Turkey Stew image

Loaded with veggies and turkey in a creamy, flavorful broth, this turkey stew is the best way to use up that leftover holiday turkey!

Number Of Ingredients 14

¼ cup butter
1 onion (diced)
¼ cup flour
1 teaspoon poultry seasoning
½ teaspoon dried rosemary
5 cups turkey broth (or chicken broth)
16 ounces baby potatoes (halved, about 3 cups)
2 carrots (cut into 1" chunks)
2 ribs celery (cut into 1" chunks)
1 bay leaf
2-3 cups cooked turkey
⅔ cup heavy cream
⅓ cup frozen green peas (or green beans, thawed)
salt & pepper (to taste)

Steps:

  • Heat butter in a large pot over medium heat and cook onions until softened, about 3-4 minutes.
  • Add flour and seasonings and cook 1 minute more.
  • Stir in broth a bit at a time whisking until smooth after each addition.
  • Add potatoes, carrots, celery, and bay leaf. Bring to a boil, reduce heat to a simmer, and cook covered for 18 minutes or until vegetables are tender.
  • Stir in the turkey & cream, simmer an additional 5 minutes uncovered.
  • Stir in peas, discard bay leaf, and season with salt and pepper to taste. Let rest 2-3 minutes to heat the peas.
  • Garnish with parsley if desired and serve.

8 oz sweet or hot Italian-style turkey sausage cut into 1/2-inch thick slices
1/2 cup chopped onion
1 can (32 ounces) reduced sodium chicken broth
1 can (15 1/2 ounces) red kidney beans drained and rinsed
1 can (14 1/2 ounces) no salt added diced tomatoes undrained
1 tsp McCormick® Oregano Leaves
1 tsp McCormick® Rosemary Leaves finely crushed
1 tsp McCormick® Thyme Leaves
1 package (6 ounces) baby spinach leaves
1/2 cup uncooked small pasta such as mini bowties or elbows

Steps:

  • Heat oil in large saucepan on medium heat. Add sausage; cook and stir 3 minutes. Add onion; cook and stir 3 minutes longer or until onion is tender and sausage is browned.
  • Pour chicken broth, beans and tomatoes into saucepan. Stir in oregano, rosemary and thyme. Bring to boil. Reduce heat to low; simmer 10 minutes.
  • Stir in spinach and pasta. Return to boil on medium-high heat. Reduce heat to low; cover and simmer 10 minutes or until pasta is tender.

2 1/2 pounds turkey meat, diced
1/2 cup chopped garlic
6 teaspoons chili powder
4 tablespoons paprika
2 teaspoons cayenne
2 teaspoons ground cumin
2 teaspoons salt
1 teaspoon crushed red pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon freshly ground black pepper
2 teaspoons onion powder
1/2 teaspoon garlic powder

Steps:

  • Prepare the smoker. In a large mixing bowl, add the turkey. In a small mixing bowl, combine the remaining ingredients together. Mix well. Toss the turkey with the seasoning blend and mix well. Cover and refrigerate for 24 hours. Grind the meat twice in a meat grinder fitted with a 1/2-inch die. A food processor could also be used to grind the meat. Stuff half of the mixture into 1 1/2-inch casings, forming 6-inch links. Form the remaining into 3 (1/2 pound) patties. You can either use the sausage fresh or smoke the sausage. For the smoked sausage: Place the sausage in the smoker and cook for 10 to 15 minutes.

2 medium white onions, halved, sliced 1/4 inch thick lengthwise
3 red or orange bell peppers (ribs and seeds removed), sliced 1/4 inch thick
Coarse salt and ground pepper
4 spicy or sweet Italian turkey sausages (about 1 pound total)
4 hoagie rolls or 1 loaf French bread (cut into 4 pieces), split and toasted
Grainy mustard (optional)

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high. Add onions and peppers; cook, stirring occasionally, until beginning to brown, about 7 minutes. Season with salt and pepper and add 3/4 cup water; cover and simmer 3 minutes. Uncover and cook, stirring occasionally, until vegetables are soft and liquid has evaporated, 2 minutes. Cover and refrigerate 1 cup onion-pepper mixture for later use.
  • Meanwhile, heat 1 teaspoon oil in a small skillet over medium. Add sausages and cook, turning occasionally, until browned and cooked through, 10 to 12 minutes. Place sausages and vegetables on bread and top with mustard if desired.

1 1/2 lbs smoked turkey sausage
1 1/2 lbs sweet potatoes, peeled and cut into 1/2 inch pieces
2 medium green bell peppers, cut into 1 inch pieces
2 celery ribs, cut into 1/2 inch pieces
1 large onion, chopped
1/4 cup quick-cooking tapioca
2 (15 ounce) cans garbanzo beans, rinsed and drained
2 (14 1/2 ounce) cans diced tomatoes with garlic, undrained
2 cups beef broth (may use low-sodium)
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut sausage in half lenghthwise, then slice into 1-inch slices.
  • Add sausage, sweet potato, bell pepper, celery, onion, and tapioca to a 4-quart slow-cooker; stir to combine.
  • Add the chickpeas, undrained tomatoes, beef broth, and worcestershire sauce.

Steps:

  • Heat oil in medium saucepan on medium heat. Add sausage, carrots, onions and celery; cook 4 to 5 min. or until sausage is browned and vegetables are crisp-tender, stirring frequently.

A friend brought this to a potluck and it's been a family favorite ever since. It is easy to make and healthy. You can use mild sausage if you prefer.

1 cup brown rice
2 cups water
1/4 teaspoon salt
1/2 lb Italian turkey sausage
1/3 cup reduced-sodium fat-free chicken broth
1 green bell pepper
14 1/2 ounces stewed tomatoes
4 1/2 ounces mild green chilies
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1 cup frozen corn kernels

Steps:

  • cut the sausage into 1- inch pieces.
  • cut the bell pepper into 1-inch squares.
  • Put the rice and water in a rice cooker and start.
  • while the rice is cooking spray a large non stick skillet with non stick cooking spray. Add the turkey sausage and cook over medium heat just until lightly browned, about 3 minutes. Add the broth and bell pepper and simmer until the pepper is tender, about 4 minutes.
  • Stir the tomatoes, chilies, cumin, oregano and salt into the skillet. Bring to a boil, reduce to a simmer, and cook until the sausage is cooked through and the sauce is slightly thickened, about 5 minutes. Stir in the corn and cook just until warmed through. Divide the rice among 4 plates, spoon the stew alongside and serve.

2 onions, finely chopped
1 eating apple, cored and chopped
2 tbsp olive oil
1 tsp dried sage, or 5 sage leaves, chopped
2 tbsp plain flour
300ml vegetable or chicken stock
2 tbsp wholegrain mustard
2 tbsp runny honey
400g-500g leftover turkey, shredded
about 350g leftover roasted vegetables like roast potatoes, parsnips, celeriacs and carrots, chunkily diced

Steps:

  • Fry the onion and apple in the oil until softened in a casserole or deep pan. Stir in the sage for 1 min, then stir in the flour. Gradually stir in the stock followed by the mustard and honey.
  • Bring up to a simmer and stir in the turkey and roast veg. Cover and gently simmer for 15 mins until turkey is piping hot. Season and eat with mash or jacket potatoes.

I remember having a delicious lentil stew at an ethnic night hosted by my preschool when I was four. I loved it but my mom, while an accomplished cook, didn't like lentils and wouldn't make them. Thirty years later I decided to experiment with them and this was the result of my first try. It is very flavorful and makes a hearty supper for a cold night!

4 cups reduced-sodium chicken broth, divided
1 medium onion, finely chopped
2 stalks celery, finely chopped
½ pound hot Italian turkey sausage links
2 cups dry lentils
1 (14.5 ounce) can tomato sauce
¼ teaspoon ground black pepper
¼ cup hot water, or as needed

Steps:

  • Combine 2 cups broth, onion, and celery in a large saucepan over medium heat. Bring to a simmer and cook until softened, about 10 minutes.
  • At the same time, heat a large skillet over medium-high heat. Fry sausage links in the hot skillet. Pierce casings with a fork to allow juices to run out and cook in the bottom of the pan. Cook until browned, 5 to 7 minutes. Remove to a plate to cool. Slice into thin slices.
  • Deglaze the skillet with about 1/4 cup chicken broth. Add the pan drippings to the saucepan, along with any remaining chicken broth, lentils, tomato sauce, and pepper. Bring to a simmer.
  • Reduce heat to medium, cover, and simmer, stirring occasionally, until lentils are tender, 25 to 30 minutes. If more liquid is needed, add water in small increments.
  • Add sliced sausage, heat through, and serve.

1 boneless skinless turkey thighs
1 carrot, chopped small
1 medium onion, chopped small
1 stalk celery, chopped small
1 cup frozen corn

1 (14 ounce) can tomato sauce
1 (14 ounce) can diced tomatoes, undrained
4 ounces smoked sausage, quartered and siced

Steps:

  • Heat oil in a large pot over med. high heat until hot.
  • Add chicken, carrot, onion and celery and saute for 5 minutes.
  • Stir in the rest of the ingredients.
  • Bring to a boil.
  • Cover, reduce heat and let simmer up to 10 minutes.
  • Stew is done when chicken is cooked through and veggies are tender.
