Could you obtain the recipe from the chef there?Lillian JohnsonSanta AnaDear Lillian: This delicious treatment for trout calls for stuffing, then breading and baking the fish. At the Wawona, it's a light entree served on a bed of sauteed vegetables. The restaurant uses red-fleshed trout, but it's good with any kind of trout.

3 large shallots, thinly sliced
6 tablespoons ( 3/4 stick) butter, divided
3 cups sliced mushrooms
4 cups thinly sliced fresh baby spinach leaves
1/2 teaspoon kosher salt
1/8 teaspoon black pepper
1/4 teaspoon nutmeg
4 (10-ounce) whole trout, cleaned and scaled, heads and tails on
1 cup flour
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup dried bread crumbs
1/2 teaspoon tarragon
1/2 teaspoon thyme
1/2 teaspoon white pepper
1/4 cup chopped toasted pecans

Steps:

  • Heat the oven to 375 degrees.
  • Cook the shallots in 2 tablespoons of the butter in a large pan over medium heat until translucent, about 3 minutes. Add the mushrooms and continue to cook another 5 to 10 minutes.
  • Add the spinach, kosher salt, pepper and nutmeg; continue cooking until the spinach is wilted, about 2 minutes. Transfer the mixture to a colander to drain; cool completely.
  • Place a small amount of filling inside the cavity of each fish. Combine the flour and salt on a flat plate, put the eggs into a shallow dish or pie pan. Combine the bread crumbs, tarragon, thyme and white pepper on another flat plate.
  • Dredge each stuffed trout in flour, shaking off the excess, then dip it in the eggs and then into the bread crumb mixture, pressing the crumbs onto the trout so that they will stay.
  • Bake the fish until it flakes with a fork, about 8 to 10 minutes.
  • While the fish is baking, melt the remaining 4 tablespoons butter in a small pan over low heat. Add the chopped nuts and cook the butter until it's golden brown.
  • To serve, place the trout on a serving platter and drizzle with the brown butter and pecan mixture.

FETA AND SPINACH STUFFED MUSHROOMS



Feta and Spinach Stuffed Mushrooms image

Use whole wheat breadcrumbs to add deeper flavor to the spinach, feta and basil stuffing for these mushrooms.

24 large white or cremini mushrooms, wiped clean, stems finely chopped for the filling
2 tablespoons extra-virgin olive oil
Kosher salt
4 tablespoons (1/2 stick) unsalted butter
2 cups packed chopped, stemmed spinach
Kosher salt and freshly ground black pepper
3/4 cup crumbled feta
1/4 cup chopped fresh basil
1 cup coarse fresh whole wheat breadcrumbs

Steps:

  • Preheat the oven to 425 degrees F.
  • If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the olive oil and 1/4 teaspoon salt in a large bowl.
  • Melt the butter in a large skillet over medium-high heat. Add the chopped mushroom stems and spinach and cook, stirring occasionally, until just soft and wilted, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and a few grinds of pepper and set aside to cool.
  • Add the feta and basil to the cooled mushroom stem mixture. Stir in the breadcrumbs until well moistened.
  • Pack each mushroom with an equal amount of filling and transfer the filled mushrooms to a rimmed baking sheet. Bake until the mushrooms are tender and the filling is brown and crispy on top, about 15 minutes. Let cool 5 minutes before removing from the baking sheet.

20 medium sized mushrooms
1 tablespoon butter
2 cloves garlic, minced
4 cups fresh spinach
8 oz cream cheese
salt, to taste
pepper, to taste
¼ cup breadcrumb
¼ cup parmesan cheese

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Remove the stems from the mushrooms. Place the top half on a baking sheet.
  • Mince the stems.
  • Melt the butter in a pan and add the minced stems and minced garlic. Stir and cook for 2 minutes.
  • Add the spinach, cook until it wilts.
  • Add the cream cheese, salt, and pepper. Stir until the cream cheese is melted and everything is well-combined.
  • Take a spoonful of the spinach mixture and fill each mushroom top.
  • Mix bread crumbs and Parmesan cheese in a bowl and sprinkle the mixture on top of the dip stuffed mushrooms.
  • Bake for 12-15 minutes or until golden brown.

2 tablespoons extra-virgin olive oil
3 cloves garlic, smashed
2 cups sliced cremini mushrooms
Kosher salt and freshly ground black pepper
10 ounces baby spinach
1 to 2 tablespoons balsamic vinegar

Steps:

  • Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
  • Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.

1 (10 ounce) package frozen spinach, thawed and drained
1 tablespoon extra virgin olive oil
1 garlic clove, minced
1/4 cup chopped onion
2 ounces crumbled feta cheese
1 tablespoon grated parmesan cheese
1/8 teaspoon nutmeg
1 tablespoon paprika
1 tablespoon oregano
salt and pepper

Steps:

  • Heat oil in saucepan.
  • Add garlic and onion and saute for a minute or two.
  • Add spinach to pan.
  • Saute until all water evaporates. About 3 minutes.
  • Take off heat. Add feta and parmesean. Season with nutmeg, salt and pepper.
  • Set aside to cool.
  • Season fish with salt and pepper.
  • Place about 2 tablespoons of filling onto the center of each piece of fish.
  • Roll fish aroung stuffing.
  • Place fish seam side down into baking dish.
  • Drizzle with olive oil (if desired).
  • Sprinkle fish with oregano and paprika.
  • Bake at 400 degrees uncovered for 30 minutes or until fish flakes easily with a fork.

1 tablespoon olive oil
1 tablespoon sweet butter
1/2 cup yellow onion, finely chopped
2 tablespoons walnuts, chopped
1 garlic clove, minced
5 ounces frozen chopped spinach
1 ounce feta cheese
1 ounce gruyere cheese
2 tablespoons fresh dill, minced
salt and pepper

Steps:

  • Wipe mushroom caps with damp cloth and set aside.
  • Heat olive oil and butter together in a small skillet. Add onion and cook over medium heat, covered, until tender and lightly colored.
  • Preheat oven to 400 degrees Fahrenheit.
  • Add walnuts and garlic to onion and cook for another minute. Add spinach (defrosted and squeezed dry) and cook for 5 minutes, stirring constantly. Stir in crumbled cheeses, dill, and salt and pepper.
  • Arrange mushrooms, cavity side up, in a baking dish. Divide spinach mixture among them.

This is from a small cookbook my DM picked up at the Gilroy Garlic Festival some years ago "Totally Garlic Cookbook" by Helene Siegel and Karen Gillinham. This sure looks like a meal meant to be cooked right here in my home...some feel I use too much garlic, I say Never too much garlic.

5 garlic cloves, peeled and sliced
1/2 bunch spinach, rinsed and trimmed
salt and pepper
4 small trout, bones and scales removed
flour
2 tablespoons butter
2 tablespoons olive oil
1 lemon, cut into 4 wedges

Steps:

  • Blanch the garlic slivers in boiling water 3 minutes. Drain, rinse with cold water, and rinse again.
  • Wilt the spinach leaves in a large dry pot over high heat, turning occasionally, 3 minutes. Remove from heat, squeeze out excess water and roughly chop. Combine in small bowl with garlic slivers, salt, and pepper.
  • Preheat oven to 400 degrees F. Season inside of trout with salt and pepper. Divide spinach mixture and tuck inside fish. Tie with string around center of each to hold stuffing. Dust the outsides with flour and season with salt and pepper.
  • Melt butter and oil in 2 large skillets over high heat. Fry the fish about a minutes per side. Transfer to oven and cook 4 minutes, turning after 2 minutes. Serve hot with lemon wedges.

Distribute the mixture evenly inside the fish, gently pressing the fish closed around the stuffing (if it ends up getting sliced entirely in half, that is ok, just place the stuffing on top of the bottom half and place the top half on top, pressing the fish close around the sutffing).
