Black Olive Tapenade With Garlic, Capers, and Anchovies Recipe image

This famed olive spread from Provence is made from black olives, capers, anchovies, herbs, and garlic.

Number Of Ingredients 10

1/2 cup pitted black olives, such as Niçoise or oil-cured olives
1 tablespoon drained capers
2 drained oil-packed anchovy fillets
3 medium cloves garlic
5 basil leaves (optional)
1 tablespoon loosely packed fresh oregano, marjoram, or thyme leaves
1 teaspoon Dijon mustard
1 teaspoon fresh juice from 1 lemon
Extra-virgin olive oil, as needed
Kosher salt and freshly ground black pepper, if needed

Steps:

  • If using a food processor: Combine olives, capers, anchovies, garlic, basil (if using), other herbs, and mustard in the work bowl and process, scraping down the sides, until a finely chopped paste forms. Process in lemon juice. With the processor running, drizzle in just enough olive oil to loosen to a spreadable paste, about 2 tablespoons. Season with salt and pepper only if needed.
  • If using a mortar and pestle: Roughly chop olives, capers, anchovies, and garlic, then add to mortar with basil (if using) and other herbs. Tap, crush, and smash with pestle until ingredients have been reduced to a thick paste (a little chunkiness is okay). Using pestle, work in mustard and lemon juice, then drizzle in just enough olive oil to form a spreadable paste, about 2 tablespoons. Season with salt and pepper only if needed.

For the Tepanade:
1 1/2 cups pitted black olives
1/3 cup olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon fresh lemon zest
1 tablespoon drained capers
2 garlic cloves
3 anchovy fillets , from oil-packed can
1 teaspoon fresh thyme, or 1/2 teaspoon dried thyme
1/8 teaspoon coarsely ground black pepper
For Serving:
1 medium baguette, sliced; or vegetable crudités

Steps:

  • Gather the ingredients.
  • Place the olives, olive oil, lemon juice, lemon zest, drained capers, garlic, anchovies, thyme, and black pepper in a food processor.
  • Process until all the ingredients are finely chopped, but not completely pureed.
  • Serve the olive spread on baguette slices or with fresh crudités.
  • Enjoy!

1/2 pound good black olives, such as kalamata, pitted and diced
3 tablespoons capers, drained
8 anchovy fillets
1 garlic clove, minced
1/2 cup good olive oil
1 tablespoon freshly squeezed lemon juice
2 teaspoons Dijon mustard
1 teaspoon minced fresh thyme leaves
1 tablespoon chopped fresh parsley leaves
1 baguette, sliced and toasted

Steps:

  • Combine the olives, capers, anchovies and garlic in a food processor fitted with a steel blade, and pulse 3 times. Add the olive oil, lemon juice, mustard, thyme and parsley and process until chunky.
  • Serve on toasts.

Unlike the modern version of tapenade, which features the olive more prominently than the other ingredients, this recipe is based on the original, created by a chef named Meynier at the Marseilles restaurant La Maison Dorée in 1880. It's made with equal parts olive, caper, and briny fish, like anchovies and oil-packed tuna-hence the fact that tapenade takes its name from capers (tapeno in Provençal) and not olives.

2 loosely packed teaspoons fresh oregano, marjoram, or thyme leaves (optional; see note)

1 teaspoon Cognac (optional; see note)

Steps:

The classic provençal olive, anchovy and caper paste is a dish that was only developed in the nineteenth century. This recipe for tapenade is made with kalamata olives and an amazing blend of flavours. It has been adapted from 'mediterranean kitchen', published by Murdoch Books, and posted for the 2005 Zaar World Tour. The preparation time below does not include the time necessary for sterilising a jar. The instructions for this are included below.

400 g kalamata olives, pitted
4 garlic cloves, crushed
2 anchovy fillets, in oil, drained
2 tablespoons capers, in brine, rinsed and squeezed dry
2 teaspoons thyme, chopped
2 teaspoons Dijon mustard
1 tablespoon lemon juice
60 ml olive oil
1 tablespoon brandy (optional)
fresh ground black pepper, to taste

Steps:

  • Process all the ingredients in a food processor until they form a smooth consistency.
  • Season with freshly ground black pepper and spoon into a sterilised, warm jar, seal and refrigerate for up to two weeks. Makes 11/2 cups (375ml).
  • Serve with fresh or toasted bread.
  • Notes: To prepare a sterilised jar, preheat the oven to 120ºC (250ºF/gas 1/2). Wash the jar and lid in hot soapy water and rinse with hot water. Put the jar in the oven for 20 minutes, or until fully dry, and DO NOT dry it with a tea towel. If the tapenade is refrigerated, the olive oil may solidify, making it white. This does not affect the flavour. Bring it to room temperature before serving, and the oil will liquify.
