- In a small bowl, combine the first 6 ingredients. In another bowl, combine the mayonnaise, mustard and salt; stir into tuna mixture. Cover and refrigerate for at least 30 minutes. Serve on lettuce-lined plates.

You'll crave this salad once you try it, this also works well with chicken in place of the tuna, please do not omit the sweet pickles they *make* this salad! adjust all amounts to suit taste, plan ahead this needs to chill before serving, cooking time is chilling time

- Cook macaroni in a large pot of boiling salted water until just tender; drain then rinse well under cold water; place in a bowl then toss with 1 tablespoon oil to prevent sticking.
- Add in tuna, onion, bell pepper, celery and sweet pickles; toss to combine.
- In a bowl mix together mayonnaise with sour cream, sweet relish (if using) garlic powder, yellow mustard (start with 1 tablespoon mustard) and seasoned salt; add to the macaroni mixture; mix well to combine.
- Season with black pepper to taste.
- Arrange the cooked egg wedges around the inside of the bowl, then dust the top of the salad and eggs lightly with paprika.
- Cover and chill at least 3 hours before serving (the longer chilling time the better!).
TUNA & MACARONI SUMMER SALAD

Macaroni salad is a popular side when serving hamburgers and hotdogs. I have taken the traditional macaroni salad recipe and I added a few new spices and ingredients so that you could even make a meal out of the macaroni itself.

- In large pot bring between 5-6 cups of water to boil and add your elbow macaroni. You need to cook according to directions on the back of the macaroni box, usually 8-10 minutes.
- Drain all excess water from macaroni and allow macaroni to sit while it cools for about 20 minutes. In large mixing bowl combine mayonnaise, diced onion, carrots, peppers, horseradish, garlic powder, salt, pepper and mix throughly.
- Next, add tuna fish and mix throughly followed by the Romano cheese. Not only will your tuna macaroni taste great it is very colorful also.
- Finally, place your salad in an attractive serving bowl and add your parsley and paprika on top as a final garnish. Remember, presentation is important!

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Transfer the macaroni to a bowl, and cool in the refrigerator.
- In a large bowl, lightly toss the tuna with celery, onion, and about 1 cup mayonnaise until combined, then stir in the remaining mayonnaise, macaroni, olives, and grape tomatoes. Season to taste with salt and pepper. Let the salad chill in refrigerator 1 hour.

SUMMER PASTA SALAD WITH TUNA
This is the quintessential summer comfort food. When it was too hot to cook or eat a heavy dinner, my mother would often make this as a light summer meal. The leftovers taste great the next day! NOTE: Many of the spices can be adjusted to taste. I like to experiment with new flavors, like adding dill or curry powder. - Boil pasta as directed until al dente. Drain and rinse with cold water to stop the cooking. (I also boil the eggs at this time and rinse then in cold water when finished).
- In a large salad bowl, combine chopped eggs, diced onion, celery, mayo, lemon, spices, relish, and hot sauce.
- Drain the tuna well and flake into the bowl.
- Make sure the pasta is relatively dry (a little water clinging to them keeps the salad moist and cuts down the mayo needed).
- Thoroughly mix the salad and chill if desired.
- Serve in bowls or on a bed of lettuce.
