This requires a pizzelle iron, similar to a waffle iron in appearance. Makes thin wafer-like cookies with snowflake designs, an Italian tradition for Christmas or anytime.

6 eggs
1 ½ cups white sugar
1 cup butter, melted
1 teaspoon lemon zest
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
4 teaspoons baking powder

Steps:

  • In a medium bowl, beat the eggs with an electric mixer until light. Add the sugar, butter, lemon zest and vanilla, mix well. Stir in the flour and baking powder.
  • Heat pizzelle iron. Drop batter by teaspoonfuls onto the center of the patterns, close the lid and cook for about 30 seconds. Test the cooking time on the first one, because temperatures may vary. Remove cookies carefully from the iron and cool on wire racks.

Pizzelles (pronounced Pitt-SELLS) are Italian cookies that are baked in an electric appliance that looks something like a waffle iron. Normally they are left in a flat shape, but with this recipe, you shape the hot cookies over a small-bottomed glass to create a cup shape. These crisp dessert cups are the perfect holder for a scoop of chocolate mousse or a fruit granita. This is a spectacular finish for any meal, but especially for an Italian meal!

2 eggs
1/2 cup sugar
1/4 cup canola oil
1 tablespoon lemon extract
1 teaspoon lemon zest (optional)
1/4 teaspoon baking powder
2/3 cup flour

Steps:

  • Plug in pizzelle iron and allow it to heat while you are making the batter.
  • Batter: Whisk all ingredients together until smooth.
  • Drop a tablespoon of the batter onto the hot iron (sprayed with non-stick spray). Allow to cook 1 minute.
  • Remove hot cookie from iron and press it over a small-bottomed glass in order to create a cup shape.
  • Allow cups to cool thoroughly; store in an airtight container to maintain crispness.
  • Use these cups to hold chocolate mousse, pudding, ice cream, or a fruit granita.

I love a great cannoli, but HATE to fry the shells because of the mess. I found a pizzelle iron recipe for cannoli shells on All-Recipes.com and would love to share. Not only do they taste GREAT and are less messy to make...they are lower in both calories and fat!!!! LOVE IT!!!

2 eggs
1/2 cup white sugar
1/4 cup melted butter
1/4 cup vegetable oil
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon distilled white vinegar
3 tablespoons cold water

Steps:

  • In a medium bowl, stir together the eggs, sugar, melted butter and oil. Stir in the flour, baking soda and cinnamon. Then add the cold water and vinegar. Mix well until smooth.
  • Pre-heat the pizzelle iron. Drop the cannoli batter 1 tablespoon at a time onto the iron, close lid and bake for 1 to 2 minutes. Carefully remove cookies and roll onto cylinders while they are hot. Allow to cool then remove from cylinder.
  • Fill with your favorite cannoli filling. ENJOY!

3 eggs
1 3/4 cups flour
3/4 cup sugar
1 tablespoon vanilla
1/2 cup melted margarine (melt in glass measuring cup in microwave for 45 seconds)
2 teaspoons baking powder
powdered sugar

Steps:

  • Put the eggs in a large bowl and with a wire whisk beat until foamy- add sugar 1/4 cup at a time. Beat until smooth.
  • Add margarine and flavoring.
  • Sift flour and baking powder together. add to above!
  • Blend until smooth, scrape sides of bowls to combine well.
  • Drop batter by teaspoon full measures on to preheated Pizzelle Iron.
  • Bake 30 seconds- till golden.
  • Remove with a fork- let them cool- add powdered sugar.
