PEANUT BUTTER AND JELLY PIZZA

Steps:

• SPLIT and toast English muffin. Spread peanut spread on both sides of muffin. Spread or squeeze fruit spread over peanut butter.
• TOP with banana slices. Drizzle with warmed fudge topping to taste. Sprinkle with coconut, if desired.

TRIPLE THREAT PEANUT BUTTER COOKIES

Steps:

• Lightly spoon the flours into the measuring cups, and level with a knife. Add to a medium bowl, along with the powdered peanut butter, baking powder, salt, and cornstarch. In a large bowl, whisk together the butter and egg whites. Stir in the peanut butter, brown sugar, and vanilla. Add the dry ingredients into the wet, stirring just until incorporated. Fold in 1/3 cup of peanut butter chips. Cover the cookie dough with plastic wrap, and chill for at least 1 hour.
• Preheat the oven to 350°, and line two baking sheets with parchment paper.
• Drop spoonfuls of batter onto the prepared cookie sheets. Shape the cookie dough so that it's as tall as it is wide. (This is important!!) Press 2-3 of the remaining peanut butter chips into the top of each dough ball. Reshape the dough if necessary (make sure they're as tall as they are wide!), and bake at 350° for 10-12 minutes. Cool on the pan for 5 minutes before turning out onto a wire rack.

Steps:

• Preheat oven to 350F. Spray a 9-inch pie dish with floured cooking spray; set aside.
• In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
• Wait momentarily before adding the egg so you don't scramble it. Add the egg, brown sugar, peanut butter, vanilla, and whisk until smooth.
• Add the flour, optional salt, and stir until just combined; don't overmix.
• Turn batter out into prepared pie dish, smoothing the top lightly with a spatula.
• Evenly insert the peanut butter cups into the batter, pushing them down so the top is almost flush with the surface of the dough.
• Evenly insert the M&Ms into the batter, pushing them down to anchor.
• Bake for about 28 to 30 minutes, or until a toothpick inserted in the center comes out mostly clean, or with a few moist crumbs, but no batter. If your pie has risen in the center, it will deflate as it cools.
• Allow pie to cool in pan for at least 30 minutes before slicing and serving; however, for optimal results, cool overnight because it gives the flavors a chance to marry and the pie to really set up fully.

Steps:

• Preheat oven to 350 degrees and spray 8x8 pan with baking spray.
• In stand mixer mix together peanut butter, butter and sugar on medium speed until fluffy, 2-3 minutes.
• Add in the brown sugar, eggs and vanilla until creamy.
• Lower speed to low, then add in flour, baking powder and salt until just combined.
• Fold in the peanuts and peanut butter chips.
• Spread mixture evenly into baking pan and bake for 30-35 minutes.

• Press cookie dough onto a greased 14-in. pizza pan. Bake at 350 degrees for 12-15 minutes or until golden brown. Sprinkle with chocolate chips; let stand for 4-5 minutes. Steps:

• For the pizza: Preheat the oven to 450 degrees F.
• Grease a 12-inch cast-iron skillet with the oil. Place the pizza dough in the center and spread evenly to cover the bottom and 1 inch up the sides. Spread the peanut butter evenly over the dough followed by the marinara sauce. Sprinkle with the mozzarella followed by the pepperoni and then the jalapeno.
• Bake until the cheese melts and browns and the edges are crisp, about 20 minutes. (This is a good time to start the salad.) Remove from the oven and let sit for 5 minutes, then drizzle with hot honey before serving.
• For the salad: Whisk together the vinegar, garlic, mustard, honey, 1/2 teaspoon salt, pinch of black pepper and the oil in a medium bowl until combined. Set aside and let the garlic infuse the dressing, about 5 minutes. Remove the garlic and add the lettuce, radicchio if using, tomatoes, pepperoncini and onion; lightly toss to coat in the dressing. Serve with the pizza.

SPICY THAI CHICKEN PIZZA WITH PEANUT SAUCE

Steps:

• Preheat oven to 425°F; do not bake the Boboli yet.
• In a microwave safe bowl, add garlic, gingerroot, peanut butter, honey, vinegar, soy sauce and pepper flakes. Microwave until peanut butter is melted (about 1 minute). Mix well with a whisk.
• Take pre-baked pizza crust out of the package and top with peanut sauce, cheese, bell pepper and cooked chicken. Bake for 5 minutes or until cheese is melted.
• Meanwhile, prepare other vegetables.
• Remove crust from oven and top with remaining vegetables, peanuts and cilantro.
• Cut and serve immediately while the crust is still hot! Enjoy!
