Homemade Green Bean Casserole image

If you think you don't like green bean casserole, withhold judgment until you've tried this entirely from-scratch version. It has all the classic elements of the Thanksgiving favorite, but its base is a mushroom gravy amped up with red-wine vinegar, red-pepper flakes and fresh thyme rather than a can of soup. If you don't want to fry the onions yourself (we understand), you can always substitute 1 1/2 cups store-bought fried onions or even crispier fried shallots.

2 medium yellow onions (about 14 to 16 ounces), halved and thinly sliced with a sharp knife or mandoline
1/4 cup all-purpose flour
2 tablespoons bread crumbs (panko or regular)
1 teaspoon kosher salt
High-heat oil, like canola, safflower or vegetable, for frying
3 tablespoons unsalted butter, plus more for greasing the dish
1 teaspoon kosher salt, plus more for the blanching water
1 1/2 pounds green beans, trimmed and halved
1/2 teaspoon red-pepper flakes
1 tablespoon fresh thyme leaves
12 ounces mixed mushrooms (like a mix of cremini and shiitake), trimmed and sliced into 1/2-inch pieces
2 garlic cloves, thinly sliced
3 tablespoons all-purpose flour
1 1/2 cups chicken stock or vegetable broth
1 1/2 cups milk
1 pinch ground nutmeg
1/4 teaspoon black pepper
1 teaspoon red-wine vinegar or sherry vinegar
1 teaspoon Worcestershire or soy sauce (optional)

Steps:

  • Make the onions: In a medium bowl, combine the onions with the flour, bread crumbs and salt, and toss to coat the onion pieces.
  • In a heavy skillet with high sides, pour enough oil to reach 1/2-inch up the side. Heat over medium-high until the oil is hot - a drop of water should sizzle and sputter when flicked into the oil.
  • Add the onions in batches, taking care not to overcrowd them. Fry until golden-brown (they don't have to be deep brown, as they'll continue cooking in the oven), about 5 to 6 minutes, then use a slotted spoon or a pair of tongs to transfer to paper towels. Sprinkle lightly with salt. Repeat until you've fried all of the onions.
  • Butter a shallow 4-quart baking dish and heat the oven to 400 degrees.
  • Blanch the green beans: Bring a large pot of water to a boil with an ice bath nearby. When boiling, salt the water generously, add the green beans, and cook for 4 to 5 minutes, until slightly tender and bright green. Immediately transfer beans to the ice bath. When beans are chilled, drain and set aside.
  • Pour water out of the pot, wipe dry and return to the stovetop. Over medium-high heat, melt 3 tablespoons butter. When melted, add the red-pepper flakes and thyme, and stir until fragrant, about 1 minute. Add the sliced mushrooms and cook, stirring occasionally, until they start to brown significantly, 8 to 10 minutes. Add 1 teaspoon salt and sliced garlic and stir until fragrant, another 1 to 2 minutes.
  • Sprinkle the flour all over and stir to coat the mushrooms. Gradually add the stock and milk, and bring to a simmer, stirring all the while. Turn the heat down to medium and continue to stir until the sauce is thick and creamy and coats the back of a spoon, 6 to 8 minutes. Remove from heat. Add nutmeg, black pepper, vinegar and Worcestershire, if using. Taste for salt, pepper and acidity.
  • Add the green beans and half of the onions, stir to combine, and transfer to prepared baking dish. Top with remaining onions and bake for 15 to 20 minutes, until bubbling. Serve immediately.

2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 cup whole milk
2 teaspoons soy sauce
1/8 teaspoon pepper
2 packages (16 ounces each) frozen green beans, cooked and drained
1 can (6 ounces) french-fried onions, divided

Steps:

  • In a bowl, combine soup, milk, soy sauce and pepper. Gently stir in beans. Spoon half of the mixture into a 13x9-in. baking dish. Sprinkle with half of the onions. Spoon remaining bean mixture over the top. Sprinkle with remaining onions., Bake at 350° until heated through and onions are brown and crispy, 30-35 minutes.

2 medium onions, thinly sliced
1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon kosher salt
Nonstick cooking spray
2 tablespoons plus 1 teaspoon kosher salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 tablespoons unsalted butter
12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 teaspoon freshly ground nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup half-and-half

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.
  • Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

3 slices thick-cut bacon (, diced)
1/2 cup finely chopped yellow onion
2 cloves garlic (, minced)
12 ounces fresh button or cremini mushrooms (, chopped)
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup half-and-half
1 cup chicken broth
1/2 cup shredded white cheddar cheese
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound fresh green beans (, trimmed, halved, and blanched (boil 5 minutes, place beans in ice water for a couple of minutes, drain))
1 can quality French fried onions
or gluten free French fried onions

Steps:

  • Preheat the oven to 350 degrees F.
  • Fry the bacon in a large skillet over medium-high heat until crispy. Add the onions and cook until soft and translucent, about 4-5 minutes. Add the mushrooms and garlic and cook for another 4-5 minutes until the mushrooms are soft. Transfer the mixture to a bowl.
  • Melt the butter in the same skillet and whisk in the flour. Once combined, continue whisking for another 2 minutes until the mixture has slightly deepened in color. Add the half-and-half and chicken broth while constantly whisking to prevent lumps. Once slightly thickened, add the cheese and whisk until melted and combined.
  • Next add the mushroom/bacon mixture along with the salt and pepper. Let the sauce simmer for a couple of minutes, then add the green beans. Stir to combine.
  • Pour the bean mixture into a 9x13 casserole dish and sprinkle the French fried onions all over the top. Bake uncovered for 30 minutes until bubbling and the onions are golden and crispy. Let sit for 5 minutes before serving.

Once others try it, they'll keep demanding you bring it.

7 (14 1/2 ounce) cans French style green beans (Drained and squeezed to get rid of all liquid)
2 (10 3/4 ounce) cans cream of celery soup
1 (8 ounce) container green onion dip
1 (2 7/8 ounce) can French's French fried onions
2 lbs Velveeta cheese, cubed
1 (6 ounce) can French's French fried onions
pepper (You decide the amount you like)

Steps:

  • Preheat oven to 375 degrees.
  • Drain green beans then using clean paper towel and squeeze green beans until they stop giving up water. This will pulverize them, but that's OK. Place in large mixing bowl.
  • Add both cans of Cream of Celery soup. The old recipe has always called for Cream of Mushroom, but the Cream of Celery actually provides a better taste. Trust me!
  • Now add the entire container of Green Onion Dip and the 2.8 ounce can of the French's French Fried Onions.
  • Mix all ingredients. The soups, Dip, and Velveeta have enough salt so no need to season. Most of the time I add lots black pepper because it's what my family likes, but this is truly optional.
  • Spread mixture in 9"X13" pan (foil, metal, or glass -- It's your choice).
  • Here's the fun part. Take the cubed Velveeta and start sinking it into the mixture. This is a lot of cheese so feel free to reduce the amount if you wish, but the cheesiness is what makes it stand out as a different type of Green Bean Casserole. You will basically have cheese sunk into the mixture all the way across and down the pan. When you are finished take a spatula and smooth the mixture over the top of all of the cheese cubes.
  • Cook uncovered in 375 degree oven for 30 minutes.
  • Remove from oven and spread the entire 6 ounce can of French's French Fried Onions over the top of the mixture. Return to oven and cook for 5 additional minutes.
  • When you serve this version -- People who love things like Hash Brown Casserole and Mac and Cheese will ask you to make it for every Thanksgiving, Potluck, or occasion.

1 teaspoon white sugar
¼ cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French style green beans, drained
2 cups shredded Cheddar cheese
½ cup crumbled buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
  • Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.

50g butter
2 tbsp olive oil
250g chestnut or button mushrooms, sliced
500g green beans, trimmed
50g flour
500ml milk
100g crispy onions

Steps:

  • Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
  • Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
  • Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.
