These Traeger ribs are coated in a bold dry rub and smoked to mouth-watering perfection! They fall right off the bone and are perfect for picnics and BBQs!

2 racks Pork Ribs (, St Louis style or baby back pork ribs)
1/4 Cup Smoked Paprika
1/2 Cup Dark Brown Sugar
1 tablespoon Black Pepper
1 tablespoon Garlic Powder
2 teaspoon Cumin
1 tablespoon Kosher Salt
1 teaspoon Cayenne
1/2 Cup Dark Brown Sugar
1/3 Cup Honey
1/2 Cup Dijon Mustard
1/2 Cup Apple Cider

Steps:

  • Mix all ingredients together and set aside.
  • Check the underside of the ribs. If there is a thin layer of silver skin, remove it from the bone-side of the ribs by working the tip of a butter knife underneath the membrane (choose to pierce it over a middle bone.) Use paper towels to get a firm grip, then tear the membrane off.
  • In a small bowl, combine the mustard, 1/4 cup of apple cider (reserve the rest). Spread the mixture thinly on both sides of the ribs and season with the rub.
  • Set the Smoker temperature to 180℉ and preheat with the lid closed for 15 minutes.
  • Smoke the ribs, meat-side up for 3 hours. Transfer the ribs to a rimmed baking sheet and increase the grill temperature to 225℉.
  • Tear off 4 long sheets of Peach Butcher Paper or tin foil. Place the butcher paper (or foil) down with a rack of ribs on top and pull up the sides of the paper to keep the liquid enclosed.
  • Sprinkle half the brown sugar on the rack, then top with half the honey and 3/4 of the remaining apple juice. Lay another piece of paper (or foil) on top and tightly crimp the edges so there is no leakage. Repeat with the remaining rack of ribs.
  • Return the ribs to the grill and cook for an additional 3-4 hours.
  • Arrange the ribs directly on the grill grate and continue to grill 60 minutes more.

Traeger's famous 321 Ribs recipe is super simple to make. Start by smoking for 3 hours, then cook inside foil for 2 hours and finish in sauce for an hour.

Traeger 'Que BBQ Sauce

Steps:

  • If your butcher has not already done so, remove the thin silverskin membrane from the bone-side of the ribs by working the tip of a butter knife or a screwdriver underneath the membrane over a middle bone. Use paper towels to get a firm grip, then tear the membrane off.
  • In a small bowl, combine the mustard, 1/4 cup of apple juice (reserve the rest) and the Worcestershire sauce. Spread the mixture thinly on both sides of the ribs and season with Traeger Pork & Poultry Rub.

  • After the ribs have smoked for 3 hours, transfer them to a rimmed baking sheet and increase the grill temperature to 225℉.
  • Tear off four long sheets of heavy-duty aluminum foil. Top with a rack of ribs and pull up the sides to keep the liquid enclosed. Sprinkle half the brown sugar on the rack, then top with half the honey and half the remaining apple juice. Use a bit more apple juice if you want more tender ribs. Lay another piece of foil on top and tightly crimp the edges so there is no leakage. Repeat with the remaining rack of ribs.
  • Return the foiled ribs to the grill and cook for an additional 2 hours, or until internal temperature reaches 205℉.
  • Carefully remove the foil from the ribs and brush the ribs on both sides with Traeger 'Que Sauce. Discard the foil. Arrange the ribs directly on the grill grate and continue to grill until the sauce tightens, 30 to 60 minutes more.
  • Let the ribs rest for a few minutes before serving. Enjoy!

1/3 cup brown sugar
1/4 cup paprika
1/8 cup chili powder
2 tablespoons garlic powder
2 tablespoons onion powder
1 teaspoon cayenne pepper

1 teaspoon dry mustard
1 teaspoon ground cumin
3/4 cup yellow mustard
2 cups apple juice

Steps:

  • Remove the thin white membrane from the back of the ribs. Start with a knife and use a paper towel to grip it and peel it off.
  • Mix all spices together, excluding the yellow mustard.
  • Rub yellow mustard all over the ribs.
  • Rub spice mixutre all over ribs, cover and refrigerate overnight.
  • Remove ribs from refrigerator and start Traeger grill on smoke for 10 minutes.
  • Put ribs on grill and cook on smoke for 1 hour.
  • Change heat setting to 225-250 and cook for another 2 hours.
  • Spray ribs with apple juice and cover with aluminum foil tightly and cook at 250-275 for another hour. You want to keep the steam from the juice inside the foil to keep the ribs juicy and tender.
  • Remove foil from ribs and spread your favorite BBQ sauce or glaze over the ribs and cook for 1 hour at 250-275.
  • 1Remove ribs from Traeger and cover with foil for 20 minutes.
  • Cut up and enjoy!

3 tablespoons beef rub
3 cups barbecue sauce

Steps:

  • Coat the beef ribs with the rub, and preheat your grill to 180° (or the smoke setting) according to factory directions.
  • Place on the grill and smoke for 2 hours.
  • Turn the heat up to 275°, and cook for another 2 hours.
  • Turn the heat up to 325°, baste with barbecue sauce every 10 - 15 minutes for the last hour, or until the ribs are fork tender. The time can vary here depending on your meat.
  • Remove, let rest for 10 minutes and serve.

Master these competition style pork ribs. Seasoned with a Traeger pork rub, wrapped with a brown sugar and butter mixture and finished on the pellet grill.

Traeger Pork & Poultry Rub

(1/2 stick) unsalted butter

Traeger Sweet & Heat BBQ Sauce

Steps:

  • Remove the membrane from the back of the ribs. Season with Traeger Pork & Poultry Rub on both sides. Let the ribs rest for 15-20 minutes.
  • When ready to cook, set the Traeger temperature to 225℉ and preheat with the lid closed for 15 minutes. For optimal flavor, use Super Smoke, if available.
  • Place ribs on the grill, bone-side down, and cook for 3 hours.
  • While the ribs are cooking, prepare the brown sugar wrap. In a small bowl, mix together the brown sugar, butter, and agave. Spread half of the mixture on each of two double-layered sheets of aluminum foil, approximately the same size and shape of the racks of ribs.
  • After 3 hours, remove the ribs from the grill and place each rack, meat-side down, on a foil pack. Wrap tightly. Increase the Traeger temperature to 250°F and place the wrapped ribs, meat-side down, on the grill. Insert the probe into the center of a rack of ribs, avoiding the bones. Close the lid and grill until the internal temperature reaches 204°F, about 1 1/2-2 hours.
  • Remove ribs from the grill and unwrap the foil packets. Place unwrapped the ribs back on the grill grates, close the lid, and cook for 10 minutes. Remove from the grill and brush both sides with Traeger Sweet & Heat BBQ Sauce, then return to the grill, close the lid, and cook for 10 minutes more. Slice between the bones into individual ribs and serve. Enjoy!

  • Prepare your pellet grill according to manufacturer instructions. For a Traeger, fill the pellet hopper, and turn the temperature gauge to SMOKE. Leave lid open. Once a fire has been established and grill is smoking (about 4-5 minutes), turn the temperature gauge to 180° F. Let the grill preheat for 15 minutes with the lid closed.
  • Step #1- BBQ Baby Back Ribs In The Smoker: Remove silverskin from ribs (if your grocery store butcher has not already done so). Pat ribs dry with paper towels. Mix mustard, ¼ cup apple juice, and worcestershire sauce together in a small bowl. Brush sauce onto BOTH sides of each rib rack. Lightly season (to taste) the ribs with your favorite pork and poultry rub spice mix. I used my homemade dry rub spice mix . Place racks of ribs directly onto the grill grate, with meat side facing up. Smoke ribs for 3 hours, with the lid closed. Once done, transfer ribs off of grill onto a rimmed baking sheet. Close lid. Turn temperature setting up to to 225° F.
  • Step #2- For each rack: Pull off 4 long sheets of heavy duty foil. Stack them on top of each other. Put one rack of smoked ribs on top in the middle. Pull up the sides to surround the meat, because you will be adding liquid. Evenly distribute HALF of the brown sugar on top of the ribs. Drizzle with HALF of the honey, and remaining ¼ cup of apple juice. Put another long piece of aluminum foil on top of the ribs, and tightly close up foil, crimping the edges, so the packet is securely sealed. You don't want it to leak! Repeat the process with the other rack of ribs. Place foil-wrapped ribs back directly onto grill grate. Close lid, and cook ribs for 2 hours at 225° F. After 2 hours, carefully remove foil off of the ribs. Do this in your kitchen, because there is a lot of juice in the foil. Discard foil.
  • Step #3- Brush your favorite BBQ sauce onto both sides of each rack of ribs. Place the ribs directly on the grill grate, and cook for 1 hour! When done, remove ribs from grill; let meat rest for 5 minutes, then slice, and enjoy!
