SOUTHERN SMOTHERED TURKEY NECKS

This savory and delicious recipe is for all my love bugs who gave up pork! Made in the Instant Pot for a quick dinner. Serve over rice, mashed potatoes, whatever you'd like!

4 lbs turkey necks (regular, not smoked)
2 tsp seasoning salt
1/2 tsp kosher salt
1/2 tsp cayenne pepper
1 1/2 tsp dried thyme
2 tsp coarse black pepper
2 large onions (chopped)
3 stalks celery (chopped)
5 cloves garlic (chopped)
2 tbsp vegetable oil
(3) 0.87 packages of brown gravy mix (I used McCormicks)
3 cups chicken or turkey broth

Steps:

  • Make sure that the turkey necks are nice and clean, then place them into a large bowl.
  • Combine the seasoning salt, kosher salt, black pepper, cayenne pepper, and dried thyme together in a large bowl. Then sprinkle all over the turkey necks. Set the turkey necks to the side.
  • Drizzle 2 tbsp of vegetable into a large pan, then place over medium heat.
  • Once the oil is nice and hot, add in the onions and celery, and cook until they have a little color to them. Now toss in the garlic, and cook for 1 minutes. Turn the heat off.
  • Place all of the turkey necks into to the instant pot ( or whatever pressure cooker that you are using). Then add in the onions, celery, and garlic.
  • Now sprinkle in the packages of gravy mix, and pour in the broth.
  • Put the lid top on the instant pot, make sure it is sealed, and set it on high for 55 minutes.
  • Once done, carefully remove the steam ( as directed), then stir the southern smothered turkey necks.
  • Dish out the turkey necks, and serve over rice or potatoes.
  • Serve & Enjoy!

2 lb turkey necks
2 medium onions, peeled and quartered
2 medium carrots, scrubbed and cut into 1 inch pieces
2 large stalks celery, cut into 1 inch pieces
2 tsp pepper corns
2 to 4 bay leaves, lightly crushed
2 tsp salt
water to cover all ingredients
2 Tbsp olive oil
3 clove garlic, thinly sliced or shaved
1 large leek, sliced and well washed
12 large mushrooms
2/3 c brown rice
1/3 c wild rice
salt and pepper

Steps:

  • 1. In a large soup pot, put turkey necks, onions, carrots, celery, pepper corns, bay leaves, and salt. Pour water into the pot until all ingredients are covered.
  • 2. Bring the mixture to a boil and then either simmer on stop of the stove or put a 350 degree oven. Simmer for 3 to 4 hours or until the broth is well flavored.
  • 3. Remove the turkey necks from the broth. When they are cool enough to handle, remove the meat from the bones and set aside. Discard the bones and any fatty or tough bits.
  • 4. Pour the broth through a strainer and set aside. Discard the onions, celery, carrots, peppercorns, and bay leaf.
  • 5. In the now empty soup pot, heat olive oil and saute the shaved garlic leeks and mushroom until wilted.
  • 6. Add the rice, turkey meat and broth to the leeks and mushrooms. Bring to a simmer and continue to cook on top of the stove or place in a 350 degree oven for 1 1/2 hours or until the rice is fully cooked.
  • 7. Adjust the taste with salt and pepper.

Steps:

  • Heat oil in a large stock pot or Dutch oven over medium heat. Add leeks, carrots, garlic, and celery and saute 4 minutes, until soft. Add turkey, bay leaves, thyme, salt, and black pepper and stir to mix well. Add chicken broth and bring mixture to a boil. Reduce heat to medium-low, partially cover and simmer 10 minutes.
  • Return mixture to a boil and add egg noodles. Cook 10 minutes, until egg noodles are just tender. Stir in peas and cook until peas are just heated through, about 1 minute.
  • Remove from heat, discard bay leaves and stir in parsley.

1 large onion, sliced
1 large green bell pepper, chopped
2 cups rice
4 cups stock

Steps:

  • In a large pot cover turkey necks with water. Add salt and pepper to taste,. Add onion and simmer about an hour and a half.
  • Remove turkey and reserve 4 cups of the stock. If you do not have enough stock, add water or chicken stock.
  • Put rice in a large casserole dish cover with the stock and add the green pepper; give a stir and then lay turkey necks on top.
  • Bake at 375 degrees for one hour.

If you love Jamaican oxtail then you will definitely enjoy this recipe. I'm talking pieces of turkey neck that are generously seasoned, seared to lock in that flavour then cooked in the slow cooker for several hours until a rich gravy is formed.

2 lb turkey neck ((900g) chopped into small pieces)
1 tbsp browning sauce ((15g)(only used this amount if using my homemade version, see notes))
2 tbsp all purpose seasoning ((30g) see notes for the link)
1 tsp black pepper ((5g))
½ tsp ginger ((3g))
½ tsp paprika ((3g) optional)
½ tsp onion powder ((3g) optional)
1 large onion
4 garlic cloves (minced)
1 large carrot (sliced)
1 cho cho (christophine) (chopped very small)
2 tbsp tomato paste ((30g))
6 sprigs of thyme (tied into a bundle)
2 tbsp browning sauce ((30g) only add more if using my homemade version)
1 tbsp pimento berries ((15g))
1 tsp hot sauce ((5g))
3 cups water or turkey/chicken stock ((700ml) use hot water)
1 cup butter beans (dried (or 1 15oz can, drained) cannellini beans works too.)
3 tbsp olive oil ((45g))
additional pink salt if needed
2 tbsp tapioca starch ((30g))
2 tbsp warm water ((30ml))

Steps:

  • Wash the meat as per Caribbean custom (see notes section) and dry it off completely.
  • In a large bowl, add the turkey neck, all purpose seasoning, black pepper, ginger, paprika and onion powder/granules (if you are using) and browning sauce..
  • Use your hands to thoroughly coat each piece of turkey neck.
  • Now fold in the onion, garlic, pimento and carrots.
  • Wrap the bowl in saran (cling film) and refrigerate overnight or for 3 hours.
  • On medium heat, add oil to your skillet, scrap the onions, carrots etc... off the meat and proceed to sear and seal the meat (this will take about 10 minutes or so).
  • Add the ingredients that were in the bowl (onion, garlic, carrots and pimento) and cook the onions until they are soft.
  • Transfer everything from the skillet into your crockpot.
  • Pour in your stock/water Stir in the tomato, hot sauce, another 2 tbsp of browning (only do this if you are using my homemade recipe), tie the thyme leaves into a bundle and add those and dried butter beans if you are using them (canned beans can be added 45 minutes before finishing time)
  • Place the lid on your crockpot and set on high for 4 hours.
  • 45 minutes before finishing add the canned butter beans, cho cho and the slurry.
  • Do a taste test/adjust for seasoning if needed.
  • Remove the thyme stems prior to serving

12 cups chicken or turkey broth
3 tablespoons olive oil
Turkey neck, gizzard, and heart
2 turkey wings
1 onion, minced
1-inch piece of ginger, peeled and minced
1 carrot, minced
1 rib celery, minced
3 cloves garlic, smashed
2 tablespoons sherry vinegar
2 tablespoons soy sauce, divided
1 cup sweet potato, diced
1 cup butternut squash, diced
1 cup radish, diced
1 sprig rosemary
1 sprig thyme
1 cup cauliflower, diced
1 cup cooked leftover turkey, cubed
Parsley, for garnish
3/4 pound Yukon gold potatoes, baked, see step 3 for baking instructions
olive oil
salt
black pepper
1 large egg
1/2 teaspoon baking powder
1/2 cup flour, divided, plus more for rolling
2 tablespoons Gruyère, finely grated

Steps:

  • For the soup: Bring the broth to a simmer in a large stockpot. Heat the olive oil over medium-high heat in a medium stockpot. Add the turkey neck, gizzard, heart, and wings and brown. Add the onion, ginger, carrots, celery, and garlic and cook until aromatic, 1 minute. Add sherry vinegar and cook until almost dry.
  • Ladle the broth over the vegetable/turkey mixture and lower heat to allow the stock to simmer for 30 minutes.
  • For the dumplings: Preheat oven to 375 degrees F. Lightly coat the potatoes with oil, sprinkle with salt and pepper, then wrap in aluminum foil. Bake until tender, about 90 minutes. Peel the baked potatoes, then pass through a ricer into a bowl. Beat the egg, make a well in the potatoes, and gradually incorporate. Add the baking powder and half of the flour and continue to gently mix until the flour is absorbed and the dough comes together. Cover bowl with a kitchen towel and let rest for 10 minutes.
  • While the dumpling dough is resting, strain the stock into a separate stockpot and bring back to a simmer. Add half of the soy sauce, a couple pinches of salt, sweet potatoes, butternut squash, radish, rosemary, and thyme; simmer 10-12 minutes.
  • While the soup is simmering, fold in the remaining flour and Gruyère to the dumpling dough; rest the dough again for one minute. Add the cauliflower, leftover turkey, remaining soy sauce, and a pinch of salt to the simmering soup.
  • Turn the dough onto a floured work surface and roll out to a rectangle about ¼-inch thick; cut into rough squares. Place dumplings into the simmering broth to cook for 3 minutes (when they're fully cooked, they'll rise to the surface). Adjust seasoning for salt, garnish with parsley, and serve.
