BROCCOLI TUNA CASSEROLE

When I was in the Navy, a co-worker's wife shared this recipe with me. I've tweaked it over the years, but it still brings back memories of my "family" away from home. -Yvonne Cook, Haskins, Ohio

5 cups uncooked whole wheat egg noodles
1 teaspoon butter
1/4 cup chopped onion
1/4 cup cornstarch
2 cups fat-free milk
1 teaspoon dried basil
1 teaspoon dried thyme
3/4 teaspoon salt
1/2 teaspoon pepper
1 cup reduced-sodium chicken broth
1 cup shredded Monterey Jack cheese, divided
4 cups frozen broccoli florets, thawed
2 pouches (6.4 ounces each) albacore white tuna in water
1/3 cup panko bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions; drain. Transfer to a shallow 3-qt. or 13x9-in. baking dish coated with cooking spray. , Meanwhile, in a large nonstick skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. In a small bowl, whisk cornstarch, milk and seasonings until smooth; stir into pan. Stir in broth. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in 3/4 cup cheese until melted; stir in broccoli and tuna., Spoon over noodles; mix well. Sprinkle with remaining cheese. Toss bread crumbs with melted butter; sprinkle over casserole. Bake, covered, 45 minutes. Uncover and bake until cheese is melted, 15-20 minutes longer. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 can (10 3/4 ounces) condensed cream of broccoli soup
2 cups milk
2 cups uncooked mafalda (mini-lasagna noodle) pasta (4 ounces)
1 1/2 cups frozen broccoli cuts
1 can (6 ounces) tuna, drained
1/2 cup bite-size square crisp cheese crackers, crushed (1/4 cup)
1/2 cup shredded Cheddar cheese (2 ounces)

Steps:

  • Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook onion in skillet 2 minutes, stirring occasionally, until crisp-tender. Stir in soup and milk. Heat to boiling, stirring constantly. Stir in pasta and frozen broccoli. Heat to boiling; reduce heat to medium. Cover and cook 5 minutes.
  • Stir in tuna. Cover and cook about 5 minutes, stirring occasionally, until pasta is tender.
  • Mix crackers and cheese; sprinkle over tuna mixture. Cover and let stand 1 to 2 minutes or until cheese is melted.

This is a surprisingly lowfat version of the classic tuna casserole you grew up with. You make your own creamy mixture, which replaces the high-fat condensed soup in the original version. Fresh bread crumbs toast right on top of the casserole!

5 slices whole-wheat bread, crusts included
1 tablespoon canola oil
1 small onion, chopped (about 1 cup)
1 large stalk celery, finely diced (about 1/2 cup)
1 (10-ounce) box white mushroom, stemmed and chopped (about 2 1/2 cups)
1/4 cup all-purpose flour
3 cups 1 percent milk
1 cup low-sodium chicken broth or vegetable broth
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 pound whole-wheat fettuccine noodles, broken into thirds and cooked according to package directions
1 (10-ounce) box frozen chopped broccoli, thawed
1 (10-ounce) box frozen peas, thawed
4 (6-ounce) cans chunk light tuna in water, drained

Steps:

  • Preheat oven to 425 degrees F.
  • Place bread in food processor and pulse for 30 seconds into bread crumbs (makes about 2 1/2 to 3 cups crumbs).
  • Heat oil in a large skillet over medium heat. Add onions and cook, stirring, until onions are soft and translucent, 8 minutes. Add celery and cook, stirring, until just tender, 6 minutes. Add mushrooms and cook, stirring, until mushrooms release their water, 5 to 7 minutes. Add flour all at once and stir immediately and vigorously with a wooden spoon until flour is completely incorporated into vegetable mixture until there are no flour lumps. Add milk and broth, stir to combine and bring mixture to a boil, stirring frequently. Reduce heat to a vigorous simmer and cook, stirring, until liquid has thicke ned and reduced by about 1/2 cup, 7 to 8 minutes. Add salt and pepper and stir to combine. Combine cooked pasta, vegetable-liquid mixture, broccoli, peas and tuna and toss to incorporate. Pour into a 9 by 13-inch casserole. Top with bread crumbs. Bake for 25 minutes, or until crumbs are golden brown and toasted.

Found this in Pillsbury Pot Pies and Casseroles. There is one posted quite a bit like this one but a little different. This is quite easy and good. I have made this twice and I have sauted some onion and garlic and added to the casserole for a little more flavor.

1 1/3 cups penne pasta (4 oz)
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup milk
1 (7 1/16 ounce) envelope chunk albacore tuna in water (white)
1 (4 1/2 ounce) jar mushrooms, drained and sliced
1 (10 ounce) bag frozen broccoli cuts, thawed
1 tablespoon butter, melted
1/3 cup panko breadcrumbs
1/4 cup almonds, slivered

Steps:

  • Heat oven to 350 degrees. Cook and drain pasta as directed using minimum cook time (it finishes cooking in the oven). In ungreased 1 1/2 quart casserole, stir together soup, milk, tuna, mushrooms and cooked pasta.
  • Cover; bake 20 minutes. Remove casserole from oven. Cut up large pieces of broccoli, gently stir broccoli into tuna mixture. In small bowl mix butter, panko crumbs and almonds; sprinkle over casserole. Bake about 30 minutes longer or until bubbly around edges.

1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
½ cup vegetable broth

1 cup frozen peas, thawed
1 cup frozen chopped broccoli, thawed
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and set aside.
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add onion and garlic and saute until onion is slightly translucent, about 2 minutes. Add broth and flour to the skillet and quickly stir for a minute with a whisk.
  • Add 1 cup soy milk and whisk, continuing to blend in the flour. Add remaining soy milk and continually stir until the mixture thickens and bubbles. Add tuna to the skillet, then stir in peas and broccoli; cook until heated through, 5 to 7 minutes.

1 small onion, chopped
1-1/2 teaspoons vegetable oil
2/3 cup water
3 tablespoons Homemade Cream-Style Soup Mix
3/4 cup frozen chopped broccoli, thawed
1 can (6 ounces) tuna, drained and flaked
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon lemon-pepper seasoning
1-1/2 cups cooked rice
2 tablespoons slivered almonds, toasted

Steps:

  • In a small skillet, saute onion in oil until tender. In a microwave-safe dish, whisk together water and soup mix. Microwave, uncovered, on high for 1-1/2 to 2 minutes, whisking occasionally. Add soup to sauteed onions. Stir in the broccoli, tuna, milk, salt and lemon-pepper; bring to a boil. Reduce heat; simmer for 5 minutes or until broccoli is tender. Stir in rice. Cook and stir 2-3 minutes longer or until heated through. Sprinkle with almonds.

1 (10 3/4 ounce) can condensed broccoli cheese soup, undiluted (or can use cream of broccoli)
1/4 cup milk
12 ounces albacore tuna in water, drained and flaked
10 ounces frozen chopped broccoli, thawed
1/4 cup chopped onion
1/2 teaspoon garlic powder
2 -3 tablespoons butter, melted
1/3 cup breadcrumbs

Steps:

  • Prepare shells and cheese dinner according to package direction; drain but do not rinse.
  • Return cooked shells to hot pot.
  • Add in liquid cheese packet (from the shells & cheese dinner), condensed soup, milk, tuna, thawed broccoli, onion and garlic powder.
  • Gently stir to mix well.
  • Pour into a casserole dish.
  • In a small bowl, mix together melted butter and breadcrumbs.
  • Sprinkle the buttery breadcrumbs on top of the casserole.
  • Bake; uncovered for 25-30 minutes.
