TURKEY, KALE AND OAT MEATBALLS WITH QUICK TOMATO SAUCE

Turkey, Kale and Oat Meatballs with Quick Tomato Sauce image

A full bunch of vitamin-rich kale gives these turkey meatballs their vibrant green color. Rolled oats are used as a binder in place of breadcrumbs and add an extra bit of heart-healthy fiber.

Provided by Food Network Kitchen

Time 1h45m

Yield Serves 6

Number Of Ingredients 15

1/2 cup quick-cooking rolled oats
6 ounces kale, stems removed and leaves roughly chopped (about 4 packed cups)
6 ounces kale, stems removed and leaves roughly chopped (about 4 packed cups)
4 cloves garlic, finely minced
1 large yellow onion, roughly chopped
1 large egg
1/2 cup grated Parmesan
1/4 cup skim milk
Kosher salt and freshly ground black pepper
1 pound 99 percent fat-free ground turkey
2 tablespoons extra-virgin olive oil
One 28-ounce can no-salt-added crushed tomatoes
2 sprigs oregano
Pinch of crushed red pepper flakes
12 ounces whole-wheat angel hair pasta

Steps:

  • Pulse the oats in a food processor until coarsely ground. Add the kale, 1 teaspoon of the minced garlic and 1/4 cup of the chopped onion, and pulse until finely chopped and the texture is crumbly. Add the egg, 2 tablespoons of the Parmesan, milk, 3/4 teaspoon salt and 1/4 teaspoon pepper, and pulse until just combined. Transfer the mixture to a large mixing bowl, add the turkey and mix with your hands until well combined. Cover with plastic wrap, and refrigerate for 30 minutes.
  • Meanwhile, bring a large pot of water to a boil.
  • Heat the oil in a large, straight-sided skillet or Dutch oven over medium-high heat. Add the remaining onions and 1/4 teaspoon salt, and cook, stirring occasionally, until softened and lightly browned in spots, 6 to 8 minutes. Add the remaining garlic, and cook until softened, stirring constantly, about 30 seconds. Add the tomatoes, 1 1/2 cups water, 2 tablespoons of the remaining Parmesan, oregano, 1 teaspoon salt and the red pepper flakes. Stir to combine, and bring to a simmer. Cover, reduce the heat and simmer for 10 minutes.
  • Meanwhile, remove the turkey and kale mixture from the refrigerator. Shape level tablespoonfuls into round meatballs (about 36), and place on a rimmed baking sheet.
  • Remove the lid from the sauce. Use a metal spatula or 2 spoons to add the meatballs, one at a time, to the simmering sauce in a single layer. Cook, covered, until the meatballs are cooked through, about 15 minutes. Turn off the heat, and let the mixture sit, covered, for 5 minutes. Discard the oregano.
  • Meanwhile, cook the pasta in the boiling water according to package directions. Drain well.
  • To serve, divide the pasta among 6 plates or bowls. Top each serving with 7 meatballs and 1/2 cup tomato sauce. Sprinkle with the remaining Parmesan.

TURKEY MEATBALLS IN TOMATO SAUCE

Turkey meatballs in tomato sauce image

Nigella's turkey meatballs are light and succulent, as well as being lower in fat. Make a batch - half for tea and half to be frozen for future outings.

Provided by Nigella Lawson

Categories     Main course

Yield Serves 4-8

Number Of Ingredients 14

1 onion, peeled
1 stick celery
2 tbsp garlic oil
1 tsp dried thyme
2 x 400g/14oz tins chopped tomatoes, plus approximately 2 full cans of water
1 tsp sugar
1 tsp sea salt flakes or ½ tsp pouring salt
black pepper, to taste
500g/1lb 2oz turkey mince
1 free-range egg
3 tbsp breadcrumbs
3 tbsp grated parmesan
1 tsp Worcestershire sauce
½ tsp dried thyme

Steps:

  • For the sauce, put the onion and celery into a food processor and blitz to a mush. (Or you can chop as finely as humanly possible by hand.) Reserve 2 tablespoons of the mixture for the meatballs.
  • Warm the garlic oil in a large, heavy-based saucepan or casserole, add the onion and celery mixture, along with the thyme, and cook at a moderate to low heat, stirring every now and again, for about 10 minutes.
  • Add the cans of plum tomatoes, filling up each empty can with water to add to the pan. Season with the sugar, salt and pepper, stir well and let the mixture come to a bubble, then turn the heat down and simmer the sauce gently while you get on with the meatballs.
  • For the meatballs, put all the ingredients for the meatballs, including the reserved chopped onion and celery, and salt according to preference, into a large bowl and gently mix together with your hands. Don't overmix, as that will make the meatballs dense-textured and heavy.
  • When all the meatball ingredients are not too officiously amalgamated, start rolling them into balls. The easiest way is to pinch out an amount about the size of a generously heaped teaspoon and roll it into a ball between the palms of your hands. Put each meatball onto a baking tray lined with baking parchment or greaseproof paper. You should get about 50 little meatballs.
  • Drop the meatballs gently into the simmering sauce; I try to let these fall in concentric circles working round the pan from the outside edge inwards, in the vaguest of fashions.
  • Let the meatballs simmer in the sauce for 30 minutes, or until cooked through. Serve with rice, pasta, couscous or however you so please.

THAI TURKEY MEATBALLS IN COCONUT CURRY SAUCE

Thai Turkey Meatballs In Coconut Curry Sauce image

Tasty nuggets of joy aka baked turkey meatballs get a Thai twist with the addition of ginger, garlic, and red curry paste to keep them light, fluffy and moist when they're dunked in a Thai coconut milk sauced easy dinner.

Provided by Heidi

Categories     Main Course

Time 1h

Number Of Ingredients 19

1 pound ground chicken or turkey
1 egg
1 cup panko
½ cup minced green onion
3 cloves pressed garlic
1 1/2 tablespoons grated ginger or ginger paste
1 tablespoon soy sauce or fish sauce
1 tablespoon red curry paste
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon canola oil
½ red bell pepper (sliced)
½ yellow onion (sliced)
1 tablespoon ginger
1 tablespoon red curry paste
1 13.5 ounce cans unsweetened coconut milk
1 tablespoon fish sauce or soy sauce
2 tablespoons brown sugar
chopped cilantro (, for garnish)

Steps:

  • Preheat the oven to 400°F and spray a baking sheet with cooking spray. Set aside.
  • In large bowl, combine the ground turkey or chicken with the egg, panko breadcrumbs, green onion, garlic, fish sauce, ginger, red curry paste, and salt and pepper. Use a whisk to break the egg yolk and lightly fold the ingredients together. Gently knead the mix with damp hands until incorporated. Cover and refrigerate the mixture for at least 15 minutes for the breadcrumbs to soften, up to overnight.
  • Use a small scoop to form the meatballs into 1-inch balls and place on a cutting board. Dampen your hands and lightly shape and roll the meatballs between your palms and place evenly spaced on the baking sheet. Bake until no longer pink inside, about 20 minutes, then broil on high for another 5-10 minutes for a deliciously crispy crust. Remove from the oven and add to the coconut curry sauce.
  • While the meatballs are baking, prepare the coconut curry sauce. In a large skillet, heat the oil over medium high heat. Add the onions and red bell pepper and cook for 3-4 minutes, stirring often. Stir in the ginger and and red curry paste and cook for another 2-3 minutes, stirring often so the vegetables don't burn but become soft and fragrant.
  • Add the coconut milk and add the brown sugar and fish sauce or soy sauce and stir to combine. Cook for 5 minutes then add the meatballs to the sauce and cook for another 5 minutes, stirring occasionally. Taste for seasoning and if it needs more salt, add a dash or two more fish sauce or soy sauce. Garnish with chopped cilantro leaves and serve over rice or noodles.

TURKEY & SWEET CORN MEATBALLS WITH ROASTED PEPPER SAUCE

Turkey & Sweet Corn Meatballs With Roasted Pepper Sauce image

This is a delicious recipe from a wonderful cookbook called "Ottolenghi: The Cookbook." based on recipes from the famed London restaurant. The meatballs are great served warm or room temperature, on rice, couscous, or noodles, stuffed in a pita, and especially dipped in the sweet and spicy pepper sauce! The instructions are detailed so look long, bu these are actually very easy to make,

Provided by blucoat

Categories     Poultry

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 18

4 ounces sweetcorn (a little less than 1 cup or 100g ,fresh or frozen)
3 slices day-old white bread, crusts removed
1 lb ground turkey breast (500g) or 1 lb ground turkey (500g)
1 egg
4 scallions or 4 spring onions, finely chopped
2 tablespoons finely chopped parsley
2 1/2 teaspoons ground cumin
1 1/2 teaspoons black pepper
1 garlic clove, crushed
sunflower oil, for frying
4 red bell peppers, quartered with the white parts and seeds removed
3 tablespoons olive oil
1 teaspoon salt
1 ounce cilantro, leaves and stalks (about 12 sprigs or 25g)
1 garlic clove, peeled
1 small mild chile, de-seeded
2 tablespoons sweet chili sauce
2 tablespoons cider vinegar or 2 tablespoons white wine vinegar

Steps:

  • Preheat the oven to 400°F (200°C). In a roasting tray, toss peppers with 2 tbsp of the olive oil and 1/2 teaspoon of the salt, then roast in the oven for 35 minutes or until soft. Transfer the peppers to a bowl and cover with cling film to cool. (You can peel them if you want but it's not necessary.) Place them in a blender or food processor with their roasting juices and add the rest of the sauce ingredients. Process until smooth, then taste and adjust the salt if necessary. Set aside.
  • For the meatballs, place a heavy, non-stick frying pan over a high heat and throw in the corn kernels. Toss them in the hot pan for 2-3 minutes until lightly blackened. Remove and leave to cool.
  • Soak the bread in cold water for a minute, then squeeze well and crumble into a large bowl. Add all the rest of the ingredients except the sunflower oil and mix well with your hands.
  • Pour a 1/5 inch (5mm) depth of sunflower oil into your heavy frying pan. Allow it to heat up well and then fry about a teaspoonful of the turkey mix in it. Remove, let cool a little and then taste. Adjust the amount of salt and pepper in the uncooked mixture to your liking.
  • With wet hands, shape the turkey mix into balls, about the size of golf balls. Cook them in small batches in the hot oil, turning them around in the pan until they are golden brown allover. Transfer to an oven tray, place in the oven at 400°F and cook for about 5 minutes. When you press one with your finger, the meat should bounce back. If unsure, break one open to check that it is cooked inside. Serve hot or warm, with the pepper sauce on the side.

GROUND TURKEY MEATBALLS

Ground Turkey Meatballs image

This homemade turkey meatball recipe covered in melted cheese is so easy to make and low carb. Just be sure to season the ground turkey thighs aggressively and sear them in a hot pan to create even more flavor. The meatballs don;t even need breadcrumbs, so they are keto approved.

Provided by Bobby Parrish

Categories     Main Course

Time 35m

Number Of Ingredients 12

1 pound ground turkey thighs
1 heaping teaspoon each onion & garlic powder
1 egg
1 tablespoon freshly chopped parsley
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/4 cup finely grated pecorino romano or parmesan cheese
1 cup grated mozzarella cheese (optional)
Olive oil
1 teaspoon kosher salt
Freshly cracked black pepper
24 ounces of your favorite marinara sauce

Steps:

  • Make the turkey meatballs by adding the ground turkey to a large bowl along with the onion and garlic powder, egg, parsley, oregano, pepper flakes, grated pecorino cheese, 1 teaspoon salt, a few cracks of pepper, and mix to combine. Make sure not to overmix as that will make the meatballs tough. Dip your hands in some cold water and form the meatballs, should make 7 meatballs the size of a large golf ball. The mixture will be loose, so form them into balls the best you can and immediately place in the freezer for 20 minutes.
  • Meanwhile, add the marinara sauce to a sauce pan and bring to a gentle simmer. Pre-heat a large non-stick pan over medium-high heat with 1 tablespoon of oil. Once hot, add the meatballs to the pan and cook until well browned, about 1-2 minutes. Flip and repeat, then go immediately into the marinara sauce. Gently simmer the meatballs for 20 minutes, making sure they are submerged in the sauce.
  • At this point the meatballs are ready and you can serve, or you can turn the heat off the pan and cover the meatballs in shredded mozzarella cheese. You may have to transfer the meatballs and sauce to a shallow and wide pan so the cheese can evenly melt. Place the pan with the cheese covered meatballs 10 inches from the broiler set on high and cook just until the cheese is melted, don't walk away.
  • Remove from broiler, garnish with parsley, and enjoy! Turkey meatballs will keep in the fridge for 5 days or can be frozen for 3 months.

TURKEY MEATBALLS

Turkey Meatballs image

Flavorful, tender and juicy meatballs! Lean ground turkey is mixed with breadcrumbs, flavorful onion, garlic, parmesan cheese and herbs, then formed into bite size rounds and oven baked. Makes about 4 meatballs per person.

Provided by Jaclyn

Categories     Main Course

Time 35m

Number Of Ingredients 14

1/3 cup dry bread crumbs, (homemade or store-bought)
3 - 4 Tbsp milk
1/2 cup (1.2 oz) finely shredded parmesan cheese, (plus more for serving if desired)
1/4 cup very finely chopped yellow onion
2 tsp minced garlic
2 Tbsp chopped fresh parsley, (plus more for garnish)
2 Tbsp chopped fresh basil, (plus more for garnish)
1/2 tsp dried oregano
1 lb. 93% lean ground turkey, (very cold, I recommend Jennie-O since it's less wet and sticky)
1 large egg yolk
3/4 tsp salt
1/4 tsp freshly ground black pepper
1 Tbsp olive oil
1 (24 oz) jar marinara sauce ((I recommend Rao's Tomato Basil))

Steps:

  • Preheat oven to 450 degrees. Spray a rimmed 18 by -13-inch, preferably dark non-stick coated, baking sheet with non-stick cooking spray.
  • In a large mixing bowl toss together bread crumbs with 3 Tbsp milk. Let rest a few minutes. If crumbs seem dry moisten with another 1 Tbsp milk. Toss mixture with a fork to separate clumps.
  • Add parmesan, onion, garlic, parsley, basil and oregano and toss mixture.
  • Add in ground turkey. Sprinkle salt and pepper evenly over. Break egg yolk and drizzle over turkey (this will help it end up more evenly distributed).
  • Toss mixture with clean hands until ingredients are evenly incorporated.
  • Divide meatball mixture into 16 equal portions (about 40g or a little over 2 Tbsp each).
  • Roll into balls (if mixture is a little sticky dipping hands in water before rolling can be helpful).
  • Align meatballs on prepared baking sheet spacing evenly apart. Brush tops and sides with olive oil.
  • Bake in preheated oven 10 minutes. Check bottoms of meatballs, if they are golden brown turn to opposite side, if not let them continue to sit upright and brown on bottom. Bake through to 165 in center of meatballs (check temp of some in center and edges), about 5 minutes longer.
  • Meanwhile heat marinara sauce over low heat in a large saucepan, covered.
  • Toss cooked meatballs with marinara sauce and serve warm garnished with more parsley, basil (optional), and parmesan.

2 lbs ground turkey
1 cup shredded zucchini (liquid squeezed out (measured before squeezing))

1 tsp oregano (dried)
1 tsp salt
Ground black pepper (to taste)

In a large bowl, add ground turkey, zucchini, eggs, garlic, onion flakes, oregano, salt and pepper; mix well with your hands.
  • Using small cookie scoop form 47 meatballs (it helps to dip hands in a bowl with cold water occasionally) and lay on baking sheets.
  • Bake for 15 minutes, turn and toss with spatula (mostly to get rid off of that ground turkey residue) and bake for 5 more minutes. Serve hot.
  • Serve hot as an appetizer or main dish.

TURKEY MEATBALLS IN MARINARA SAUCE

Turkey Meatballs in Marinara Sauce image

A weeknight dinner winner, these turkey meatballs are tender and full of flavor - and cleanup is a snap!

Categories     Dinner

Time 45m

Yield 18 meatballs

Number Of Ingredients 13

1 large egg
¼ cup finely chopped fresh basil (plus more for serving)
Heaping ½ teaspoon salt
¼ teaspoon freshly ground black pepper
½ teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons water
3 tablespoons minced yellow onion, from 1 small onion
1⅓ pounds 93% lean ground turkey (see note)
⅔ cup dried Italian style bread crumbs (such as Progresso)
⅓ cup freshly grated pecorino Romano cheese (plus more for serving)
2 tablespoons olive oil, for cooking
Large jar (24 oz) good quality Marinara sauce (such as Rao's)

Steps:

  • In a medium bowl, whisk together the egg, basil, salt, pepper, oregano, garlic, and water. Add the onion, turkey, bread crumbs, and cheese, and mix with your hands until the mixture is uniform.
  • Lightly wet your hands with water and form the mixture into balls just slightly larger than golf balls (keep wetting your hands as you go to prevent the meatball mixture from sticking to your hands).
  • In a large nonstick skillet, heat the oil over medium heat until shimmering. Add the meatballs in a single layer and brown on all sides, 7 to 8 minutes total. Pour the marinara sauce over the meatballs and bring to a boil. Reduce the heat to low, cover tightly with a lid, and simmer until the meatballs are cooked through, about 15 minutes. Sprinkle with more basil and cheese, if desired, and serve.
  • Note: For best results, I recommend using 93% lean ground turkey, which is a combination of light and dark meat, rather than 99% lean ground turkey breast, which is all white meat.
  • Freezer-Friendly Instructions: The meatballs can be frozen in their sauce for up to 3 months. When ready to serve, defrost overnight in the refrigerator and reheat on the stovetop over medium heat until the meatballs are hot in the center.

TURKEY BALLS & PEPPER SAUCE

Turkey Balls & Pepper Sauce image

The people I work for gave this recipe to me, I am not a huge fan of ground turkey but boy did this recipe change my mind! For saucier meatballs spoon over after cooking instead of before. Serve this over rice or pasta.

Provided by Julia Lynn

Categories     Poultry

Time 1h5m

Yield 24 meatballs, 8 serving(s)

Number Of Ingredients 16

1 lb ground turkey
1 onion, peeled and finely chopped
1 small apple, peeled and grated
3 tablespoons breadcrumbs
1 egg, lightly beaten
2 tablespoons chopped thyme, fresh
salt and pepper, to taste
flour, for coating
2 tablespoons vegetable oil, for frying
1 1/2 tablespoons vegetable oil
2 shallots, peeled and finely chopped
1 1/2 red peppers, chopped
1 teaspoon tomato puree
3 tablespoons chopped basil, fresh
1 3/4 cups chicken stock
salt and pepper, to taste

Steps:

  • For red pepper sauce: heat the oil in a frying pan over medium-high heat, add the shallots and red peppers, and saute until soft.
  • Stir in remaining sauce ingredients and bring to a boil.
  • Simmer mixture for 15-20 minutes. Cool slightly then transfer to your blender and blend until smooth.
  • For the meatballs: Preheat oven to 350. Mix together all ingredients for the meatballs, seasoning to taste.
  • Form the mixture into about 24 walnut sized balls.
  • Spread the flour onto a plate and coat the meatballs.
  • Heat the oil in a large pan, add the meatballs, and saute until they are golden all over.
  • Transfer meatballs to a casserole and pour pepper sauce on top. (If looking for more sauce, like me, pour warm sauce on after baking instead of before. Add some chicken stock to the pan so balls wont dry out.) Bake in preheated oven 20 minutes or until the meatballs are cooked through. Enjoy!

  • On a baking sheet, toss red bell peppers and 1 tablespoon of oil together and lay in a single layer. Roast for 25-30 minutes, until the bell peppers are tender and there are some black char marks.
  • In the meantime, start making your turkey meatballs. In a large bowl combine ground turkey, spinach, coconut flour, salt, thyme, oregano, garlic, 1 tablespoon of oil and black pepper. Mix until combined well. Roll into small meatballs - you'll get about 15 out of a batch. Line a baking sheet with foil and place meatballs on the sheet. Bake for 12-15 minutes, until baked through.
  • While the meatballs are cooking, in a small skillet, combine 1/4 cup diced onion and 1 clove of garlic in 1 tbsp of oil. Saute for 5 minutes until soft and fragrant. Add to a food processor with the bell pepper when it's ready. Then also add almond milk, oregano, thyme, rosemary, salt, black pepper, 2 tbsp of avocado oil or olive oil. Process until combined and smooth.

  • In a medium-sized bowl, combine the turkey, zucchini, garlic powder, onion, powder, Italian seasoning, salt, and egg together. To form the meatballs, scoop approximately 3 tablespoons (approximately 1 1/2 ounces) of the mixture and roll it into a ball. Repeat with the rest of the mixture.
  • Heat the olive oil in a 10-inch non-stick skillet. Place the meatballs in the skillet and brown them on one side. Carefully turn the meatballs using a spatula and brown on the other side. Keep rotating the meatballs until they are mostly browned all over. Transfer the meatballs to a plate and turn the heat off the pan while you make the sauce.
  • Place the red peppers, tomatoes, garlic, onion, basil, and salt in a blender. Blend until the sauce is smooth. Transfer the sauce to the pan that you cooked the meatballs in. Turn the heat to medium and bring the sauce to a simmer. Place the meatballs in the sauce, lower the heat to medium-low, and simmer the meatballs, turning them once, while you make the broccoli cauliflower rice.
  • Place the broccoli and cauliflower in a food processor fitted with a chopping blade. Pulse the vegetables a few seconds at a time until they are broken down and resemble rice. In a large skillet, heat the olive oil over medium heat. Add the veggie rice and stir to coat it with the oil. Add the lemon juice, salt, and pepper and stir. Cook the veggie rice for three to four minutes, or just until it starts to turn tender.
