HOMEMADE BURGERS WITH SWEET POTATO WEDGES
Use lean mince and fresh chilli for a healthy and flavoursome patty and serve with paprika-spiced sweet potato chips

- Heat the oil in a frying pan and fry the onion for about 5 mins or until soft. Leave to cool slightly. When cool, put the onion in a large bowl with the mince, egg, bashed crackers, chilli, garlic, ketchup and brown sauce, and mix well to combine. Divide the mince into 6, roll into balls and flatten each into a nice fat burger.
- Put the flour on a plate, dab each burger to the flour on both sides, then transfer to a baking tray. Wrap with cling film and pop in the fridge for a couple of hours.
- Heat oven to 200C/180C fan/gas 6. To make the wedges, put the sweet potato on a baking tray and drizzle with olive oil. Sprinkle with paprika, season, then give them a good shake or shuffle around with your hands to make sure they're well coated. Roast for 30-40 mins depending on how crisp you like them. Make sure you give them a good shake a couple of times to ensure they cook evenly.
- When the wedges have been cooking for 10 mins, drizzle the burgers with a little olive oil and put them in the oven to cook with the wedges for the remaining 20-30 mins, flipping them halfway. 5 Serve the burgers in the rolls with your choice of toppings, and a good helping of wedges on the side.

- Heat oven to 200C/180C fan/gas 6. Put the turkey mince in a large bowl, with the spring onions, cheddar and some seasoning. Mix well, then shape into 4 even-sized burgers. Chill for 15 mins.
- Put the sweet potato chips on a large non-stick baking tray, and toss in 2 tbsp of the oil and some salt. Cook in the oven for 30 mins, turning halfway through.
- Heat the remaining oil in a large frying pan over a medium heat and cook the burgers for 10 mins until golden. Turn over and repeat for the other side until they are cooked through. Split the rolls, place a burger into each with some sliced cucumber and a dollop of ketchup, and serve alongside the sweet potato chips and salad, if you like.

- Mix first 7 ingredients just until blended; shape into 4 (1/2-inch-thick) patties.
- Cook in covered nonstick skillet on medium heat 4 min. on each side or until done (165°F).
- Mix mayo and sour cream until blended; spread onto cut sides of buns.
- Fill with lettuce, tomatoes and burgers.

- Heat the oil in a frying pan over a medium heat. Add the onion and bacon and cook, stirring, for 5 minutes, until the onion has softened and the bacon is golden. Add the garlic, fry for 1 minute, then tip into a large bowl and cool slightly.
- Put the bread and parsley in a food processor and whizz to make herbed crumbs. Add to the cooled onion mixture with the turkey and apricots. Season, then mix together well with your hands. Shape into 4 burgers, cover and chill for 20 minutes.
- Meanwhile, make the sweet potato wedges. Preheat the oven to 200°C/fan180°C/gas 6. Cut the sweet potatoes into wedges and put into a large roasting tin. Add the oil, season with sea salt and black pepper, and toss together. Roast for 35-40 minutes, turning halfway, until tender and golden.
- About 20 minutes before the potato wedges are ready, cook the burgers. Heat a griddle or large frying pan over a medium-high heat, add the burgers and cook for 7-8 minutes each side or until charred and cooked through. Set aside to rest for 5 minutes. Halve the burger buns, then pop them on the griddle or frying pan, cut-side down (in batches, if necessary) to toast lightly.
