Ingredients

1 (6 ounce) can light chunk tuna in water, drained and flaked
1/3 cup coarsely chopped water-packed artichoke hearts
2 tablespoons fat-free mayonnaise
1/2 cup shredded reduced-fat Mexican cheese blend, divided
1/4 teaspoon salt-free lemon pepper
1/8 teaspoon dried oregano
2 English muffins, split and toasted

Steps:

In a small bowl, combine the tuna, artichokes, mayonnaise, 1/4 cup cheese, lemon-pepper, and oregano. Spread over English muffin halves.
Place on a baking sheet. Broil 4-6 inches from the heat for 3-5 minutes or until heated through.
Sprinkle with remaining cheese; broil 1-2 minutes longer or until cheese is melted.

2 pounds medium fresh mushrooms, halved
2 cans (14 ounces each) water-packed quartered artichoke hearts, drained
1-1/2 cups water
1 cup cider vinegar
1/2 cup olive oil
1 bay leaf
1-1/2 teaspoons salt
1-1/2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1 garlic clove, minced
1/2 teaspoon pepper
1 tablespoon minced fresh parsley
Additional parsley

Steps:

In a nonreactive bowl, combine first 12 ingredients. Refrigerate, covered, to allow flavors to blend, 3-4 hours. Serve with additional parsley.
