The Best Beef Tri-Tip image

I received a food wish for roast beef recently, which can be done with many different cuts. I ended up deciding on beef tri-tip, since it's affordable, flavorful, great for parties, and, using this low-temp roasting technique, nearly fool-proof. No marinating, no searing, no nothing; just rub on some salt and spices and pop it into the oven until it reaches the doneness you want. Plate it up with a Romano bean salad or enjoy as a roast beef sandwich!

2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
1 tablespoon smoked paprika
1 teaspoon garlic powder
¼ teaspoon cayenne pepper
1 teaspoon dried rosemary
1 tablespoon chopped fresh rosemary leaves
1 (2 1/2 pound) beef tri-tip roast
½ cup beef broth

Steps:

  • Preheat the oven to 225 degrees F (110 degrees C).
  • Mix salt, pepper, paprika, garlic powder, cayenne, dried rosemary, and fresh rosemary together in a small bowl.
  • Place tri-tip in a baking pan. Season generously with the spice rub until both sides are completely covered.
  • Bake in the preheated oven until an instant-read thermometer inserted into the thickest part reads 130 degrees F (54 degrees C) for medium-rare, or until desired doneness, 1 1/2 to 2 hours. Flip meat over halfway.
  • Cover pan with aluminum foil and let meat rest for 20 minutes. Remove tri-tip to a cutting board and cut into 2 pieces along where the grain changes direction. Slice meat across the grain and transfer to serving plates.
  • Mix beef broth in with the pan drippings and drizzle over the slices.

1 tri-tip steak, about 2 to 2 1/2 pounds, or other 2-inch-thick steak
Salt
freshly ground black pepper
1 cup cherry tomatoes
2 tablespoons almonds, shelled
3 garlic cloves, peeled and lightly crushed
1 jalapeño pepper, seeded and chopped, optional
1 to 2 tablespoons sherry or red wine vinegar, or to taste
1/3 cup olive oil
1/2 teaspoon pimentón or other chili powder, optional

Steps:

  • Heat oven to 500 degrees. Generously season both sides of steak with salt and pepper. Put a large cast-iron skillet over high heat. When it is very hot, add steak to one side of pan and tomatoes, almonds, garlic cloves and jalapeños, if you are using them, to the other. Sear steak for 3 to 5 minutes, stirring tomato mixture once or twice.
  • Once a nice crust has formed on one side of steak, turn it over, carefully transfer the now-charred tomato mixture to a food processor, and put pan in oven. (If tomatoes are not a bit blackened, leave them in pan and check again after a minute or two in oven.) Cook until steak is rare to medium-rare, about 6 to 12 minutes longer depending on its thickness (an instant-read thermometer will register 125 degrees when steak is medium-rare). Transfer steak to a plate and let it rest for 5 to 10 minutes.
  • While steak is cooking or resting, add vinegar and olive oil to tomato mixture in food processor, and season with salt, pepper and pimentón or chili powder if using. Process, adding more olive oil or vinegar as you like, until mixture reaches desired consistency. Sauce should still be a little crunchy from almonds.
  • Slice steak thinly, against grain. Serve with sauce.

4 leeks, cleaned and root ends intact
2 tablespoons cocoa nibs
2 tablespoons olive oil
1 tablespoon red wine vinegar
Smoked flaky sea salt
100 grams (7 tablespoons) smoked paprika
25 grams (1 2/3 tablespoons) dark cocoa powder
25 grams (1 2/3 tablespoons) onion powder
20 grams (1 1/3 tablespoons) ground cumin
20 grams (1 1/3 tablespoons) garlic powder
20 grams (1 1/3 tablespoons) smoked flaky sea salt, such as Maldon
20 grams (1 1/3 tablespoons) sugar
1 tablespoon instant ground coffee
4 bone-in rib eyes, each 1 1/2-inches thick
400 grams (14 ounces) piquillo peppers
100 grams (1/2 cup) olive oil
1/2 cup chopped white chocolate
1/2 cup sun-dried tomatoes
1/4 cup sherry vinegar
1 tablespoon smoked paprika
15 grams or 2 1/2 teaspoons kosher salt
6 cloves garlic
200 grams (8 ounces) Marcona almonds, toasted
Neutral cooking oil

Steps:

  • For the leeks: Preheat the oven to 475 degrees F. Line a baking sheet with a wire rack.
  • Put the whole leeks on an unlined sheet tray and bake, flipping halfway through, until completely charred, about 20 minutes. Allow to cool to the touch.
  • For the cocoa blackened steak: Combine the smoked paprika, cocoa powder, onion powder, cumin, garlic powder, smoked salt, sugar and coffee in a bowl. Divide the mixture between the each of the rib eyes and let sit for 15 minutes.
  • For the leeks: Once the leeks are cool to the touch, remove the outer layers, revealing the soft leeks inside. Finely chop the leeks and add to a bowl. Add the cocoa nibs, olive oil and red wine vinegar and season with the smoked sea salt. Taste and adjust the seasoning.
  • For the Marcona almond romesco: Blend the peppers, olive oil, white chocolate, tomatoes, sherry vinegar, smoked paprika, salt and garlic in a blender until smooth. Add the almonds to a food processor and pour over the blended sauce. Pulse until coarse, not smooth.
  • Heat a 14-inch cast-iron skillet over medium-high heat. Add 2 tablespoons cooking oil and the steaks and cook on both sides until evenly charred, about 7 minutes per side, searing in batches if needed. Remove from the skillet and put on the rack on the sheet tray. Let rest for 10 minutes before slicing.
  • Serve the steak alongside the romesco and the leek condiment.
