TURKEY JALAPENO POPPERS
Deliciously easy, creamy, and simple Turkey Jalapeno Poppers. The perfect holiday appetizer.

Steps:
- Preheat oven to 350 degrees.
- Brown ground turkey in a medium skillet over medium heat, season with salt and pepper to taste, drain any fat off, and set aside.
- I have Anolon skilletand I absolutely love them! They are made of heavy duty materials, they heat evenly, and they even have a lifetime warranty
- Bring a big pot of water to a boil over medium-high heat
- Dump jalapenos into the water and boil for 2-3 minutes
- Remove from water, cut tops off, cut in half length-wise (see images) deseed, and set aside
- In a mixing bowl combine cream cheese and browned ground turkey, and stir to combine.
- Spoon cream cheese filling into the jalapenos.
- Wrap each one in turkey bacon, and place on a baking sheet.
- One other trick that I use is I line my baking sheets with a silicone baking mats They make clean up quick and easy.
- Bake at 350 for 12 minutes.
- Turn oven on to broil on high, and broil until bacon is crisp (5 mins)
- Dip in pepper jelly and enjoy!

TURKEY AND QUINOA STUFFED PEPPERS
Steps:
- Preheat the oven to 425 degrees F.
- For the quinoa: Over medium-high heat, bring the broth to a boil in a medium saucepan. As the broth is coming to boil, add the quinoa, then stir and cover. Reduce the heat to a simmer and steam the quinoa until the grains pop, about 10 minutes. Remove from the heat and let stand for 10 minutes. Fluff with a fork.
- For the peppers: Set a large saute pan over medium-high heat. Add a drizzle of olive oil and add the turkey, crushed red pepper flakes and garlic. Sprinkle with salt and pepper. Cook until well browned, 5 to 7 minutes, while stirring with a wooden spoon and breaking up the pieces. Deglaze with the wine. While the turkey is browning, rinse the peppers and pat dry. With the pepper lying down on its side, cut off the top and remove the seeds and membrane. Repeat for the remaining peppers. Leave the stem on the top for presentation. Set aside.
- Once the turkey is browned, shut off the heat and fold in the quinoa, kale and pepitas. Mix to incorporate all ingredients thoroughly. Check for seasoning and adjust with salt and pepper if required.
- In a small mixing bowl, combine the panko and Parmesan. Add a drizzle of olive oil to lightly moisten and season with salt and pepper. Set the peppers on a roasting tray cut-side up and stuff each with about 1/3 cup of filling. Top each pepper half with about 2 tablespoons of panko-Parmesan topping. Cover loosely with foil, place in the center of the oven and bake for 15 minutes. When the peppers are tender and cooked through, remove the foil and turn on the broiler. Cook under the broiler to brown the panko breadcrumbs and crisp up, 1 to 2 minutes. Remove the peppers from the oven and allow to rest before serving.
- To present, place 1/4 cup of Roasted Tomatillo Avocado Sauce on a plate and place the roasted, stuffed pepper halves in the middle of sauce. Garnish with parsley sprigs.
- Preheat the oven to 350 degrees F.
- Place the tomatillos onto a baking sheet. Toss the tomatillos with olive oil. Season with salt and pepper and place into the oven. Roast until nicely charred, about 10 minutes. Remove from the oven and set aside to cool.
- Combine the tomatillos, 1/4 cup water, cumin, 1 teaspoon salt, avocado, garlic, jalapenos, onions, lime juice and cilantro in a blender and puree until completely smooth. Place in the refrigerator and allow the sauce to settle before serving, so it is smooth.

- Cut jalapenos in half lengthwise, leaving stems intact; discard seeds. Set aside. In a small nonstick skillet over medium heat, cook turkey and onion until meat is no longer pink; drain. , In a small bowl, combine the cream cheese, 1/3 cup cheese, cilantro, chili powder, garlic powder, cumin, salt and pepper. Stir in turkey mixture. Spoon generously into pepper halves. , Place in a 15x10x1-in. baking pan coated with cooking spray; sprinkle with remaining cheese. Bake, uncovered, at 350° for 20 minutes for spicy flavor, 30 minutes for medium and 40 minutes for mild.

CHICKEN OR TURKEY POPOVERS!
This delicious recipe is a great use for Thanksgiving leftovers or just plain leftover chicken! My kids love these, and all of my friends beg me for the recipe! The crescent rolls make a more buttery popover, the hand-made dough is thicker in texture.

- Preheat oven to 400 degrees.
- For the filling mix the turkey or chicken, cheese, mushrooms, green onion, mayonnaise, Salt, and Pepper until well blended If Using Crescent Rolls: Take dough out of tube.
- Flatten each triangle as much as possible, then spoon filling into center and fold over corners.
- Now skip to step 12
- Dough: Sift together the flour, baking powder and salt, then add the oil and cut it in until mixture is like a coarse meal.
- Add the milk all at once and stir until it forms a soft ball.
- Turn the dough out on a floured board and knead lightly 20-25 times.
- Roll the dough out until it is 1/8 to 1/4 inch thick.
- Cut into 4-inch squares or rounds and place about 2 1/2 T.
- of the filling in the center of each.
- Fold each square or round over and seal (a little water to moisten helps here).
- Place on ungreased cookie sheet and bake 10 to 15 minutes, or until turnovers are light brown at the edges.

Steps:
- 1. Cut stems off of peppers and cut them all in half longways. Remove the seeds and membranes from peppers.
- 2. Mix cheddar cheese with cream cheese. Fill each pepper with the cream cheese mixture.
- 3. Wrap 1/2 slice bacon around each pepper half. Place on a foiled (cooking spray such as Pam) lined baking sheet.
- 4. Place in a 450° F (230° C). oven for 10-15 minutes or until bacon is fully cooked.
- 5. Remove and serve when cool enough to safely eat.
