SPICY TUNA RICE BOWL

What we have here is equal parts tuna and rice by weight, which for me, gives this the perfect balance between protein and starch. While this may remind some people of a fried rice dish, this is significantly lighter, and actually very low on the fat content, but that doesn't mean it's not satisfying, and like most rice dishes, it's very comforting.

1 cup uncooked long-grain rice
1 ½ cups water
1 (7 ounce) jar tuna packed in olive oil
½ cup finely diced red bell pepper
¼ cup finely diced jalapeno pepper
¼ cup finely sliced green onions
⅓ cup seasoned rice vinegar
2 tablespoons soy sauce
½ teaspoon sesame oil
2 teaspoons Sriracha hot sauce
½ lemon, juiced, or to taste
1 pinch Korean red pepper flakes (gochugaru), or to taste
1 teaspoon finely sliced green onion, or to taste

Steps:

  • Pour rice into a heavy pot and add water; swirl to allow rice to settle. Bring to a simmer over medium-high heat; do not stir. Reduce heat to low, cover, and continue to simmer for 15 minutes.
  • While rice is cooking, place tuna into a large mixing bowl and break up with your hands or a fork. Toss in red bell pepper, jalapeno, 1/4 cup green onions, rice vinegar, soy sauce, sesame oil, Sriracha, and lemon juice. Mix with a fork until thoroughly combined.
  • Turn off heat and let rice sit, covered, for 10 minutes.
  • Fluff rice with a fork to separate the grains and break up any large clumps; transfer into the mixing bowl. Mix thoroughly with a spoon until all the ingredients are evenly incorporated. Taste and adjust seasoning if needed. Serve warm, at room temperature, or cold like a rice salad, topped with red pepper flakes and 1 teaspoon green onion.

approx 900g/2lb cold cooked rice (about 400g/14oz uncooked rice)
400g tuna in springwater
200g frozen petits pois , defrosted
2 red peppers , peeled with a potato peeler, deseeded and diced
3 tomatoes , chopped into small chunks
5 spring onions , finely sliced
bunch flat-leaf parsley , chopped
large handful stoned green olives , roughly chopped (optional)
4 tbsp mayonnaise
juice 1 lemon
2 tbsp extra-virgin olive oil

Steps:

  • The cooked rice will have probably clumped together, so break it up in a large mixing bowl. Flake in the tuna, then mix in the peas, peppers, tomatoes, spring onions, parsley and olives, if you're using them.
  • Stir through the mayonnaise, lemon juice and olive oil and season to taste. Cover the bowl with cling film or place in a large plastic container and let your household serve themselves whenever they are hungry.

1/4 teaspoon black pepper
1/2 cup chopped fresh parsley (or cilantro)
4 tablespoons olive oil for frying*

Steps:

  • Preheat the oven to the "keep warm" setting (150-170 degrees F).
  • In a medium bowl, use a fork to mix together the tuna, mayonnaise, Dijon mustard, minced garlic, eggs, kosher salt, black pepper, and parsley.
  • Heat the olive oil in a large nonstick skillet over medium heat.
  • Measuring 1/4 cup of the mixture for each cake, fry the patties until golden brown, about 3 minutes per side.

1 large egg, lightly beaten
1/2 cup fresh cilantro, coarsely chopped, plus sprigs for garnish

1 tablespoon fresh lemon juice
1 jalapeno chile (ribs and seeds removed), finely chopped
1 tablespoon olive oil

1 lb sushi-grade ahi tuna
2 tbsp sriracha
1 tbsp sesame oil
1 tsp hot chili oil
1/4 cup vegenaise (or mayonnaise)
1 tbsp chives (chopped)
2 cups sushi or short grain rice
2 cups water (plus extra for rinsing rice)
2 tbsp rice vinegar (or white wine vinegar)
2 tbsp sugar
1 tbsp kosher salt
1/2 cup soy sauce (tamari for gluten free)
2 tbsp sesame oil

Steps:

  • Gently dice the ahi, then adding the rest of the ingredients to the tuna and mixing well.
  • Place in the refrigerator for 15-20 minutes.
  • Rinse the rice well, then combine the rice and 2 cups of water in a medium pot.
  • Bring to a boil then reduce the heat to low and cover.
  • Cook for 15 minutes, then remove from the heat, keep the rice covered away from the heat for 10 minutes.
  • Combine the rice vinegar, sugar and salt in a small bowl and microwave for 30 seconds.
  • Place the cooked rice in a glass bowl and add the vinegar mixture to the rice, combining well.
  • Allow the rice to cool, then tightly form into small rectangles.
  • Cook them lightly on each side in a skillet over medium heat with 1 tbsp of sesame oil.
  • Remove from the skillet and dip the rice cakes into the soy sauce.
  • Cook the rice cakes for an additional 2-3 minutes in 1 tbsp sesame oil on each side or until crisp and golden brown.
  • Remove from the skillet and top with the spicy tuna, then garnish with additional chopped chives.
