TRADITIONAL ITALIAN GLUTEN FREE MEATBALLS
Delicious gluten free traditional meatballs. My friend's grandmother gave me her traditional meatball recipe. Here is my gluten-free version of the recipe.

Steps:
- Combine all ingredients in a large bowl.
- Roll into meatballs.
- Fry meatballs in oil and brown them well on all sides over medium-low heat, turning carefully about 10 minutes.
- Then simmer meatballs in 1 1/2-2 quarts of gluten free sauce.
- Serve and enjoy.

PERFECT GLUTEN-FREE ITALIAN MEATBALLS
These are the perfect gluten-free Italian meatballs. They are great with your favorite gluten-free pasta, zucchini noodles, or on top of gluten-free pizza crust. They can also be served as an appetizer with marinara dipping sauce.

Steps:
- Preheat oven to 400 degrees F.
- Bring 4 cups of water to a boil in medium saucepan. Add cashews and boil until softened, about 15 minutes. Drain and rinse well.
- While the cashews are boiling, heat 1 tablespoon of olive oil in a skillet over medium heat. Add onions and cook until softened and lightly browned. Add garlic, oregano, basil, parsley, and red pepper flakes (optional) and cook until fragrant (about 30 seconds).
- In your food processor, add the onion mixture, boiled cashews, egg, and salt. Process until a fine paste develops, about 1 minute. Transfer to a large mixing bowl.
- Add ground beef or lamb and knead with your hands until well combined.
- Roll mixture into 1 1/2 inch meatballs and place onto a foil-lined cookie sheet. I use a cookie scoop to make this process faster.
- Bake meatballs in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through
QUICK AND EASY ITALIAN MEATBALLS
This recipe is a combination of my two favourite meatball recipes. One of them being Recipe #143735. Don't be fooled by the long list of ingredients, these are very easy to make!

- Preheat oven to 400F.
- Mix all ingredients together well using your hands.
- Shape into 15-20 balls.
- Place balls in an ungreased pan and bake for 20-25 minutes, until the juices run clear.
- Serve with your favourite pasta sauce, over spaghetti noodles, with a glass of red wine (optional)!

Steps:
- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak flour in milk in a small bowl for 20 minutes.
- Mix beef and pork together in a large bowl. Stir flour mixture, eggs, parsley, garlic, salt, black pepper, nutmeg, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined.
- Cover and refrigerate for about one hour. (optional).
- Preheat an oven to 425 degrees F.
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.
