1 cup KRAFT Shredded Sharp Cheddar Cheese, divided
2 Tbsp. butter or margarine
1 small onion, chopped
2 cups egg noodles, cooked
1 can (10-3/4 oz.) condensed cream of celery soup
1 can (5 oz.) chunk light tuna in water, drained, flaked
1/3 cup milk
1/4 cup KRAFT Grated Parmesan Cheese
2 Tbsp. chopped pimentos

Steps:

  • Heat oven to 350°F.
  • Reserve 1/2 cup cheddar for later use. Melt butter in large saucepan on medium heat. Add onions; cook 5 min. or until crisp-tender, stirring frequently. Add remaining ingredients; mix lightly.
  • Spoon into 1-qt. casserole sprayed with cooking spray.
  • Bake 30 min. or until heated through. Sprinkle with reserved cheddar; bake 5 min. or until melted.

1 package (16 ounces) rigatoni
4 cups broccoli florets (3 small heads)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
4 cups whole milk
1 cup Swiss cheese, (shredded and divided)
1 cup Cheddar cheese, (shredded and divided)
3 cans (5 ounces each) chunk tuna in water, (drained and flaked)
3 roma tomatoes, (sliced in ¼" slices)

Steps:

  • Preheat oven to 400°F.
  • In a large pot, cook pasta in boiling salted water for about 3 minutes.
  • Add the broccoli and cook for the last 5 min. Drain the pasta and noodles well and set aside.
  • In a medium saucepan, melt the butter over low heat and then add the flour, stirring constantly. Add salt and pepper to taste and cook for 1 minute.
  • Whisk in milk and increase heat to medium-high. Continue whisking until mixture starts to boil and slightly thicken.
  • Remove from heat and stir in half of the Swiss cheese and half of the cheddar cheese. Stir to melt.
  • Add the cheese sauce to the pasta and broccoli along with the tuna. Pour into a 9x13 casserole dish. Arrange tomato slices on top and cover with remaining cheese.
  • Cover with foil and bake for 20 minutes until hot and bubbly. (You can remove the foil 5 minutes before it is done for a golden brown cheese.)

TUNA ZUCCHINI CASSEROLE

Adapted from Six Seasons by Joshua McFadden This is a warming casserole that can be made in advance, and baked right before serving. Simply do all the steps through step 4 and refrigerate it, until ready to bake. It's best to let it come to room temperature before you do, so it heats evenly. It's perfect for lunch or dinner, along with a big green salad, and a glass of white wine.

1 1/2 pounds (680g) small zucchini or summer squash
2 1/2 teaspoons Kosher or sea salt
1 tablespoon extra-virgin olive oil (plus additional oil for preparing the zucchini)
2 cups (200g) thinly sliced scallions or spring onions
1 1/2 teaspoons minced fresh thyme leaves
freshly ground black pepper
1/4 teaspoon red chili flakes
2 tins tuna, preferably packed in oil (light or dark (5 oz, 140g. each tin))
1 1/2 cups (130g) grated cheese (such as Comté, Gruyère, Emmenthal, extra-sharp cheddar, or Swiss cheese)

Steps:

  • Trim the ends off the zucchini and if small, slice them lengthwise. If they are larger, cut them into batons about 3/4 inch (2cm) thick. Place them in a colander and toss them with 2 teaspoons of salt. Let drain for 1 to 2 hours, shaking and turning them a few times, coaxing the excess water to drain away.
  • Heat the olive oil in a skillet over medium heat. Add the scallions, thyme, some freshly ground pepper, the chili flakes, and 1/2 teaspoon salt. Cook, stirring frequently, until the scallions are wilted and soft, about 3 minutes. Remove from heat and set aside.
  • Preheat the oven to 450ºF (230ºC). Blot the zucchini dry with a paper towel and toss them with a bit of olive oil on a baking sheet. (You can line the baking sheet with parchment paper for easier clean up if you want, or if you're parsimonious with the olive oil and are concerned they'll stick.) Spread them in an even layer, cut side down, and roast them in the oven just until tender, about 15 minutes, but don't cook them to mush.
  • Remove from the oven and place the zucchini in a single layer in a shallow baking dish or gratin dish that will fit them snugly in an even layer. Strew the scallions over the zucchini. Drain the tuna and flake it over the scallions and sprinkle the cheese evenly over the top.
  • Bake until the cheese is melted and starts to brown and the casserole is heated through, 10 to 15 minutes. Serve warm.

1 recipe Tuna Salad, recipe follows
1 cup shredded sharp farmhouse Cheddar cheese
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole grain mustard
Freshly ground black pepper,
Freshly squeezed lemon juice, to taste (optional)

Steps:

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
  • Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.

About 3 tablespoons EVOO, plus extra for drizzling
12 ounces line-caught canned tuna, drained
1/2 cup finely chopped fresh herbs, such as dill, parsley and tarragon
1/2 cup finely chopped red onion or scallions, whites and greens
2 tablespoons Dijon mustard
1 to 2 small ribs celery, finely chopped
1 lemon, juiced
Freshly ground black pepper
1 stick butter
3 tablespoons flour
About 2 1/2 cups whole milk
2 cups grated white Cheddar or gruyere cheese
1 1/2 cups homemade breadcrumbs or panko
1/2 cup grated Parm

Steps:

  • Bring a large pot of water to boil for the pasta. Salt the water and cook the pasta to less than al dente, 5 to 6 minutes. Drain and drizzle with a touch of oil to keep the pasta loose.
  • In a large bowl, flake the tuna and add the herbs (reserving a tablespoon or 2 for breadcrumbs), onions, mustard, celery, lemon juice, EVOO and some salt and pepper. Add the pasta and combine well. Transfer to a baking dish or large casserole dish.
  • In a medium saucepot, melt 4 tablespoons of butter. Whisk in the flour and cook 1 minute. Then whisk in the milk and season with salt and pepper, thicken to coat the back of a spoon. Stir in the Cheddar in a figure-eight motion. Pour the sauce evenly over the pasta and tuna. Gently combine with a spoon to settle the sauce. Cool and store for a make-ahead meal.
  • Melt the remaining 4 tablespoons of butter in a small pan and add the breadcrumbs and reserved herbs, toss to evenly distribute the butter, remove from heat and transfer to airtight container.
  • To prepare, preheat the oven to 400 degrees F and bring the casserole to room temperature. Top the casserole with breadcrumbs and Parm cheese. Bake until golden and hot through.

6 scallions (white parts sliced, green parts finely chopped)
3 stalks celery, thinly sliced, plus 2 tablespoons chopped leaves
One 12-ounce can fat-free evaporated milk
Freshly ground pepper
1 cup frozen peas and carrots
1 tablespoon Dijon mustard
1/2 cup light sour cream
3/4 cup shredded low-fat Monterey jack cheese (about 3 ounces)
One 5-ounce can water-packed tuna, drained and flaked
1/4 cup panko breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Add the noodles and cook according to the package directions. Reserve 1/2 cup of the cooking water, then drain the noodles and return to the pot.
  • Meanwhile, melt 1 tablespoon of the butter in a large skillet over medium-high heat. Add the scallion whites and sliced celery. Cook, stirring occasionally, until softened, about 2 minutes. Add the evaporated milk, 1/2 teaspoon salt and a few grinds of pepper. Stir in the peas and carrots and the mustard. Bring to a boil, then reduce the heat to medium low. Cook, stirring occasionally, until slightly thickened, 2 to 3 minutes.
  • Pour the sauce over the noodles; stir in the sour cream, 1/2 cup of the cheese, the tuna and reserved cooking water. Transfer to a 1 1/2-quart baking dish.
  • Melt the remaining 1 tablespoon butter. Toss with the panko, scallion greens, celery leaves and remaining 1/4 cup cheese; season with salt and pepper. Sprinkle over the casserole. Bake until golden, 15 to 20 minutes.

It's easy to make from items you probably already have in your pantry .. no special shopping required and there isn't much clean up at all. Serve with a side salad and/or...

2 Tbsp bread crumbs - plain or seasoned
1/8 tsp garlic powder
1/4 tsp dill weed
1 Tbsp melted butter
2 c cooked crumbled salmon - leftover is great or use a 14 oz can of your favorite salmon drained and remove bonesnes discarded)
1 can(s) condensed cream of mushroom or celery soup
2 Tbsp finely diced celery
1/4 c wafer thin sliced carrots
1/4 c frozen baby peas
1-1/2 tsp diced red onion - more if desired
2 c cooked al dente elbow macaroni
1/4 tsp celery salt
1/2 tsp dill weed
1/4 c shredded cheddar cheese
1/4 c shredded monterey jack cheese
1/2 c milk
1/4 c sour cream
salt and pepper to taste
1/4 c shredded cheddar cheese

Steps:

  • 1. Preheat oven to 375 F. Coat a 2 quart baking dish with cooking spray, set aside.
  • 2. In small bowl combine bread crumbs, garlic powder, dill weed and melted butter and mix until crumbly. Set aside.
  • 3. In a large bowl, remaining ingredients except for the last 1/4 cup shredded cheddar cheese. Stir together until well blended. Spoon into prepared baking dish.
  • 4. Spread the last 1/4 shredded cheese over the top of the casserole.
  • 5. Sprinkle the bread crumb mixture evenly over the top of the casserole. Bake covered at 375 for 20 minutes.
  • 6. Remove cover and return to oven for approximately 12 minutes until cheese is melted and casserole is bubbly.
  • 7. Remove from oven and sit for at least 5 minutes before serving.
  • 8. NOTE: Add more seasonings than listed if you like them, add less or remove them if you don't like them. This recipe is not set in stone .. however ... I recommend you try it this way first and then adjust according to your individual tastes. If you make this recipe and choose to substitute chicken or pork for the salmon or if you add chocolate or hot chili peppers or Dr Pepper you will not be happy and it is not my fault you did not follow instructions so please do not leave negative feedback .. this is a fish dish. 1/4 cup butter

  • Cook the macaroni according to the package directions. Drain well, and set aside.
  • Melt 1/4 cup butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until the mixture is thickened and bubbly. Add salt, garlic salt, and pepper, stirring well.
  • Combine the sauce, reserved macaroni, cheeses, salmon, and eggs in a large bowl; stir well. Spoon the mixture into a greased 11 x 7 x1 1/2 inch baking dish. Combine soft breadcrumbs (just put bread in a food processor to make these) and 2 tablespoons melted butter; Stir well. Sprinkle the breadcrumb mixture evenly over the casserole. Bake at 350 degrees for 1 hour or until set.

Steps:

  • In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
  • Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.
