FRUIT SALSA WITH CINNAMON TORTILLA CHIPS

Fruit Salsa with Cinnamon Tortilla Chips image

The fun of this recipe is that it can be tailored to your tastes. I'm a 'throw it in and see how it turns out' kind of cook, so please adjust the recipe to fit your own tastes. This recipe is best used immediately, as fresh fruit doesn't keep well in the refrigerator. If you prefer baked cinnamon chips, arrange the tortilla triangles in a single layer on a lightly greased baking sheet. Spray with cooking spray, sprinkle with sugar and cinnamon, and bake 5 to 10 minutes in an oven preheated to 350 degrees F (175 degrees C). Watch them closely so they don't burn!

Number Of Ingredients 12

1 Fuji apple - peeled, cored and diced
1 cup sliced fresh strawberries
2 kiwis, peeled and sliced
2 bananas, peeled and sliced
1 tablespoon fresh lime juice
2 tablespoons white sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup oil for frying
6 (10 inch) flour tortillas
3 tablespoons white sugar
1 tablespoon ground cinnamon

BAKED TRIPLE CHEESE AND SALSA TORTILLA CHIP DIP

Baked Triple Cheese and Salsa Tortilla Chip Dip image

This easy chip dip recipe is made with corn tortilla chips, salsa, and three types of cheese. It can be assembled in advance and baked before guests come!

Provided by Averie Sunshine

Categories     Dips & Condiments

Time 45m

Number Of Ingredients 6

10 to 15 corn tortilla chips (round or triangle)
one 10.75-ounce can Campbell's Cheddar Cheese Soup
one 1.25-ounce packet fajita seasoning mix
one 8-ounce bag shredded cheese, divided (Mexican blend, Pepper Jack blend, etc.)
8 ounces brick-style cream cheese, very well softened to room temp
8 ounces salsa

Steps:

  • Preheat oven to 375F. Spray a 9-inch pie dish (or similar-sized oven-safe baking dish) with cooking spray.
  • Place tortilla chips in dish so they cover the majority of the bottom, slightly overlapping. This prevents soup from seeping through.
  • Add the soup and lightly spread it evenly over the chips with a spatula or knife.
  • Evenly sprinkle the fajita mix over the top.
  • Evenly sprinkle not quite half the cheese over the top (I used about 40% of the bag); set aside remainder.
  • Add the cream cheese in about 1/4 cup blobs and with a spatula or knife, do your best to carefully distribute it evenly over the pan without disturbing the other layers. Some small bald patches are okay because it bakes together. Tip - the softer your cream cheese is, the easier this step is.
  • Evenly pour the salsa over the top, spreading it lightly with a spatula or knife if necessary.
  • Evenly sprinkle reserved cheese over the top.
  • Bake for about 30 to 40 minutes, or until top is golden browned, bubbly, and dip is done to your liking. Allow dip to cool momentarily before serving.

HOMEMADE TORTILLA CHIPS WITH GUACAMOLE & CHARRED TOMATO SALSA

Homemade tortilla chips with guacamole & charred tomato salsa image

Making your own chips and dips allows you to keep things healthy and will really impress

Provided by John Torode

Categories     Dinner, Side dish

Time 55m

Number Of Ingredients 15

12 corn tortillas
3 tbsp vegetable oil
3 large ripe avocados
juice 2 limes
½ small red onion , finely diced
small handful coriander , chopped
2 green chillies , deseeded and finely chopped
2 tsp chipotle paste or ½ tsp Chipotle Tabasco
6 plum tomatoes , halved
2 green or jalapeno chillies
8 garlic cloves , unpeeled
½ red onion , finely diced
2 tbsp coriander , roughly chopped
juice 1 lime
1 tbsp chipotle paste or Chipotle Tabasco

Steps:

  • To make the tortillas, heat oven to 200C/180C fan/gas 6. Brush both sides of the tortillas with the oil, then cut into triangles with scissors. Arrange in a single layer on 1 or 2 baking sheets and bake for 7-8 mins. Remove, sprinkle with salt and set aside.
  • To make the guacamole, halve and stone the avocados, then spoon the flesh into a bowl. Pour over the lime juice and a sprinkle of salt, then crush with a potato masher until puréed but still chunky. Add onion, coriander, chillies and chipotle paste. Stir through and set aside until needed.
  • For the salsa, place the tomatoes, cut-side up, in a shallow baking tray. Season, and place under the grill until blackened, about 15 mins. Meanwhile, in a dry non-stick frying pan, blacken the chillies and garlic. Keep turning to darken on all sides, about 10 mins. When done, peel the garlic and place in a food processor. Place the chillies in a plastic bag to steam for a few mins, then peel, deseed and stem. Add the flesh to the food processor along with the tomatoes, onion, coriander, lime juice and chipotle paste. Season and pulse until chunky.

WHAT TO EAT WITH SALSA BESIDES CHIPS? TRY THESE HEALTHY …
what-to-eat-with-salsa-besides-chips-try-these-healthy image

From mysouthernhealth.com
  • With eggs. Top scrambled eggs or an omelet with a big dollop of salsa. Or spoon the eggs and salsa into a whole-wheat tortilla to roll up as a breakfast burrito.
  • For cooking meat in the slow cooker. Place a boneless pork roast or boneless, skinless chicken breasts in a slow cooker. Top with a generous amount of homemade or store-bought salsa (for a 4-pound pork roast, for example, pour in a large jar of store-bought salsa).
  • Substitute salsa for salad dressing. Green salads are lovely, low-calorie lunches and side dishes, but store-bought salad dressings can be high in salt, sugar and fat.
  • Top grilled fish with salsa. This works especially well with salmon combined with fruit-based salsa. Best to wrap the fish and salsa in a foil packet to avoid a big mess when turning the fish on the grill.
  • Slather your hamburger with a salsa as fiery as you like. Those containing lots of garlic or smoked peppers are ideal for burgers.
  • Stir salsa into grits. Throwing in a little shredded Mexican cheese is yummy, too. (Watch the amount of cheese if you’re limiting saturated fats.)
  • Marinade. Mix some canola oil and/or freshly squeezed citrus juice into the salsa to thin it out, then use it as a marinade for your favorite meat.
  • With shrimp cocktail. Skip the cocktail sauce; dredge big tender shrimp through a cilantro-heavy salsa instead.
  • Homemade chili. Add a jar of store-bought salsa to your chili to take it from good to great.
  • On a baked potato. Give a boring potato some pizzazz by adding salsa, grilled peppers and onions and a sprinkle of cheese for a hearty and satisfying lunch or dinner.

3 WAYS TO EAT SALSA WITHOUT A CHIP – SWEET KICKIN SALSA

  • Get Rid of the Chips: Use Salsa as an Ingredient. We’ve already published our definitive guide to breakfast burritos, and we’re sure you know how to add salsa to traditional Tex-Mex cuisine like enchiladas and tacos, but there are so many other ways to eat salsa!
  • Salsa As a Topping. This section is the shortest because it’s also more vast than the others. Pretty much anything savory, salty, meaty, fresh, or slightly sweet is even better with salsa on top: chicken, steak, baked potato (red, yellow, sweet, seriously all of them are good).
  • Salsa As a Dip. Maybe you’re just looking for a convenient delivery vehicle to get the salsa from the jar to your mouth. We know the tortilla chip is the most popular way to eat salsa, but if you are looking to shake things up and still dip something into your salsa, we’ve got you covered!
