TURKEY PARMESAN PANINI

2 cups cherry tomatoes, halved
1/4 cup olive oil
1/2 teaspoon kosher salt
1/4 cup store-bought pesto
8 slices pullman white bread
1/4 cup marinara sauce
8 slices sliced mozzarella or provolone
8 thin slices smoked turkey
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.
  • Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a slice of mozzarella on each slice of bread. Divide the turkey evenly on 4 slices of bread and top with some of the blistered tomatoes. Sprinkle each sandwich with 1 tablespoon Parmesan. Top with the remaining slices of bread and press gently.
  • Heat a large skillet over medium heat. Add half of the remaining oil to the skillet and add 2 sandwiches. Place a lid slightly smaller than the skillet on top of the sandwiches and press down. Cook until golden brown, about 3 minutes. Flip the sandwiches and repeat on the second side. Continue with the remaining sandwiches. (Alternatively, you can use a panini press.) Serve warm.

Steps:

  • Heat panini grill.
  • Mix gravy and mayo; spread onto bread slices. Fill with turkey, stuffing and cranberry sauce.
  • Spread outside of sandwich with butter.
  • Grill 3 to 4 min. or until golden brown.

2 tablespoons apricot jam
3 ounces thinly sliced deli peppered turkey
2 slices tomato
2 slices red onion
2 pieces leaf lettuce
2 slices reduced-fat Swiss cheese
4 teaspoons Dijon mustard

Steps:

  • In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain., Spread two toast slices with jam. Layer with turkey, bacon, tomato, onion, lettuce and cheese. Spread remaining toast with mustard; place on top.

4 slices Green apple, sliced thin
2 ounces Spinach, fresh
2-3 slices Boar's Head Sharp Wisconsin Cheddar Cheese
Salt and pepper to taste

Steps:

  • Preheat a Panini press. Brush the inside of both slices of bread with olive oil. On bottom bun, layer ingredients in the following order: Ovengold Turkey Breast, green apples, spinach, cheese. 3 ounces sourdough bread (2 slices sliced about ½ inch thick)
1 tablespoon mayonnaise
3 ounces turkey breast
2 tablespoons cranberry sauce
1 slice provolone cheese
1 tablespoon fresh thyme

Steps:

  • Heat a panini press or skillet to medium high heat.
  • Spread the mayonnaise on both sides of the bread. Lay the slices down on a clean work surface. Place the sliced turkey breast on top of one slice of bread. Add the fresh thyme leaves, then the cranberry sauce and finally the provolone cheese.
  • Cover the sandwich with the other slice of bread.
  • Transfer the sandwich to a panini press or hot skillet. Press together gently to help the whole sandwich stick together. Cook it until the bread is crisp and golden and the cheese is melted, about 3-4 minutes.

nonstick cooking spray
1/4 cup bottled mango chutney
8 ounces sliced turkey breast
1 small red onion, sliced
1 (12 ounce) jar roasted red peppers, drained
4 ounces jarlsberg cheese, sliced

Steps:

  • Heat a stovetop ridged grill pan, large nonstick skillet or electric contact grill.
  • Meanwhile, assemble paninis by laying bread on cutting board; coat with non-stick spray, turn over.
  • Spread 4 slices bread with 1 T chutney each.
