1 1/2 pounds plum tomatoes (6 to 8 tomatoes)
2 1/2 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
1/4 to 1/2 teaspoon red pepper flakes
1/2 cup dry white wine
12 ounces spaghetti
1 5-ounce can light tuna packed in water, drained
Freshly ground pepper
1/2 cup roughly chopped fresh basil

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, puree the tomatoes in a blender or food processor; set aside. Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is just golden, about 2 minutes. Increase the heat to medium high, add the wine and cook until reduced by half, about 1 minute. Add the pureed tomatoes and 3/4 teaspoon salt and simmer, stirring, until the sauce thickens slightly, about 6 more minutes. Remove from the heat and keep warm.
  • Add the pasta to the boiling water and cook as the label directs; drain. Return the skillet to medium heat, add the pasta and tuna and cook, tossing, 1 minute. Season with salt and pepper. Remove from the heat and stir in the basil.

3 tablespoons extra-virgin olive oil, plus more for drizzling
4 cloves garlic, thinly sliced
1 small onion, diced
1 teaspoon dried oregano
Kosher salt
1 28-ounce can whole peeled tomatoes, crushed by hand
1/2 cup chopped fresh basil
1 pound spaghetti
2 tablespoons unsalted butter, cut into cubes

Steps:

  • Combine the olive oil and garlic in a large skillet. Cook over medium heat until the garlic is golden around the edges, about 3 minutes. Add the onion, oregano and 1 teaspoon salt. Cook, stirring, until the onion is soft but not browned, about 10 minutes. Add the tomatoes and their juices and 1/2 cup water; continue cooking until the sauce is slightly reduced, about 20 minutes. Stir in the basil and season with salt. Keep warm over low heat.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Add the pasta to the sauce along with the butter and 1/2 cup of the reserved cooking water. Increase the heat to medium and toss to coat, adding the remaining cooking water as needed to loosen the sauce. Transfer the pasta to bowls and drizzle with olive oil.

1 tablespoon extra-virgin olive oil, plus more for drizzling

1/4 to 1/2 teaspoon red pepper flakes, plus more to taste
1 28-ounce can whole San Marzano tomatoes, crushed by hand
1 1-inch piece parmesan cheese rind
1 cup loosely packed fresh basil, sliced, plus more for topping
3/4 pound bay scallops

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs.
  • Meanwhile, heat the olive oil in a saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic softens, about 1 minute. Add the tomatoes, parmesan rind, 1/2 cup water and half of the basil. Bring the sauce to a boil, then stir and reduce the heat to medium low; simmer 15 minutes. Season with salt.
  • Increase the heat under the sauce to medium high, add the scallops and cook, stirring occasionally, until opaque, about 5 minutes. Remove the parmesan rind, add the remaining basil and season with salt and more red pepper flakes.
  • Drain the pasta and add to the skillet with the sauce; toss. Divide the pasta among bowls, drizzle with olive oil and top with more basil.

4 -5 Italian sausages, sliced (spicy if you can find it, To make sure it is firm enough to slice well, freeze for about an hour.)
1 diced onion
2 minced garlic cloves
2 tablespoons olive oil
1 green bell pepper, diced
1 red bell pepper, diced
4 -5 mushrooms, diced (baby portabellas if you can find them)
5 roma tomatoes, diced (or 1 can of diced tomatoes)
2 (14 ounce) cans tomato sauce
2 tablespoons oregano
2 tablespoons basil
1 tablespoon thyme
1 -2 tablespoon crushed red pepper flakes
salt

Steps:

  • In a large sauce pan, add olive oil and heat it on high. Add the sliced sausage and cook until well browned. Make sure to stir often or tends to burn.
  • Once browned, remove from pot and set aside.
  • Heat the olive oil over med-hi heat. Add the diced onion and peppers. Add a pinch of salt and simmer until onions until well softened.
  • Add garlic and mushrooms and cook until garlic just starts to brown.
  • Add diced tomatoes and lower heat to med-low heat and cover. Let simmer for 10 - 15 minutes.
  • Remove cover and add tomato sauce herbs, crushed pepper, and cooked sausage.
  • Cover and cook on low to med-low heat for at least 20 minutes stirring from time to time. The longer it cooks, the better it tastes.

1 pound ground beef
1 large onion, chopped
1 can (46 ounces) tomato juice
1 can (12 ounces) tomato paste
1 can (4 ounces) mushroom stems and pieces, drained
2 tablespoons minced fresh parsley
1 tablespoon garlic salt
1 tablespoon dried basil
2 teaspoons sugar
2 teaspoons dried oregano
1/4 to 1/2 teaspoon crushed red pepper flakes
3 bay leaves
Hot cooked spaghetti

Steps:

  • In a Dutch oven, cook the beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomato juice, tomato paste, mushrooms and seasonings; bring to a boil., Reduce heat; simmer, uncovered, for 2-1/2 hours, stirring occasionally. Discard bay leaves. Serve with spaghetti.

1/4 cup chopped fresh parsley

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium heat. Add shrimp and garlic, cook and stir 3 to 4 min. or until shrimp turn pink. Remove shrimp from skillet; cover to keep warm. Add pasta sauce and tomatoes to skillet; cook on medium-low heat 5 to 8 min. or until heated through, stirring frequently.
  • Drain pasta. Add to pasta sauce mixture in skillet; mix lightly. Top with shrimp; sprinkle with parsley.
