Steps:
- Wah and clean the okra.
- Saute onion until tender.
- Add okra, garlic, sauce, and tomatoes.
- Stir to blend.
- Cover, reduce to a simmer.
- Simmer for about an hour, or until okra is nice and tender, stirring as needed. Stir slowly, because the okra will fall apart.
- Season to taste.
- Optional, sprinkle diced bacon on top before serving.

Steps:
- Brown sausage in a large saucepan or dutch oven over medium heat, breaking it up as it cooks. Add onion and cook until soft.
- Increase heat to high: add okra, tomatoes, tomato juice, salt and crushed red pepper. Cook, stirring often, until bubbling.
- Reduce heat to simmer and cook, stirring occasionally, until the mixture is thick and the vegetables are very tender (35 - 45 minutes).

- In a heavy bottomed saute pan over medium-high heat, add the bacon. Render the bacon until crisp. Remove from pan and reserve. Add the onion and saute until tender, about 3 minutes.
- Add the okra and tomatoes, making sure to add the reserved juice from the tomatoes to the saute pan. Season with salt and pepper and simmer for 15 minutes.
OKRA, ONION AND TOMATO STEW

- In a large saucepan heat 1 tablespoon olive oil. Add 1/2 the okra and saute until lightly seared, about 2 to 3 minutes. Season with salt and pepper. Reserve. Reheat pan, add 1 tablespoon olive oil and repeat with remaining okra. Reserve. In a heavy gauge saucepan heat remaining 1/4 cup olive oil and add onions. Season with a pinch of salt and cook until soft and translucent, about 8 to 10 minutes. Stir in garlic. Turn heat to medium and cook onions until lightly caramelized, about 2 more minutes. Add dry oregano and Aleppo, stir and cook for 1 minute. Add tomatoes, lower heat and cook for 5 to 6 minutes. Add seared okra and stir to combine. Add Herb Tea. Simmer on low heat for 15 to 20 minutes. When okra is slightly tender, fold in olives, parsley and olive oil. Adjust seasoning and serve.
STEWED OKRA AND TOMATOES
Steps:
- Render bacon in a large saucepan, cooking until crisp. Remove from pan and dice, reserving drippings in pan. Add onion to the skillet with bacon fat and saute over medium heat until tender. Add all remaining ingredients, except okra, and bring to a boil, stirring to avoid burning. Reduce heat and simmer 15 minutes, stirring occasionally. Add okra and let stew until the bright green color begins to fade. Serve hot.
STEWED TOMATOES
Love these stewed tomatoes better than the ones you buy at the store. Even my husband who doesn't like stewed tomatoes, commented on how good they were. Even though it says to just core & chop tomatoes, I will peel them in the next batch that I make, and I just sliced my peppers & onions with a slicer into rings instead of chopping. Cooking time does not include canning time.

- Hot pack.
- Add all ingredients to a saucepan and bring to a boil.
- Simmer 10-15 min, stirring occasionally.
- Pack hot jars with hot prepared tomato mixture leaving 1/2-inch head space.
- Remove air bubbles.
- Wipe rim and threads and adjust lids and screw bands.
- Process in pressure canner--Dial gauge type @11 pounds pressure or Weighted guage type @10 pounds pressure--pints 15 minutes, quarts 20 minutes.
- After processing, let pressure fall of its own accord and remove jars immediately, place on a rack to cool.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving grease in skillet. Crumble bacon into a bowl.
- Heat bacon grease in the same skillet over medium heat and add bell pepper, onion, and garlic. Cook and stir for 3 minutes. Add okra, corn, and bay leaf. Cover skillet and reduce heat to low. STEWED OKRA AND TOMATOES

- Sauté aromatics Heat oil in a medium Dutch oven or heavy pot over medium heat. Add onion and sauté for 1 minute. Add garlic and sauté until onion is soft and translucent, about 5 more minutes. Reduce heat if they begin to brown.
- Stew vegetables Add tomatoes and cook for 2 minutes until they begin to release some of their liquid. Add salt, pepper, and cayenne. Stir in okra and bring mixture to a simmer. Reduce heat to medium-low, partially cover, and very gently simmer until okra is tender, about 1 hour.
- Add herbs and garlic Chop oregano and add to mixture. Tear basil leaves and fold into the stew. Stir in garlic, if using.
- Serve Transfer to a serving dish and garnish with a few grindings of pepper and a drizzle of oil.
