HEIRLOOM TOMATO SALAD WITH CRUMBLED GOAT CHEESE

Heirloom Tomato Salad with Crumbled Goat Cheese image

Either way, now is when I look for ways to make our heirloom tomatoes the star of any dish I use them in. That's the case with this dish. The tomatoes were firm and sweet, with just the hint of acidity from the lemon juice, countered by the tang of onion and the creaminess of the dressing and goat cheese crumbles. Nancy and I both went back for seconds and she finished off the leftovers the next day before I could even get home!

Provided by Scott Koeneman

Time 15m

Yield 4

Number Of Ingredients 11

½ cup fat-free mayonnaise
¼ cup reduced-fat buttermilk
3 tablespoons thinly sliced green onions
1 ½ tablespoons fresh lemon juice
1 clove garlic, minced
kosher salt to taste
6 medium heirloom tomatoes, cored and cut into wedges
½ cup thinly sliced onion
1 tablespoon fresh lemon juice
kosher salt and freshly ground black pepper to taste
2 ounces crumbled soft goat cheese

Steps:

  • Whisk mayonnaise, buttermilk, green onions, lemon juice, garlic, and salt for dressing together in a small bowl. Chill in the refrigerator until ready to use if not serving immediately.
  • Combine tomatoes, onion, lemon juice, salt, and pepper for salad in a bowl.
  • Divide mixture between plates. Drizzle with dressing and top with crumbled goat cheese.

ARUGULA SALAD WITH PEACHES, GOAT CHEESE AND BASIL

Arugula Salad With Peaches, Goat Cheese and Basil image

This simple, quintessential summer salad is a reminder that seasonal ingredients at their very best don't need much fussing (or much cooking at all, in this case). Here, peppery arugula and earthy goat cheese get brightened with juicy summer peaches, but the recipe can be tweaked to suit all seasons: If you can't find ripe peaches, you can use cherries, strawberries, plums, raspberries or even cherry tomatoes in their place.

Time 10m

Yield 4 servings

Number Of Ingredients 9

1/4 cup pine nuts
1/4 cup extra-virgin olive oil
2 tablespoons champagne vinegar or white wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
4 to 5 ounces baby arugula
2 ripe peaches, pitted and cut into 1/4-inch slices (about 10 ounces)
1/2 cup julienned fresh basil leaves
2 ounces creamy goat cheese, crumbled (about ½ cup), plus more to taste

Steps:

  • In a small sauté pan, toast the pine nuts over medium heat, tossing often, until golden brown, about 3 minutes. Remove from the heat.
  • In a small liquid measuring cup or bowl, whisk together the olive oil, vinegar, salt and pepper.
  • Place the arugula in a large salad bowl. Pour just enough dressing over the greens to moisten, and toss to coat. Add the peaches, basil, goat cheese and toasted pine nuts and toss to coat. Add more goat cheese and dressing if desired. Toss gently and serve immediately.

TOMATO AND GOAT'S CHEESE CRUMBLE

Tomato and Goat's Cheese Crumble image

This savoury crumble is a twist on the more usual quintessential English dessert crumbles. It's a really tasty supper dish and comes from the BBC Good Food "101 Veggie Dishes" book. There are no herbs listed in the original, or here, but feel free to add some if you like. This is equally good served with a green salad or vegetables. Recipe posted for Zaar World Tour 2005.

Time 50m

Yield 4 serving(s)

Number Of Ingredients 7

2 1/4 lbs tomatoes (mixed varieties, including cherry)
5 tablespoons olive oil
8 ounces goat's cheese (firm or soft)
2 ounces pine nuts
4 ounces fresh white breadcrumbs
2 ounces parmesan cheese, freshly grated
salt and pepper

Steps:

  • Pre-heat the oven to 375 F, 190 C/ gas mark 5.
  • Roughly chop the tomatoes, leaving the cherry ones whole; heat 2 tablespoons oil in a pad, add the chopped tomatoes and seasoning and cook for 10 minutes (stirring occasionally) until softened; remove from the heat and stir in cherry tomatoes.
  • Spoon half the tomato mix into an oven proof dish (1 litre/1 ¾ pints size) and crumble half of the goat's cheese on top; repeat the layers.
  • Heat remaining olive oil in a frying pan and lightly fry the pine nuts and breadcrumbs; remove from the heat and stir in half the parmesan; scatter breadcrumb mix over the tomatoes and cheese, then top with the rest of the parmesan.
  • Bake for 20-25 minutes, until golden.

LENTIL, TOMATO, AND GOAT CHEESE SALAD

Lentil, Tomato, and Goat Cheese Salad image

Nice change of pace salad, perfect year-round, but especially nice for summer pot-lucks and cookouts, as there's no mayo to spoil. You could tweak this recipe quite a lot and add different spices to get a whole new recipe. This could work as both a main meal or as a side dish, depending on your preference.

Categories     Cheese

Time 1h5m

Yield 6-8 serving(s)

Number Of Ingredients 13

1 cup lentils (I use brown)
2 tablespoons red wine vinegar
1 bunch green onion, minced
1 tablespoon Dijon mustard
1/4 cup olive oil
1 1/3 cups diced peeled cucumbers
2/3 cup diced plum tomato (seed if you like)
1/3 cup finely-chopped red onion
2 tablespoons chopped fresh dill or 1 tablespoon dried dill
2 tablespoons chopped fresh parsley or 1 tablespoon dried parsley
3 cloves minced garlic
6 ounces soft fresh goat cheese, chilled for easier crumbling (like Montrachet)
1/4 cup lightly-toasted walnuts or 1/4 cup pine nuts, with 2 t reserved for garnish (optional)

Steps:

  • Cook lentils in medium pot of boiling salted water until just tender, about 25 minutes, and drain well.
  • Whisk together in a large bowl vinegar, green onions and mustard in large bowl.
  • Gradually whisk in oil.
  • Season with salt and pepper to taste.
  • Add lentils and let stand until cool.
  • When cool, add cucumber, tomatoes, onion, dill, parsley and garlic to lentil mix.
  • Season again with salt and pepper to taste.
  • Cover and chill about 1 hour.
  • Just before serving, crumble goat cheese over salad and mix gently to combine.
  • If using lightly-toasted nuts, sprinkle over salad and gently mix in, reserving 2 T to garnish on the top.
