TRIPLE CHOCOLATE MINT COOKIE RECIPE
Mint and chocolate are a match made in heaven, and these tender, chewy cookies are no exception!

- Preheat the oven to 350 degrees F, with the oven racks in the upper-middle and lower-middle positions. Line 2 large baking sheets with parchment paper.
- In a medium bowl, melt semi-sweet chocolate. This can be done by placing the bowl over a pot of simmering water (for a make-shift double-boiler) or in the microwave at 50% power. Stir and set aside to cool.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. In the bowl of a stand mixer (or in a large bowl, using a hand electric mixer), beat butter, brown sugar, and granulated sugar at medium at speed until the mixture is light and fluffy, 3 to 5 minutes. Add one egg a time to the butter mixture, beating after each addition. Add vanilla extract and beat until combined. Add the cooled melted chocolate and beat until well combined.
- Reduce the mixer speed to low and gradually add the flour mixture. Mix until just combined. Stir in mint-chocolate baking bits. Cover the bowl with plastic wrap and let the mixture sit at room temperature for 15 to 20 minutes, or until the mixture is easy to scoop and fudge-like.
- Using 3 tablespoons of dough for each cookie, roll the dough into balls and place on the prepared baking sheets, 2 inches apart. Place the baking sheets in the oven and bake for 10 to 12 minutes, switching the position of the sheets and rotating them back to front halfway through baking. The cookies are baked when the edges are set, but the center are still soft. The cookies will still look a little raw in between the cracks, but are done.
- Let the cookies cool on the baking sheets for 10 minutes, then remove to a wire rack. Repeat with the rest of the dough, using cooled cookie sheets. Serve the cookies warm or at room temperature.

I am not the greatest mint lover but even I have to admit that the fusion of mint and chocolate will silence the toughest critic. - Heat over to 375 degrees F.
- Beat butter, granulated sugar, brown sugar, vanilla and salt in a large bowl until creamy.
- Add eggs; beat well.
- Stir together flour, cocoa and baking soda.
- Gradually add flour mixture to butter mixture beating until well blended.
- Add chocolate chips to batter.
- Drop by rounded teaspoons onto an ungreased cookie sheet.
- Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack.

I got this recipe in my e-mail from a Betty Crocker mailing, and it was a 2010 prize-winning recipe. The cookie dough is tinted green, so they are great for St. Patrick's Day or a holiday tray.

- In a large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms.

- Position a rack in the middle of the oven and preheat to 350 degrees F.
- Line 2 rimless baking sheets with parchment paper.
- In a bowl, sift together the flour, baking soda and salt and set aside.
- In a large bowl, combine the butter, brown sugar and granulated sugar.

- Heat oven to 200C/180C fan/gas 6. Line 1-2 baking sheets with baking parchment. Mix the sugars and butter together with a wooden spoon, then add the egg, vanilla, flour and half the melted milk chocolate and mix together. Stir in the white and plain chocolate chips or chunks, then use an ice-cream scoop or round tablespoon (like a measuring spoon) to scoop out balls of cookie dough and drop them straight onto the trays.

TRIPLE CHOCOLATE FUDGE COOKIES
These cookies are delicious bites of chocolate goodness! This recipe only has 6 tablespoons of flour, so the texture is more fudge like than cookie. These cookies take a little longer to prep because they need to be chilled for about 60 minutes before baking. Well worth your time though - bake them up for a special dinner or party. Enjoy!

- Put chopped chocolates and butter (first three ingredients) into a sauce pan over low heat and melt.
- Once melted, remove from heat and set aside to cool slightly.
- Mix eggs, sugar, espresso powder, and vanilla.
- Add the melted chocolate to the egg/sugar batter. Mix well.
- Next add the flour, baking powder, and salt to the batter. Mix well.
- Lastly, add chocolate chips and pecans.
- Chill dough for approximately 60 minutes or until it can hold a shape.
- Line a baking sheet with parchment paper and scoop dough in small balls on paper - space about 1 inch apart from each other.
- Press dough to flatten.
- Bake at 350 for 10 minutes. No not overbake!
- When cookies are cool, drizzle melted chocolate over top of cookies if you wish!

- Cream together, butter, sugar and eggs. Mix in remaining ingredients. Blend well.
- Drop by teaspoonful onto a cookie sheet. Bake at 350 degrees F (175 degrees C) for 8-9 minutes. Cookies will be soft. Cool about 1 minute on cookie sheet then remove to a wire rack to cool completely.
