TURKEY FIESTA ENCHILADA CASSEROLE
I came up with this when I had some left over turkey to use. It can easily be made with chicken or any other meat you like. Serve it up with some rice and beans and some condiments (salsa, sliced avocado, and sour cream). I hope you like it.

Steps:
- 1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper and saute until onion is translucent (approx. 8-10 min.). Add the olives, tomatoes, and corn and heat until warm. Remove from heat and set aside.
- 2. Heat vegetable oil in a small skillet. In a medium pot, heat the enchilada sauce. Using a pair of tongs, place a corn tortilla (one at a time) in the oil allowing it to slightly cook (approx. 20-30 sec.). Flip the tortilla over and repeat. Remove the tortilla and dunk it in the warm enchilada sauce to coat. Place the tortilla on the bottom of a 13x9 casserole dish or pan. Continue this until you have covered the bottom of the pan (approx. 6 tortillas) You will overlap the tortilla a little doing this.
- 3. Spread half of the vegetable mixture on top of the tortillas. Next, sprinkle half of the shredded turkey on top of the vegetables. Spoon some of the enchilada sauce on top of the turkey (approx. 1/2 c.). Lastly, sprinkle one third of the shredded cheese on top of the sauce. Put another layer of tortillas as described in step 2 on top. Repeat this step.
- 4. Place the remaining enchilada sauce or just enough to cover the top of the tortillas and sprinkle with the last one third of cheese. Cover with foil. Bake at 350 for 30 minutes. Remove foil and bake for an additional 5-10 minutes or until bubbly.
TEX-MEX FIESTA CASSEROLE
So far this is my favorite recipe that I use. It is from Joanna Lund. I make this at least once a month. It has a great taste and the portion size is plentiful. Per serving is 260 calories. The diabetic exchanges per serving are: 2 1/2 protein, 2 vegetable, 1 starch. You won't be sorry for trying it. My 3 year old son eats it too. You won't miss the fat/calories.

Steps:
- Preheat oven to 375 degrees.
- Spray an 8-by-8-inch baking dish with cooking spray.
- In a large skillet sprayed with cooking spray, brown meat, garlic, onion and green pepper.
- Add salsa, chili seasoning, tomato sauce and ketchup.
- Mix well to combine.
- Stir in corn, rice and cheddar cheese.
- Pour mixture into prepared baking dish.
- Bake for 20 minutes.
- Place baking dish on a wire rack and let set for 5 minutes.
- Divide into 6 servings.
- HINT: 1 1/3 cups uncooked rice usually cooks to about 2 cups.

TURKEY FIESTA CASSEROLE
Turkey Fiesta Casserole is a great way to use up cooked turkey (or chicken). This easy Mexican-style dish has turkey, corn chips, refried beans, cheese & salsa!

Steps:
- Preheat oven to 400° F. Spray a 2.5 quart baking dish with non-stick cooking spray.
- Spread crushed corn chips on the bottom of the greased dish. Cook refried beans in a saucepan until smooth/heated through. If really thick, add a Tablespoon of water. Once heated through, remove pan from heat. Immediately add 1 cup of grated jack cheese and salsa. NOTE: Remember to only use 1 cup of cheese and reserve the rest for later!) Stir to combine; spoon and spread bean mixture over tortilla chips. Place the shredded turkey in a bowl, and add taco seasoning (or Mexican spice mix). Stir to combine. Distribute seasoned turkey over refried bean layer. Sprinkle reserved jack cheese over turkey, and then sprinkle with sliced green onions.
- Bake casserole uncovered, on the middle shelf in preheated 400° F oven. Bake for 25 minutes OR until the cheese on top is completely melted. Remove from oven. and immediately sprinkle chopped tomatoes over the top. Let the HOT casserole sit for just a couple minutes before serving. When ready to serve, garnish each portion with a dollop of sour cream and/or chopped cilantro, if desired. Enjoy!

FIESTA CORN CASSEROLE
Mexican food is a family favorite so I'm always trying to come up with new Tex-Mex ideas. Just using what I had on hand resulted in this casserole. It was super simple to make and everybody loved it.

Steps:
- 1. After browning turkey sausage, drain any excess grease if necessary. In a 13"x9" casserole dish, layer ingredients beginning with uncooked elbow noodles. Next add sausage, then corn and onion.
- 2. Stir together tomatoes and salsa. Pour over other ingredients in the pan.
- 3. Cover and bake at 350 degrees for 50 minutes.
- 4. Remove from oven. Uncover and sprinkle tortilla chips over casserole. Cover chips with cheese. Return to oven and bake uncovered for an additional 5 to 10 minutes.
- 5. Note: A four cheese mexican blend would be good in this casserole also.
FIESTA TACO CASSEROLE
This is from my beloved Betty Crocker cookbook, and it is such a favorite that I want to share it with everybody! It's also a GREAT use for those tortilla chip bits at the bottom of the bag! I've "healthed it up" a bit, but you would never guess from the flavor and the servings are huge! The cookbook says this is 345 cals per serving, 13 g fat.

- Pre-heat oven to 350.
- Cook turkey over medium heat 8-10 minutes, until no longer pink. Drain if necessary. Stir in beans and salsa and heat to boiling.
- Place tortilla chips in the bottom of an ungreased 8x8 casserole. Top with turkey/bean mixture. Spread with sour cream, then top with onions, tomatoes, and cheese.
- Bake uncovered 25 minutes or until hot and bubbly.
- Enjoy!
