3 tablespoons unsalted butter
Pinch baking soda
1/2 onion, chopped fine
Salt and pepper
1 garlic clove, minced
1 teaspoon minced fresh thyme
2 tablespoons Worcestershire sauce
3 tablespoons quick oats
2 teaspoons cornstarch
2 large egg yolks
2 tablespoons Dijon mustard
2 pounds 85 or 93 percent lean ground turkey
1 ounce Parmesan cheese, grated (1/2 cup)
1/3 cup chopped fresh parsley
Glaze
1 cup ketchup
1/4 cup packed brown sugar
2 1/2 teaspoons cider vinegar
1/2 teaspoon hot sauce

Steps:

  • Do not use 99 percent lean ground turkey in this recipe; it will make a dry meatloaf. Three tablespoons of rolled oats, chopped fine, can be substituted for the quick oats; do not use steel-cut oats. 1. FOR THE MEATLOAF: Adjust oven rack to upper-middle position and heat oven to 350 degrees. Line wire rack with aluminum foil and set in rimmed baking sheet. Melt butter in 10-inch skillet over low heat. Stir baking soda into melted butter. Add onion and 1/4 teaspoon salt, increase heat to medium, and cook, stirring frequently, until onion is softened and beginning to brown, 3 to 4 minutes. Add garlic and thyme and cook until fragrant, about 1 minute. Stir in Worcestershire and continue to cook until slightly reduced, about 1 minute longer. Transfer onion mixture to large bowl and set aside. Combine oats, cornstarch, 3/4 teaspoon salt, and 1/2 teaspoon pepper in second bowl. 2. FOR THE GLAZE: Whisk all ingredients in saucepan until sugar dissolves. Bring mixture to simmer over medium heat and cook until slightly thickened, about 5 minutes; set aside. 3. Stir egg yolks and mustard into cooled onion mixture until well combined. Add turkey, Parmesan, parsley, and oat mixture; using your hands, mix until well combined. Transfer turkey mixture to center of prepared rack. Using your wet hands, shape into 9 by 5-inch loaf. Using pastry brush, spread half of glaze evenly over top and sides of meatloaf. Bake meatloaf for 40 minutes. 4. Brush remaining glaze onto top and sides of meatloaf and continue to bake until meatloaf registers 160 degrees, 35 to 40 minutes longer. Let meatloaf cool for 20 minutes before slicing and serving.

Steps:

The original recipe for this came from Joan Lunden's Healthy Cooking. I've changed a couple things to our tastes. This is a very moist,delicious meat loaf. Its my favorite. I leave the topping off as my family doesn't care for it.

1/3 cup oatmeal
1/3 cup nonfat milk
1 1/4 lbs ground turkey
1 egg white, lightly beaten
1/2 cup chopped onion
1 garlic clove, minced
1/2 green bell pepper, finely chopped (or 1/2 red bell pepper)
3 tablespoons ketchup
1/2 teaspoon oregano
1/2 teaspoon cumin (to taste)
salt and pepper
3 tablespoons brown sugar
1/4 cup ketchup
1 teaspoon dry mustard

Steps:

  • Preheat oven to 350 degrees.
  • Place oatmeal, milk and turkey in a large bowl. Mix well.
  • Add egg white, onion, garlic, bell pepper ( I use both kinds), ketchup, oregano, cumin and salt and pepper.
  • Mix well.
  • Place mixture in a 9 x 5 loaf pan. Press into pan and smooth the top.
  • Bake in the preheated oven for 40 minutes.
  • While it is baking, mix topping.
  • In a small bowl, stir together the brown sugar, ketchup and dry mustard.
  • Remove the meatloaf from the oven after 40 minutes.
  • Drain off some of the liquid that has accumulated. You can save it to use as a gravy if you wish.
  • Spread topping over the meatloaf. Bake for an additional 20 minutes or until done.
  • Let stand 5 minutes before slicing.

Turkey and cranberries is a match made in heaven -- why wait for Thanksgiving to enjoy it? This healthy take on meatloaf pairs the two in an inspired way: Turkey lightens up the traditional ground beef base and antioxidant-rich cranberries are the centerpiece of a tangy glaze.

1 cup fresh or frozen cranberries, thawed
2 tablespoons ketchup
1 tablespoon honey
1 tablespoon sriracha
2 1/2 teaspoons Dijon mustard
2 sprigs fresh rosemary, leaves finely chopped (2 tablespoons), plus more sprigs for garnish
Kosher salt and freshly ground black pepper
1 small carrot
1 small onion
1 pound 90 percent lean ground beef
8 ounces 85 percent lean ground turkey
1 large egg
1/2 cup instant barley
2 teaspoons Worcestershire sauce
Freshly ground black pepper

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
  • Put the cranberries, ketchup, honey, sriracha, 1/2 cup water and 1/2 teaspoon of the mustard in a small saucepan and stir to combine. Heat over medium-high heat until the mixture starts to bubble, then reduce to a simmer and cook, stirring occasionally, until the mixture thickens and the cranberries soften, about 10 minutes. Use a potato masher to crush the cranberries until mostly smooth. Add the rosemary and 1/4 teaspoon salt and set aside to cool slightly.
  • Grate the carrot and onion on the small shredding side of a box grater into a large bowl. (This will save any onion liquid, which will help keep the meatloaf moist.) Add the beef, turkey, egg, barley, Worcestershire, remaining 2 teaspoons of the mustard, 1 teaspoon salt and several grinds of pepper. Use your hands to mix everything together until well combined.
  • Transfer the mixture to the prepared baking sheet and shape into a 9-by-4-inch loaf using your hands. Brush the meatloaf on all sides with half of the cranberry glaze. Bake until the glaze starts to adhere and dry slightly, about 15 minutes. Brush the meatloaf on all sides with the remaining glaze and bake until a thermometer inserted into the center of the meatloaf registers 155 degrees F, 30 to 35 minutes. Garnish with rosemary sprigs before serving.

2 teaspoons vegetable oil (I use canola)
1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/2 teaspoon Dijon mustard
2 teaspoons Worcestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 cup milk or 1/2 cup plain yogurt
2 lbs ground meat (can be a mixture)
2/3 cup saltine crackers, crushed or 2/3 cup oatmeal
1/3 cup parsley, fresh minced
6 -8 ounces bacon, thin sliced (8-12 slices)
1/2 cup ketchup or 1/2 cup chili sauce
4 tablespoons brown sugar
4 teaspoons cider vinegar or 4 teaspoons white vinegar

Steps:

  • Glaze: Mix all ingredients and set aside.
  • Meat loaf:.
  • Heat oven to 350°F.
  • Heat oil in medium skillet and sauté onion and garlic about 5 minutes. Set aside to cool.
  • Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce and milk.
  • Add egg mixture to meat in large bowl, along with crackers, parsley and cooked onion and garlic.
  • Mix until mixture does not stick to the bowl, if mixture sticks to bowl add milk by tablespoons until it does not stick.
  • Shape into loaf.
  • Place on foil lined pan, for easy clean-up.
  • Brush with half the glaze.
  • Arrange bacon slices crosswise over the top of loaf overlapping, tucking in bacon ends under loaf.
  • Bake until bacon is crisp and internal temperature registers 160°F, about 1 hour.
  • Cool at least 20 minutes.
  • Simmer remaining glaze over medium heat until slightly thickened.
  • Slice meatloaf and serve with extra glaze.

Steps:

  • Preheat oven to 350.
  • Mix ground beef, onion, salt, pepper and garlic powder in a bowl.
  • Mix in bread, milk, egg, 1 tbsp mustard, and 1/4 cup ketchup.
  • Press mixture into a loaf and put in baking dish.
  • In a small bowl, stir together 1 tbsp mustard, 1/4 cup ketchup and 2 tbsp brown sugar. Pour on top of the meat loaf within the last 20-30 minutes of cooking.
  • Bake for about an hour until it's cooked through.

For a while now a long while I have wanted meatloaf--ketchup glazed meatloaf, but not a dried dense overcooked one. These days we eat less red meat, but once in a while you need to feed your soul. This uses low sodium saltine crackers soaked with the milk so it is a moist light loaf, with the egg whites lightly beaten. Also cooked on broiler pan from toaster oven that died--kept the pan so fat drained away.

1 1/2 lbs meatloaf mixture (veal, beef, pork)
1/2 cup low-sodium crackers, crushed this was about 8 to 10
1 small yellow onion, finely chopped
1/2 teaspoon sea salt
1/4 teaspoon black pepper
2 eggs, whited lightly beaten
1/2 cup ketchup
1/3 cup brown sugar

Steps:

  • Preheat oven to 350°F.
  • In large bowl mix crackers with milk. Let this sit a couple of minutes and then mix the rest in and shape into a loaf.
  • Spray the rack or broiler pan with spray. You want to drain away the fat.
  • Bake 1 1/4 hrs.
  • In small bowl combine the glaze ingredients. I put it on after the meatloaf browns, then again right before finishing.

  • Preheat the oven to 350 degrees. Line a baking sheet with tin foil then place a wire rack on top. Fold a piece of tin foil into a 10 x 6 inch rectangle and place on top of the wire rack; set aside.
  • Chop some leftover rustic bread into cubes (I used roasted garlic bread) making sure to slice the bottom of the loaf off first (it's too hard for breadcrumbs). Once the bread is in cubes, place into a food processor, and pulse until you have fine bread crumbs.
  • Heat the olive oil in a skillet over medium heat. Add the onion; cover and cook, stirring occasionally, until the onion has softened; about 5-7 minutes. Add the minced garlic and cook, stirring constantly, for 1 minute. Remove from the heat and set aside to cool.
  • Whisk together the milk, egg, thyme, mustard, Worcestershire sauce, hot sauce, sea salt, and freshly cracked pepper, to taste in a small bowl. In another large bowl, mix the turkey, bread crumbs, parsley, cooked onion mixture, and egg mixture together with your hands until uniformly combined. Press the mixture together into a compact mass, then turn it out onto the foil rectangle on top of the wire rack. Using your hands, press the meat into an evenly thick loaf about 2 inches tall and 1 inch smaller than the foil on all sides.
