Tomato water
4 large beefsteak tomatoes, quartered
1/2 serrano chile, roughly chopped
1/4 red onion, roughly chopped
3-inch piece of lemongrass, tough outer leaves removed and roughly chopped
small pinch sugar
large pinch salt
1/2 lime
1/2 lemon
1/2 orange
2 18-inch-square pieces cheesecloth
Bloody Mary
Ice
16 ounces tomato water
6 ounces Grey Goose Le Citron (or any citrus vodka)
4 cherry tomatoes for garnish

Steps:

  • For tomato water:
  • In food processor, purée first six ingredients until smooth. Line sieve with cheesecloth and set sieve over nonreactive bowl. Pour purée into center of cheesecloth and refrigerate overnight. Gather sides of cheesecloth up over purée to form large sack and squeeze gently to extract last bits of water. Discard sack and its contents and transfer tomato water to bowl. Set strainer over bowl and squeeze in lime, lemon, and orange juice. Stir well. Makes about 20 ounces tomato water, enough for roughly 4 drinks.
  • For Bloody Mary
  • Fill 4 highball glasses with ice. In each, combine 4 ounces tomato water and 1 1/2 ounces vodka and stir. Garnish with cherry tomatoes.

4 pounds tomatoes, chopped
1/2 pound Persian or English hothouse cucumbers, chopped
1 celery stalk, chopped
2 tablespoons prepared white horseradish
kosher salt and freshly ground black pepper
Sugar
2 tablespoons (or more) vodka
Lemon slices
Cucumber spears

Steps:

  • Purée 4 pounds chopped tomatoes, 1/2 pound chopped Persian or English hothouse cucumbers, 1 chopped celery stalk, and 2 tablespoons prepared white horseradish in a blender until smooth. Strain through a cheesecloth-lined fine-mesh sieve into a large bowl. Let drain, without stirring, until 3 cups of liquid are collected, about 2 hours; discard solids in strainer. Season to taste with kosher salt, freshly ground black pepper, and sugar.
  • Divide tomato water among 6 ice-filled glasses. Top each glass with 2 tablespoons (or more) vodka. Garnish with lemon slices and cucumber spears.

6 large, ripe tomatoes, peeled, seeded and diced (juices reserved)
6 tablespoons freshly squeezed lime juice, plus wedges
2 tablespoons Worcestershire sauce
2 teaspoons extra-spicy horseradish
2 teaspoons kosher salt, plus sea salt, for serving
2 teaspoons freshly ground black pepper, plus more for serving

Steps:

  • In a blender, puree the tomatoes, lime juice, Worcestershire, horseradish, and salt and pepper until smooth. Chill covered until ready to use.
  • On a small shallow dish, mix 3 parts sea salt to 1 part finely ground black pepper. Run a lime wedge around the rim of each glass, then dip the rims in the salt and pepper mixture. Fill each glass with ice, 1-ounce vodka, and approximately 2/3 cup Fresh Tomato Bloody Mary mixture.

4 large fresh tomatoes (or 5-7 medium)
1 cucumber
1 tsp sea salt

Steps:

  • Set a fine-mesh strainer over a large bowl, and line the strainer with cheesecloth (or a clean flour sack towel). Add the tomato water ingredients to a blender or food processor, and pulse until pulpy or finely chopped. (You may need to cut the tomatoes or cucumber in large chunks to get it next to the blade. If you do, make sure to pour any extra juice in with them!)
  • Pour the mixture into the prepared strainer, and refrigerate for at least 8 hours, or up to a day.
  • Tip: for clear tomato water, don't press or stir the pulp.
  • Discard the solids, and keep in a sealed container in the refrigerator for up to 3 days.

2 stalks celery, chopped
8 ounces pitted green olives
1 cup vodka, or as needed
1 pinch celery salt, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add tomatoes and cook uncovered until peels start to break, about 10 seconds. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and slip skins off each tomato.
  • Combine tomatoes, celery, and olives in a bowl; pour in enough vodka to completely cover. Marinate in the refrigerator, 8 hours to overnight. Strain and sprinkle celery salt over tomato mixture.

4 cups cherry tomatoes (about 2 standard pint baskets)
1 lb beefsteak tomato (about 2 large tomatoes)
1 red onion, quartered
1 tablespoon kosher salt
3 lemons, large
1/2 cup tequila, white
1/2 cup vodka, plain, citron-, pepper-flavored, whatever you've got
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon fresh ground black pepper
2 teaspoons sugar
1 1/2 teaspoons Tabasco sauce (or to taste)
margarita dipping salt, for serving (See my recipe for Margarita Dipping Salt)

Steps:

  • With a wooden or metal skewer, puncture each cherry tomato with 5 to 10 holes; place in a nonreactive bowl.
  • By hand, or in a food processor with knife blade attached, finely chop beefsteak tomatoes; transfer to a medium bowl.
  • Finely chop onion; add to beefsteak tomatoes.
  • Stir in salt; let stand 5 minutes.
  • Strain mixture through a fine sieve, pressing hard on the solids (should yield about 2 cups liquid). Discard solids.
  • Grate zest from 2 lemons. Squeeze enough juice from 3 lemons to equal 1/2 cup.
  • Gently stir tomato water, lemon zest, lemon juice and remaining ingredients (except margarita salt) into cherry tomatoes.
  • Cover and refrigerate, keeping tomatoes submerged in liquid, at least 3 days or up to 1 week.
  • To serve, place tomatoes in a glass bowl or a margarita glass. Cover with marinade.
  • Provide tooth picks or wooden skewers for serving.
  • Serve margarita dipping salt on the side.

1 tablespoon Worcestershire sauce
1 pint cherry tomatoes
Freshly ground black pepper
Celery salt, for seasoning

Steps:

  • Combine the vodka, hot sauce and Worcestershire in a jar. Poke a couple of holes in each cherry tomato with a toothpick, then place a toothpick through the center of each. Add the toothpick-ed tomatoes to the vodka mixture and allow to soak for at least 2 hours, ideally overnight.
  • Drain the contents of the jar and sprinkle the tomatoes with pepper and celery salt. Serve immediately!
