SIMPLE SEAFOOD CHOWDER



Simple seafood chowder image

A chunky, creamy soup with salmon and smoked haddock, mixed shellfish and potatoes - a hearty meal

1 tbsp vegetable oil
1 large onion, chopped
100g streaky bacon, chopped
1 tbsp plain flour
600ml fish stock, made from 1 fish stock cube
225g new potato, halved
pinch mace
pinch cayenne pepper
300ml milk
320g pack fish pie mix (salmon, haddock and smoked haddock)
4 tbsp single cream
250g pack cooked mixed shellfish
small bunch parsley, chopped
crusty bread, to serve

Steps:

  • Heat the oil in a large saucepan over a medium heat, then add the onion and bacon. Cook for 8-10 mins until the onion is soft and the bacon is cooked. Stir in the flour, then cook for a further 2 mins.
  • Pour in the fish stock and bring it up to a gentle simmer. Add the potatoes, cover, then simmer for 10-12 mins until the potatoes are cooked through.
  • Add the mace, cayenne pepper and some seasoning, then stir in the milk.
  • Tip the fish pie mix into the pan, gently simmer for 4 mins. Add the cream and shellfish, then simmer for 1 min more. Check the seasoning. Sprinkle with the parsley and serve with some crusty bread.

1 cup corn, cooked

  • Add the seasonings and cream; heat.
  • Mix the butter and flour to a paste; add to vegetables.

No recipe I use is "set in stone" and any number of combinations can be used. Usually if I have any leftovers in the fridge they get thrown into another recipe. You have to gather the tumbleweed when it's just coming up about 4" high. Older plants are tough and to my knowledge inedible."

1/2 cup diced smoked ham
1 lb tumbleweed shoots

  • The computer threw a fit but then how many tumbleweed recipes do you see on here.
  • Missing ingredient 1 POUND TUMBLEWEED SHOOTS, young about 4 inches.

  • Do NOT edit.
  • Gather enough plants to make you a sizeable chowder. I guess maybe a pound or two for about 4 people is good. Wash the plants and chop them up real fine and put in a saucepan with enough water to barely cover. Salt and pepper to taste. I added a little fresh chopped jalapeno pepper to mine but that's optional. Throw in about 1/2 cup of finely diced smoked ham chunks, cover with lid and simmer until the tumbleweed is tender. Then you can run it all through a blender or food processor to puree. You should have a thick soup as an end result that tastes very well. I've tried it using bacon instead of ham and it's ok but I prefer ham. If you want a chunkier soup you don't have to puree it. There are quite a few variations. Any split pea soup recipe will do, substituting the tumbleweed for the peas of course.

1 can (9 ounces) potato sticks (about 6 cups)

Steps:

  • In a large microwave-safe bowl in a microwave or in a large metal bowl over simmering water, melt butterscotch chips and peanut butter; stir until smooth. Gently stir in potato sticks., Drop mixture by rounded tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate 10-15 minutes or until set.

This recipe can be cooked over coals,grill or stove and oven. The original recipe called for wild onions & buffalo berries. I have adapted. The meat was also venison. You can use beef,elk, antelope, turkey or ground chicken. Instructions look complicated but very easy.

2 lbs ground turkey or 2 lbs ground chicken
3 tablespoons oil
3 slices bacon, chopped, if you are not using bacon as the pan dripping, add 1/2 tsp salt (optional) or 3 slices salt substitute (optional)
2 (14 ounce) cans whole kernel corn, drained or 2 cups frozen corn, thawed
2 cups green seedless grapes, chopped fine
1 large yellow onion, diced
3 eggs
1 1/4 cups coarse yellow cornmeal
1/2 teaspoon pepper
Pam cooking spray
paprika (optional)
1/2 teaspoon garlic salt (optional)

Steps:

  • In blender or food chopper, chop the corn until it is very small pieces.(do not overdo) You don't want liquid.Set aside.
  • (I prefer to use the frozen thawed corn).
  • In large mixing bowl, add chopped corn, chopped grapes, onion, eggs and pepper. Beat until eggs are mixed. Set aside. If you want to add optional paprika and garlic salt, add to mixing bowl.
  • Cast Iron Skillet or Dutch Oven:.
  • Brown ground meat in the oil or in the raw chopped bacon pieces. Cook just until brown. Do not overcook. Add drained meat to corn mixture. Wipe out skillet or dutch oven with a paper towel. Season with a little grease or oil.
  • Add cornmeal to meat and corn mixture. Mix well. I use my hands. Add more cornmeal, a little at a time ie. 1 tablespoon at a time,if the mixture is runny. Should be moist.(note: you might have to use a total of 1 1/2 cups cornmeal or a little more if the corn is very moist.
  • Pack into cast iron dutch oven. Cover.
  • Note: I put a heat proof dish that will fit down inside on top of meat, then cover.
  • Put on grill medium heat for 45 minutes to 1 hour. Over hot coals 45 minutes.Cool at least 15 minutes. Cut slices in the dutch oven, then lift slices out to serving dish.
  • Meat Loaf pans:.
  • Spray with Pam. Pack into two loaf pans.
  • Bake 350* 45 minutes.
  • Bake 350* 1 hour to 1 hour 15 minutes if packed in a very large loaf pan.
  • Make sure you cool at least 15 minutes or longer. The loaf must set up.
  • Serve with gravy, white sauce, ketchup.
  • Slice for sandwiches, or add with fried potatoes.
  • I like to serve with fried potatoes and white gravy or just plain on a slice of.
  • bread or hogie roll.
  • This is a very moist meat loaf and definitely a full meal. You can add salsa or peppers after slicing if you prefer or any meat sauce. You may put the meat on fry bread and top with salsa also.

1 lb dried split peas
8 cups cold water
1 cup onion (chopped)
1/2 cup celery (chopped)
2 teaspoons salt
1/2 teaspoon dried marjoram
1/4 teaspoon black pepper
1 lb ground pork
3/4 teaspoon ground sage
3/4 teaspoon salt
1/8 teaspoon black pepper
3 potatoes, peeled and diced (3 cups)

Steps:

  • Rinse split peas.
  • In a large kettle or dutch oven, combine split peas, cold water, onion, celery, 2 teaspoons salt, marjoram and 1/4 teaspoon black pepper.
  • Bring to boiling, cover and simmer until peas are tender (about 1 hour).
  • Do not drain.
  • Meanwhile, combine ground pork, sage, 3/4 teaspoon salt and 1/8 teaspoon black pepper (mix thoroughly).
  • Shape mixture into 24 1-inch balls.
  • Drop meatballs and potatoes into soup mixture and return soup to boiling.
  • Cover and simmer 20 minutes longer (until potatoes are tender.
  • Adjust seasoning to taste.
