Tostadas De Lomo De Cerdo Food
LOMO DE CERDO
In my recipe book, The Complete Spanish Cookbook, by Jacki Passmore, there is a recipe for LOMO DE CERDA, Loin of Pork. It is a substantial tapa, or snack which is served in a small pottery dish with a sliced roll to mop up the juices. Here is the recipe she gives:

Steps:
- Remove the rind from the pork(if there is one) Brown the pork in the olive oil, then brown the carrot and onion.
- Place in a saucepan with the bay leaves, garlic, tomatoes, peppercorns and rosemary.
- Add water to cover and simmer for 1 1/2 hours, adding the vinegar in the final few minutes of cooking.
- Lift out and thinly slice the pork.
- Place in a dish with the vegetables and sauce to cover.

- EN UNA OLLA SE PONE A COCER EL LOMO CON AGUA, SAL (AL GUSTO) Y LAS DOS HOJAS DE LAUREL APROXIMADAMENTE 1:30 A 2 HORAS.YA QUE ESTA COCIDO SE ESCURRE Y SE METE AL HORNO A 350 GRADOS HASTA QUE QUEDE DORADO POR LOS DOS LADOS, DESPUES SE SACA Y SE ENVUELVE EN PAPEL ALUMINIO A QUE SE ENFRIE UN POCO PARA DESPUES HACER LAS REBANADAS (DELGADAS).
- YA REBANADO EL LOMO SE TOMA LA TOSTADA SE ENBARRA DE FRIJOL, SE PONE UNA REBANADA DE CARNE, SE PONE LA LECHUGA, UNA REBANADA DE TOMATE Y UNA DE CEBOLLA, RABANOS SE ESPOLVOREA QUESO Y LA SALSA AL GUSTO.
- LA SALSA QUE USO ES SENSILLA: SE LICUAN LOS DOS TOMATES RESTANTES, CON EL CHILE SERRANO, SAL Y OREGANO AL GUSTO. (NO SE LE PONE AGUA A ESTA SALSA)
