TORTELLINI TUNA CASSEROLE

This tortellini tuna casserole is my updated version of the one I loved growing up. The creamy from-scratch sauce is made with fresh mushrooms, garlic, white wine, and peas. Plus, the tortellini cooks right in the sauce - no need to boil it ahead of time.

1 tablespoon olive oil
8 ounces baby bella mushrooms, finely chopped
1/2 cup finely chopped yellow onion
4 large cloves of garlic, finely chopped
1/2 teaspoon kosher salt
1/4 cup dry white wine
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 cup 2% milk
1/4 heavy cream
1/4 teaspoon black pepper
1 (4-oz) can white albacore tuna packed in water, drained
1 cup frozen peas
2 cups cheese tortellini
1/2 cup dried breadcrumbs
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 375°F.
  • In a 10-inch skillet, heat 1 tablespoon of olive oil over medium heat. Add the mushrooms, onions, and garlic and stir to coat them in the oil. Add 1/2 teaspoon of salt and stir. Cook the mushrooms, stirring occasionally, for ten minutes or until they've released their moisture.
  • Add the wine to the pan and, as it simmers, scrape up the browned bits off the bottom of the pan. Add the butter to the pan and stir until it's melted. Sprinkle the flour over the mushrooms and butter and stir.
  • Add the milk and cream to the pan. Stir and bring it to a low simmer and adjust the heat to keep it from boiling. Simmer the sauce for five minutes or so or until it starts to thicken (it should lightly coat the back of a spoon). Add the black pepper, tuna, and peas and stir to combine. Add the tortellini and stir to coat it in the sauce. Transfer the pasta and sauce to a 1 1/12-quart baking dish.
  • In a small bowl, combine the breadcrumbs, olive oil, salt and half of the grated Parmesan cheese. Sprinkle the topping over the top of the pasta and sauce in the casserole dish. Sprinkle the remaining Parmesan cheese over the top of the breadcrumbs.
  • Bake the casserole for 30 minutes. Let the casserole stand for a few minutes before serving.

2 tablespoons olive oil
1 medium onion, chopped
1 teaspoon minced garlic
4 carrots, peeled and sliced into 1/4-inch coins
8 cups chicken stock
1 cup frozen green peas
One 12-ounce container tricolor cheese tortellini
2 ears corn, kernels removed
2 cups fresh baby spinach, torn into smaller pieces
Grated Parmesan cheese, for garnish

Steps:

  • In a large stockpot over medium heat, heat the oil until it shimmers, about 2 minutes, then add the onion, garlic, and carrots, and saute for 5 minutes or until the vegetables are slightly soft. Pour in the chicken stock, increase the heat to high, and bring to a boil. Add the peas, tortellini, and corn and cook for 12 minutes, or according to the package directions for the tortellini.
  • Remove the stockpot from the heat and add the spinach, stirring until it wilts. To serve, spoon the soup into bowls and top with grated Parmesan cheese.

1 pound Italian sausage
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
½ cup water
½ cup dry red wine
8 ounces fresh tortellini pasta
1 cup sliced carrots
2 cups stewed tomatoes
½ teaspoon dried basil
½ teaspoon dried oregano
8 ounces tomato sauce
1 ½ cups sliced zucchini
2 green bell peppers, seeded and cubed
3 tablespoons chopped fresh parsley

Steps:

  • Remove casings from sausage. Brown sausage and cook until crumbly. Remove meat from pot. Reserve 1 tablespoon drippings.
  • Cook onion and garlic in the drippings until tender. Add broth, water, wine, carrots, tomatoes, basil, oregano, tomato sauce, and the cooked sausage. Bring to a boil; reduce heat and simmer uncovered 30 minutes.
  • Add zucchini, green peppers, parsley, and tortellini. Simmer another 25 minutes, covered, for fresh tortellini, or 45 minutes, covered, for frozen tortellini. Serve with fresh parmesan cheese sprinkled over the top.

Incredibly simple, and really good. Start to finish about 10 minutes, and my family says it tastes like good restaurant fare. The key is to use ONLY high quality ingredients. Tuna packed in olive oil is also sometimes called "tonno".

2 lbs frozen cheese tortellini
1 (6 ounce) can tuna in olive oil
2 tablespoons pesto sauce
1 tablespoon extra virgin olive oil
1 lb frozen broccoli florets
garlic powder
salt (optional)
freshly grated romano cheese or parmesan cheese

Steps:

  • Cook the pasta in boiling, salted water, with about 1 tbs olive oil. for 3-5 minutes - until the tortellini floats to the surface. Do not overcook.
  • Microwave the broccoli for about 3-4 minutes - till warm, but not soft.
  • Drain pasta.
  • Meanwhile, unceremoniously dump the canned tuna (with oil) into the pot.
  • Add pesto, olive oil, garlic powder and salt if desired.
  • Toss together, then add drained pasta and broccoli.
  • Toss all together, gently, until mixed.
  • Top each serving with freshly grated cheese, and a sprig of fresh basil, if you are lucky enough to have some handy.
  • Enjoy.

2 (6 ounce) cans canned tuna, drained (solid white albacore is best)
1 (9 ounce) bag barilla tortellini (there are several varieties. For this recipe, I used the portabello mushroom, but I've tried them al)
1 (10 3/4 ounce) can cream of mushroom soup (use 2 cans if using solid white albacore tuna)
1 cup frozen green pea
1 1/2 cups shredded cheddar cheese, separated
1/2 cup crushed potato chips, any variety (you can substitute bread crumbs, chow mein noodles or cracker crumbs)
1 (4 ounce) can mushrooms, drained

Steps:

  • Cook the tortellini in boiling water for about 11 minutes, or according to package directions.
  • Turn out into colander and let drain.
  • While the tortellini is draining, combine the tuna, soup, mushrooms and 1 cup of the cheese in the tortellini pot.
  • Add the drained tortellini and the frozen peas; mix lightly to coat.
  • Spoon mixture into an 8X8 square baking dish. Sprinkle with remaining cheese.
  • Sprinkle crushed chips over casserole.
  • Bake in 350 degree oven for 25-30 minutes.
  • Serve with crusty dinner rolls and a green salad for a complete meal!

2 (6 ounce) cans tuna, flaked
1 (10 1/2 ounce) can cream of mushroom soup, 98% fat free
1 cup 2% cheddar cheese or 1 cup swiss cheese, shredded
2 (4 cup) bags frozen cheese tortellini
1 cup skim milk
1 stalk celery, chopped
1 onion, chopped

Steps:

  • Fill a large pot with 4 quarts water and put on high heat to boil.
  • Chop onion and celery and saute in a little oil or spray. (Note: Feel free to add mushrooms or peppers, I can barely get away with celery with my family's tastes).
  • Preheat oven to 350 degrees.
  • Add tortellini to water and cook per package directions - you can undercook a little.
  • In a 2 quart casserole, mix tuna, soup, and milk.
  • Add celery and onion mixture to casserole.
  • Drain tortellini and add to casserole. Add cheese and fold in with tuna mixture.
  • Sprinkle with crushed potato chips, bread crumbs, etc., if you desire.
  • Bake for 25-30 minutes.

2 tablespoons unsalted butter
1 small yellow onion, diced
4 cloves garlic, minced
¼ teaspoon red pepper flakes
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ cup dry white wine
4 cups vegetable broth
1 can crushed tomato
1 McCormick® dried bay leaf
1 package cheese tortellini
1 container baby spinach
¼ cup heavy cream
½ cup freshly grated parmesan cheese, for garnish
¼ cup fresh basil leaves, for garnish

Steps:

  • Melt the olive oil and butter together in a Dutch oven over medium heat. Add the onion, garlic, red pepper flakes, salt, and pepper. Cook, stirring occasionally, until the onions are translucent and the garlic is fragrant, about 5 minutes.
  • Add the white wine and cook for another 2 minutes, scraping up any browned bits from the bottom of the pot with a wooden spoon, until the wine is reduced by at least half.
  • Add the vegetable broth, crushed tomatoes, and bay leaf. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
  • Add the tortellini and spinach and simmer for another 5-6 minutes, until the tortellini are cooked through and the spinach has wilted.
  • Remove the bay leaf, then stir in the heavy cream.
  • Ladle the soup into bowls and garnish with the Parmesan cheese and basil.
