TRIPLE CHOCOLATE MINT COOKIE RECIPE

Mint and chocolate are a match made in heaven, and these tender, chewy cookies are no exception!

16 ounces semi-sweet chocolate (I used chocolate chips)
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
3/4 teaspoon salt
4 large eggs
2 teaspoon vanilla extract
10 tablespoons 1 1/4 sticks unsalted butter, (softened)
1 1/2 cup packed brown sugar
1/2 cup granulated sugar
1 1/2 cups Andes mint chocolate baking bits (or any mint-chocolate chocolate bar, crushed)

Steps:

  • Preheat the oven to 350 degrees F, with the oven racks in the upper-middle and lower-middle positions. Line 2 large baking sheets with parchment paper.
  • In a medium bowl, melt semi-sweet chocolate. This can be done by placing the bowl over a pot of simmering water (for a make-shift double-boiler) or in the microwave at 50% power. Stir and set aside to cool.
  • In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. In the bowl of a stand mixer (or in a large bowl, using a hand electric mixer), beat butter, brown sugar, and granulated sugar at medium at speed until the mixture is light and fluffy, 3 to 5 minutes. Add one egg a time to the butter mixture, beating after each addition. Add vanilla extract and beat until combined. Add the cooled melted chocolate and beat until well combined.
  • Reduce the mixer speed to low and gradually add the flour mixture. Mix until just combined. Stir in mint-chocolate baking bits. Cover the bowl with plastic wrap and let the mixture sit at room temperature for 15 to 20 minutes, or until the mixture is easy to scoop and fudge-like.
  • Using 3 tablespoons of dough for each cookie, roll the dough into balls and place on the prepared baking sheets, 2 inches apart. Place the baking sheets in the oven and bake for 10 to 12 minutes, switching the position of the sheets and rotating them back to front halfway through baking. The cookies are baked when the edges are set, but the center are still soft. The cookies will still look a little raw in between the cracks, but are done.
  • Let the cookies cool on the baking sheets for 10 minutes, then remove to a wire rack. Repeat with the rest of the dough, using cooled cookie sheets. Serve the cookies warm or at room temperature.

This recipe from "Hershey's Kitchen" will satisfy the strongest chocolate craving while leaving a refreshing aftertaste. (This cookie can be made with any flavour chips and all by itself).

1 cup butter, softened
1 cup granulated sugar
3/4 cup packed light brown sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
2 eggs
2 cups all-purpose flour
1/2 cup cocoa
1 teaspoon baking soda
1 2/3 cups mint chocolate chips

Steps:

  • Heat over to 375 degrees F.
  • Beat butter, granulated sugar, brown sugar, vanilla and salt in a large bowl until creamy.
  • Add eggs; beat well.
  • Stir together flour, cocoa and baking soda.
  • Gradually add flour mixture to butter mixture beating until well blended.
  • Add chocolate chips to batter.
  • Drop by rounded teaspoons onto an ungreased cookie sheet.
  • Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack.
  • Cool completely.

1 cup butter, softened
1 teaspoon vanilla extract
2 large eggs
3 cups flour
3/4 teaspoon baking soda
1 cup semi-sweet chocolate chips
1 cup milk chocolate chips
1 cup white chocolate chips
1 cup nuts (optional)

Steps:

  • Preheat oven to 350F and line cookie sheets with parchment paper.
  • Cream sugars and butter until light.
  • Add eggs and vanilla, beat until fluffy.
  • Sift dry ingredients and add to butter mixture, mixing well.
  • Mix in chips and nuts, if using.
  • Drop spoonfuls of batter onto cookie sheets and bake 10-12 minutes.
  • Cookies should brown but remain soft.
  • Cool on wire racks.
  • These freeze very well.

1 (17 1/2 ounce) sugar cookie mix (the 1 lb. 1.5 oz Betty crocker pouch)
1/2 cup butter, softened (1 stick)
1/4-1/2 teaspoon peppermint extract (NOT mint, mint is like a toothpaste smell or taste)
6 -8 drops green food coloring
1 egg
1 cup creme de menthe baking chips (such as Andes baking chips)
1 cup semisweet chocolate chunk

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms.
  • Stir in creme de menthe baking chips and chocolate chunks.
  • Using a small cookie scoop or teaspoon, drop dough 2 inches apart on a parchment-lined cookie sheet.
  • Bake 8 to 10 minutes or until set.

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, at room temperature
1/2 cup brown sugar, packed
6 tablespoons granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
3/4 cup white chocolate chips
3/4 cup milk chocolate chips

Steps:

  • Position a rack in the middle of the oven and preheat to 350 degrees F.
  • Line 2 rimless baking sheets with parchment paper.
  • In a bowl, sift together the flour, baking soda and salt and set aside.
  • In a large bowl, combine the butter, brown sugar and granulated sugar.
  • Beat with a wooden spoon until smooth.
  • Add the egg and vanilla and beat until well blended.
  • Slowly add the dry ingredients and stir just until incorporated.
  • Stir in the chocolate chips.
  • Drop the dough by heaping tablespoons onto the prepared baking sheets, spacing the cookies 2" apart.
  • Bake the cookies, 1 sheet at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched, 10 to 13 minutes.
  • Let the cookies cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
  • Store in an airtight container at room temperature for up to 3 days.

100g soft brown sugar
100g golden caster sugar
100g butter , softened
1 egg
1 tsp vanilla extract
225g plain flour
140g milk chocolate , melted
85g white chocolate , chips or chopped into chunks
85g plain chocolate , chips or chopped into chunks

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line 1-2 baking sheets with baking parchment. Mix the sugars and butter together with a wooden spoon, then add the egg, vanilla, flour and half the melted milk chocolate and mix together. Stir in the white and plain chocolate chips or chunks, then use an ice-cream scoop or round tablespoon (like a measuring spoon) to scoop out balls of cookie dough and drop them straight onto the trays.
  • Bake in batches for 8-9 mins until pale golden and still soft to touch - they will firm up as they cool. Carefully transfer to a wire rack as soon as they can be lifted up, then drizzle with the remaining melted chocolate.

10 ounces bittersweet chocolate or 10 ounces semisweet chocolate, chopped
3 ounces unsweetened chocolate, chopped
1/4 cup unsalted butter, cut into chunks. (I use vegan spread Earth Balance)
3 eggs, at room temp
1 cup sugar
1 tablespoon espresso powder or 1 tablespoon brewed coffee
2 teaspoons vanilla
6 tablespoons flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups chocolate chips (dark, white, semi-sweet, bittersweet, your pick)
1 cup finely chopped toasted pecans (optional)

Steps:

  • Put chopped chocolates and butter (first three ingredients) into a sauce pan over low heat and melt.
  • Once melted, remove from heat and set aside to cool slightly.
  • Mix eggs, sugar, espresso powder, and vanilla.
  • Add the melted chocolate to the egg/sugar batter. Mix well.
  • Next add the flour, baking powder, and salt to the batter. Mix well.
  • Lastly, add chocolate chips and pecans.
  • Chill dough for approximately 60 minutes or until it can hold a shape.
  • Line a baking sheet with parchment paper and scoop dough in small balls on paper - space about 1 inch apart from each other.
  • Press dough to flatten.
  • Bake at 350 for 10 minutes. No not overbake!
  • When cookies are cool, drizzle melted chocolate over top of cookies if you wish!
