Pasta With Tuna, Artichokes and Peppers image

A very easy throw-together meal that tastes gourmet. Weights of jars are approximate, just use similar sized jars that are available near you.

500 g uncooked penne pasta (or other medium pasta shape, I use wholemeal spirals)
200 g bottled roasted sweet red peppers, drained and chopped
400 g bottled artichoke hearts, drained and chopped
200 g tuna in water, drained
1/2 cup chopped fresh Italian parsley (Flat leaf)
1/4 cup olive oil (I use less ... use good quality oil) or 1/4 cup vegetable oil (I use less ... use good quality oil)
2 tablespoons good balsamic vinegar
1 1/2 tablespoons chopped fresh rosemary or 1 1/2 teaspoons dried rosemary
2 garlic cloves, minced
salt and pepper, to taste

Steps:

  • Cook pasta according to package directions.
  • While pasta is cooking, combine red peppers and remaining ingredients in a medium bowl; stir well.
  • When pasta is done, drain well and transfer to a large serving bowl. Add pepper-tuna mixture and toss.
  • Add salt and pepper to taste. Serve immediately.

Pasta With Tuna, Spinach, and Hot Pepper image

The original recipe came from the San Francisco Chronicle. The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach. If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use. However, I have used tuna in water when it was all I had in the pantry. Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version. Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!! I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it. This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). I look forward to reading your comments with your add ins :)

1 lb spaghetti or 1 lb linguine, whole wheat
1/2 cup extra virgin olive oil
2 -4 large minced garlic cloves, to taste
1/4-1 teaspoon hot red pepper flakes, to taste
2 (5 ounce) cans tuna in olive oil, drained
kosher salt, to taste
0.5 (10 ounce) bag spinach
1/2 lemon, juiced (optional)
parmesan cheese, shredded (optional)

Steps:

  • Bring a large pot of well-salted water to a boil over high heat. Add the pasta and boil until al dente.
  • While pasta cooks, heat olive oil in a large skillet on medium-low heat. Add the garlic and hot pepper flakes and cook until garlic is fragrant and sizzling. NOTE: start with the 1/4 teaspoon of red pepper flakes, then work up from there with your taste.
  • Add tuna and shred it into fine flakes with a spoon in your sauce. Season with salt and lemon juice, if desired. Lower the heat and keep warm while waiting for the pasta to cook.
  • Just before the pasta is ready, set aside 1 cup of the pasta water. Drain pasta and return it to the warm pot set over moderate heat.
  • Depending on the size of your pot and skillet: add the spinach and the tuna mixture to the pasta in the pasta pot, or add the drained pasta to the skillet with the tuna mixture and add the spinach.
  • Toss all of this together with tongs, moistening with some of the reserved pasta water. The spinach will wilt in the heat of the pasta. Divide among warm bowls and serve immediately.
  • Top with some parmesan cheese (if desired) and enjoy!

This salad tastes great, and is even better the next day! Just give it about an hour to come to room temperature.

6 tablespoons olive oil
1/2 cup pine nuts
2 cloves garlic, minced
1 large tomatoes, peeled,seeded,and coarsely chopped
1 (6 1/2 ounce) can tuna in water, drained
1 (5 ounce) jar roasted red peppers or 1 (5 ounce) jar pimientos, cut into strips (about 1/2 cup)
1/2 cup pitted black olives, coarsely chopped
2 tablespoons red wine vinegar
1 teaspoon salt
1/4 teaspoon black pepper
1 lb spinach fettuccine or 1 lb linguine
2 tablespoons minced parsley

Steps:

  • Heat the oil in a heavy 6-inch skillet over moderate heat for 1 minute.
  • Add the pine nuts and cook until lightly browned-about 2 minutes.
  • Stir in the tomato.
  • Transfer the mixture to a large bowl.
  • Stir in the tuna, red peppers, olives, vinegar, salt, and pepper.
  • (At this point, the sauce can be covered and allowed to stand at room temperature for up to 2 hours).
  • Cook the pasta according to package directions until al dente.
  • Drain in a colander, then add the pasta to the tuna sauce and mix well.
  • Sprinkle with the parsley.
  • Serve at room temperature.
  • You may serve this with sesame bread sticks and steamed asparagus.
  • Enjoy!
  • Serves 6.

4 tablespoons olive oil
1 onion, cut in thin strips
1 garlic clove, crushed
7 ounces roasted red peppers, drained, rinsed and cut in strips
1 (6 1/2 ounce) can tuna, drained
2 tablespoons black olives, pitted and chopped
1 lb spaghetti
2 tablespoons chopped fresh parsley

Steps:

  • Heat oil in a medium skillet; add onion; saute over low heat, stirring until tender and edges are just beginning to turn golden, about 8 minutes.
  • Stir in the garlic; saute 1 minute. Add the red peppers, tuna and olives; saute just to heat through.
  • Meanwhile, cook the spaghetti in plenty of boiling salted water until al dente, about 6 minutes. Drain.
  • Toss with the sauce and parsley. Serve hot.

6 bell peppers (a mixture of red, yellow or orange)
14 ounces pasta, shapes
3 tablespoons sherry wine vinegar (or white wine vinegar)
3 tablespoons olive oil
3 tablespoons capers, rinsed and chopped
12 ounces tuna packed in brine, drained and flaked
12 ounces black olives
2 ounces arugula leaves

Steps:

  • Heat the broiler to high. Put the peppers on a baking tray and grill until blackened, turning often to evenly color. Put in a bowl covered with plastic wrap to cool.
  • Cook the pasta following the pack instructions then drain and cool under cold running water. Set aside.
  • Make the dressing by whisking together the vinegar, oil and some salt and pepper. Stir in the capers then fold through half the pasta and tip onto a platter.
  • Once the peppers are cool enough to handle, peel off the blackened skin, remove the seeds and slice the flesh into strips. Add to the pasta.
  • Flake on the tuna and scatter the olives and arugula on top. Finish with the remaining dressing. Serve.
