TURKEY ALFREDO PENNE PASTA
Easy Turkey Alfredo Penne Pasta

Steps:
- Add the uncooked chopped bacon to a saute pan over medium heat.
- When the bacon has been fried transfer it to a plate, reserving 1 TBSP of bacon grease in the saucepan, Drain excess grease.
- Add the diced onion cooking until lightly browned. Carefully add the minced garlic, saute for 30 more seconds.
- Slowly pour in the broth, heavy cream, pasta, salt, and pepper. Stir. Cover, Bring the contents to a boil. Reduce heat to low. Simmer until the pasta is cooked yet firm. (Al Dente)
- Add the chopped turkey, bacon, peas, and Parmesan Cheese. Stir to combine. Cover and continue to cook for 2-3 more minutes. (Or until it is warmed and the cheese has melted.)
- Remove from heat.
- Set aside to allow the sauce to thicken. (About 5 minutes)

- In 2-quart saucepan, cook and drain pasta as directed on package, omitting salt.
- Meanwhile, in 12-inch nonstick skillet, cook turkey, Italian seasoning and salt over medium-high heat 6 to 8 minutes, stirring occasionally, until turkey is no longer pink; drain.
- Stir spinach into turkey. Cook uncovered over medium heat 2 to 3 minutes, stirring occasionally, until spinach is wilted. Stir in pasta sauce and tomatoes. Cook 2 to 3 minutes, stirring occasionally, until thoroughly heated. Stir in pasta.
- Sprinkle with cheese; reduce heat to low. Cover; cook about 5 minutes or until cheese is melted.

PENNE WITH TURKEY MEATBALLS

- In a large bowl, add bread crumbs, eggs, milk, 1/2 cup Romano, parsley, salt and pepper and mix well. Add turkey and gently combine, being careful not to overwork the meat. Shape into golf-size balls.
- In a large skillet heat the oil over medium high heat. When almost smoking, add meatballs and without moving or turning the meat, allow it to brown for about 3 minutes. Turn meatballs and brown other side. Continue to cook until all sides are golden brown, about 8 minutes total. Add tomato sauce and bring to a boil. Lower heat and allow meatballs to simmer for 5 minutes. Turn off heat and keep warm on stove. Be careful not to over handle the meatballs since they are soft and fragile.
- In a large pot, bring to a boil 6 quarts of salted water. Add pasta and cook until al dente, about 8 minutes. Drain pasta in a colander. Do not rinse pasta with water since you want to retain the pasta's natural starches so that the sauce will cling to the penne.
- Remove meatballs from sauce and place in serving bowl. Pour some tomato sauce over meatballs, but leave about 2/3 cup of sauce in skillet. Place the cooked penne into the skillet with the remaining sauce and toss well. Pour sauced pasta in a large serving bowl. Serve alongside the meatballs. Sprinkle remaining Romano on top.
