1 package (20 ounces) refrigerated cheese tortellini
1 pound boneless skinless chicken breasts, cut into 1-1/2-inch pieces
1/3 cup finely chopped onion
1 tablespoon olive oil
2 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 package (10 ounces) hearts of romaine salad mix
1-1/2 cups grape tomatoes
1 can (6-1/2 ounces) sliced ripe olives, drained
3/4 cup creamy Caesar salad dressing
3/4 cup shredded Parmesan cheese
6 bacon strips, cooked and crumbled

Steps:

  • Cook tortellini according to package directions. Drain; rinse with cold water., Meanwhile, in a small bowl, combine chicken, onion, oil, garlic, salt and pepper; toss to coat. Heat a large skillet over medium-high heat. Add chicken mixture; cook and stir 4-6 minutes or until chicken is no longer pink. Remove from heat., In a large bowl, combine salad mix, tomatoes, olives, tortellini and chicken mixture. Drizzle with dressing; toss to coat. Sprinkle with cheese and bacon. Serve immediately.

2 cans (14 oz. each) artichoke hearts, drained, quartered
1 red onion, cut into thin slices
2 Tbsp. drained pitted black olives, cut in half
2 Tbsp. drained pimento-stuffed green olives, cut in half
1 env. (0.7 oz.) GOOD SEASONS Zesty Italian Dressing Mix
4 cloves garlic, minced
1/4 tsp. ground black pepper
1 jar (12 oz.) roasted red peppers, drained, cut into thin strips
1/4 cup thinly sliced fresh basil

Steps:

  • Combine pasta, chicken, chickpeas, artichokes, onions and olives.
  • Prepare dressing mix as directed on envelope. Add garlic and black pepper; mix well. Pour half over pasta mixture; mix lightly. Refrigerate 1 hour.

Quick Tip: Start with hot water for faster boiling and cook fresh pasta and asparagus together in the same pot. This does not work for all pasta dishes, but works well here since cooking times are the same.

1 (9 ounce) packaged refrigerated cheese-filled tortellini, uncooked
1/2 lb fresh asparagus, cut into 2 inch pieces
1 head romaine lettuce, torn

caesar salad dressing (homemade or your favorite brand)

Steps:

  • Bring water to a boil in a 4 quart dutch oven.
  • Add tortelllini and asparagus and cook for 4 minutes, drain; rinse in cold water, and drain. Set aside.

I vary how much meat, pasta, and salad I use depending on how many servings I need. If you want to make it in advance or have leftovers, don't add the dressing and croutons beforehand. Mix croutons right before packaging and send dressing on the side. I make this whenever I have leftover steak!

1 pound flank steak
garlic powder to taste

  • SERVE: Place the chopped romaine in a large bowl (if you’re serving this family style.) Top with the cooked tortellini, the sliced/diced chicken and as much dressing as you’d like.
