler.
  • Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
  • In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2 to 3 minutes until the frittata puffs

2 tablespoons olive oil
6 small red potatoes, sliced
1 cup torn fresh spinach
2 tablespoons sliced green onions
1 teaspoon crushed garlic
salt and pepper to taste
6 eggs
⅓ cup milk
½ cup shredded Cheddar cheese

Steps:

  • Heat olive oil in a medium skillet over medium heat. Place potatoes in the skillet, cover, and cook about 10 minutes, until tender but firm. Mix in spinach, green onions, and garlic. Season with salt and pepper. Continue cooking 1 to 2 minutes, until spinach is wilted.
  • In a medium bowl, beat together eggs and milk. Pour into the skillet over the vegetables. Sprinkle with Cheddar cheese. Reduce heat to low, cover, and cook 5 to 7 minutes, or until eggs are firm.

4 ounces bulk breakfast sausage
8 eggs
2 tablespoons heavy cream
8 drops hot pepper sauce (such as Tabasco®), or more to taste
2 tablespoons butter
1 cup chopped mushrooms
⅔ cup chopped red bell pepper
½ cup chopped onion
salt and ground black pepper to taste
½ cup chopped fresh spinach
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Crumble sausage into a 12-inch nonstick, oven-proof skillet over medium heat. Cook until browned, about 4 minutes.
  • Meanwhile, whisk eggs in a large bowl. Add cream and hot pepper sauce; mix well.
  • Add butter to the skillet with browned sausage and melt around the inside rim of the skillet. Add mushrooms, red bell pepper, onion, salt, and pepper. Cook until onion is soft and translucent, about 4 minutes. Turn off heat and stir in spinach. Cook for 1 minute in hot skillet, then sprinkle with Cheddar cheese. Pour egg mixture on top, making sure all the ingredients are submerged.
  • Place skillet in the preheated oven and bake until eggs are set and no longer jiggle, about 20 minutes. Remove from oven and allow to sit for 1 to 2 minutes, before cutting into serving pieces.
